SPINACH ARTICHOKE PASTA SALAD

Coarse salt
1 package fresh mushroom or chicken prosciutto or spinach filled tortellini (recommended: Contadina or Buitoni brands) available on dairy aisle in most markets
1/2 pound fresh baby spinach
1 (15-ounce) can baby artichoke hearts in water, drained and chopped
1 red roasted pepper, drained and chopped
1/2 small red onion, chopped
1 clove garlic, cracked from skin
1 lemon, zested
2 teaspoons lemon juice, the juice of 1 wedge
2 tablespoons red wine vinegar, a couple of splashes
1/4 cup extra-virgin olive oil
1 tablespoon fresh thyme leaves, chopped or 1/2 teaspoon dried leaves, eyeball it
Black pepper
A handful sun-dried tomatoes packed in oil, coarsely chopped

Steps:

  • Bring 5 or 6 inches of water to a boil in a large pot. Salt boiling water and add pasta. Cook for 3 to 4 minutes, until pasta is just tender and the tortellini are floating like buoys. Drain tortellini, then cool the cooked pasta by spreading them out on a large plate or a cookie sheet in a single layer.
  • Coarsely chop baby spinach. Combine with artichoke pieces, roasted red pepper and red onion. Chop garlic, then add salt to it and mash it into a paste with the flat of your knife. Transfer garlic paste to a small bowl and add lemon zest, lemon juice and vinegar to it. Whisk in oil, thyme and pepper. Add pasta and sun-dried tomatoes to the salad. Dress salad and gently toss. Serve or refrigerate.

1 (6.5 ounce) jar marinated artichoke hearts
½ cup mushrooms, quartered
1 cup cherry tomatoes, halved
1 cup pitted black olives

½ teaspoon dried basil
½ tablespoon dried oregano
2 cloves garlic, minced
salt and pepper to taste

Steps:

  • Bring a large pot of salted water to boil; add pasta and boil until al dente. Drain well and rinse with cold water.
  • In a large mixing bowl, combine pasta, artichoke hearts, mushrooms, tomatoes, olives, parsley, basil, oregano, garlic, salt and pepper; toss well. Refrigerate for at least 4 hours. Before serving, season the pasta dish with salt and pepper to taste.

2 pounds peeled and deveined cooked shrimp (31-40 per pound)

2 cups crumbled feta cheese
8 green onions, sliced
1/2 cup chopped fresh parsley
1/4 cup chopped fresh basil
DRESSING:
1/2 cup white wine vinegar
1/2 cup olive oil
1/4 cup lemon juice
2 tablespoons chopped fresh basil
2 teaspoons Dijon mustard
Fresh ground pepper, optional

  • Cook pasta according to package directions for al dente. Drain pasta; rinse with cold water and drain well. 6 slices bacon
10 asparagus spears, ends trimmed
½ (16 ounce) package rotini, elbow, or penne pasta
3 tablespoons low fat mayonnaise

1 (6 ounce) jar marinated artichoke hearts, drained and coarsely chopped
1 cooked chicken breast, cubed

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.

Strain asparagus out of water and immediately plunge into a bowl filled with ice water; let sit in ice water until completely cold, then cut into 1 inch pieces. 7 tablespoons olive oil
1 1/4 teaspoons salt
1/4 teaspoon garlic powder

3/4 lb fusilli
1 1/4 cups artichoke hearts, drained, rinsed and cut into 6 wedges each (1 14 ounce can)
3 scallions, including green tops, chopped
1/4 cup flat leaf parsley, chopped
1 tablespoon red wine vinegar, plus
2 teaspoons red wine vinegar
2 tablespoons parmesan cheese, grated (and more to taste)

Steps:

  • Light the grill or heat the broiler. Coat the chicken with 1 tbsp of the oil and season with 1/4 tsp salt, 1/4 tsp garlic powder and 1/4 tsp pepper.
  • Grill or broil until just done, 4-5 minutes per side. Let the chicken rest for 5 minutes and then cut crosswise into 1/4-inch slices.
  • In a large pot of boiling salted water, cook the fusilli until just done. Drain, rinse with cold water, and drain thoroughly.
  • In a large bowl, toss the pasta with 1 tbsp olive oil. Make sure to coat all the pasta thoroughly, so it won't stick together.

I have been making this light, tangy pasta salad ever since I was at the University of Wyoming in the late 1980s. Made with pantry ingredients, it's quick and easy. A nice lunch or summertime dinner with fresh fruit or hearty bread. Sometimes I add halved cherry or grape tomatoes for a little sweetness. Leftovers are just as good! (Prep time does not include cooking time for pasta.)

1 tablespoon olive oil
1 teaspoon olive oil
1 -2 tablespoon fresh lemon juice, to taste
2 minced garlic cloves
1 tablespoon capers

1 (6 ounce) jar marinated artichoke hearts, drained and coarsley chopped

2 cloves garlic
1 tablespoon mayonnaise
1 teaspoon Dijon mustard
1/2 teaspoon grated lemon zest plus 4 teaspoons juice
1/2 cup marinated artichokes, plus 2 tablespoons marinade
1 tablespoon grated Parmesan
2 cups torn escarole

Steps:

  • In a medium pot of boiling salted water, cook pasta according to package instructions. Reserve 1/2 cup pasta water, then drain.
  • Meanwhile, chop garlic. Sprinkle with 1/4 teaspoon salt and drag the blade of a large knife at an angle across mixture until a paste forms. Add garlic paste to a small bowl, along with mayonnaise, mustard, lemon zest and juice, and artichoke marinade; whisk to combine and season with salt and pepper.
  • Return pasta to pot, add artichokes and dressing, and toss, adding enough pasta water to create a light sauce that coats pasta; stir in Parmesan and season with salt and pepper. Refrigerate until chilled, 1 hour (or overnight); toss with escarole to serve.

1 tablespoon olive oil
1 tablespoon water

3 tablespoons Herb Oil, recipe follows
1 cup grape tomatoes, split
2 tablespoons thinly sliced fresh basil
1 tablespoon chopped fresh oregano
1 cup roughly chopped roasted chicken
1 cup roughly chopped marinated artichokes
Salt
Freshly ground black pepper
1/2 bunch parsley
1/2 cup packed fresh basil
1/2 bunch fresh thyme
1/2 cup packed fresh oregano
1/2 orange, zested
1 whole dried arbol chile
1 teaspoon whole black pepper corns
2 cups canola oil
1 cup extra-virgin olive oil

Steps:

  • In a large bowl toss all of the ingredients. Serve or store in the refrigerator until ready to serve.
  • In a 1-quart mason jar, place all of the herbs, zest, chile, and peppercorns. Pour both oils into a saucepan and heat to 200 degrees F. Pour the hot oils into the jar and cover with a kitchen towel. Let stand overnight.
  • Place cheesecloth over the top of the jar and replace the outer rim of the lid. Invert and strain oil into desired container.

Don't skip the crushed crouton topping. It adds a great crunch.

1 box(es) caesar pasta salad kit (aka suddenly salad brand)
salted boiling water to cook pasta
1 tablespoon(s) water
1/3-1/2 cup(s) mayonnaise (i use dukes)
1 can(s) chicken breast chunks,12.5 oz. drained & flaked
1 can(s) quartered artichoke hearts, 8.5 oz. drained & cut bite-size
seasoned croutons, lightly crushed

Steps:

  • Gather and prep ingredients.
  • Bring 2 to 3 quarts water to boiling; add about 1/2 to 1 teaspoon salt. Add the package of rotini pasta; return to boil, reduce heat to medium-high and gently boil pasta for 12 minutes, stirring occasionally to prevent sticking.
  • While pasta is boiling, mix together 1 tablespoon water and the seasoning packet from the salad kit. Add 1/3 to 1/2 cup mayonnaise, stirring to blend well. Set aside.
  • Drain cooked pasta (do not rinse if you want a warm salad, rinse with cold water for cold salad.)
  • Add drained pasta to bowl with seasoned mayonnaise mixture; mix gently until pasta is evenly coated.
  • Add chicken and artichokes, mixing gently until evenly coated with the mayonnaise mixture. Add more mayonnaise if needed, especially after refrigerating.
  • Just before serving, lightly sprinkle with crushed seasoned croutons and grated parmesan cheese.

Sounds fancy and taste great, but is super easy to make. Mostly tossed together from things I had in the pantry and fridge. I got the baseline recipe from a Betty Crocker email but changed it up a bunch. I eyeballed most of but tryed to guess the preparations so I could post it on RZ. I hope you enjoy, it can come out bland if you dont taste it s you make it.

2 heads garlic
olive oil
3 tablespoons Dijon mustard
2 cups of cubed cooked ham
1 (14 ounce) can artichoke hearts, Drained and Chopped
1 cup Italian salad dressing (to taste)
1 cup black olives (Sliced)
2 cups cherry tomatoes
1 (8 ounce) box cooked pasta (Farfalie, Spiral Cut)
salt & pepper

Steps:

  • 1. Unpeel garlic and place in tinfoil and drizzle with olive oil. Place in 400 degree oven for 20-23 minutes (anything over 25mins will burn it).
  • 2. Boil up your pasta, while pasta is cooking mix up your sauce. when your pasta is done, drain and set aside.
  • 3. Mix the italian dressing and dijon mustard together, you can dip a cube of your ham into it to get and idea of the taste, and go from there.
  • 4. smash up your roasted garlic and mix it n to your sauce,
  • 5 Add, pasta, ham, artichokes, olives, tomatoes and sauce together and mix well.
  • 6. Add salt and pepper to taste and throw it in the fridge. Serve chilled.

It's great both hot AND cold. If you're taking it on a springtime picnic, family reunion, or tailgating, it's a great choice because there's no mayo in there to spoil. You could easily turn this into a complete meal salad with the addition of cooked meat or beans(I like edamame). Number Of Ingredients 12

1 lb whole wheat orzo pasta
1/2 cup extra virgin olive oil, divided (EVOO)
1 medium red onion, chopped (about 1 cup)
4 large garlic cloves, finely minced (2 full Tbsp)
1 1/2 pints mixed red and yellow cherry tomatoes, cut in half (about 3 cups)
8 ounces marinated artichokes, in oil (Do not drain)
3 tablespoons capers, drained
5 tablespoons parsley
1 teaspoon kosher salt (not table salt)
1/2 teaspoon black pepper
2 large lemons, juiced (about 1/2 cup of juice)
1/2 cup chopped basil leaves

Steps:

  • Start the water to heat first. When boiling, add pasta and cook according to package direction - it will probably take around 10 minutes. Do not overcook.
  • While water is heating, start on the dressing for the pasta. Saute onions and garlic in 1/4 cup oil a few minutes until they start to soften. Add tomatoes, artichokes, and capers. Cook for about 5 minutes on medium, then turn off the heat.
  • Once pasta is cooked, reserve 1 cup of the cooking water. Drain the pasta, returning it to the large pot you cooked it inches Add back the reserved hot cooking water. Add the warm tomato and artichoke mixture to the cooked pasta. Add the remaining 1/4 cup oil and parsley and stir to let it warm through and wilt the parsley.
  • Season with the salt and pepper. Stir in the lemon juice and chopped basil.
  • Enjoy!

This pasta salad is quick and easy to make. The liquid from the marinated artichoke hearts makes an excellent dressing. Cook time is for chilling.

1 cup salad macaroni or 1 cup other medium-size pasta
1 (6 1/2 ounce) jar marinated artichoke hearts
1/2 cup mushroom, quartered
1 cup cherry tomatoes, halved
1 cup pitted black olives
1 tablespoon chopped fresh parsley
1/2 teaspoon dried basil
1/2 tablespoon dried oregano
2 cloves garlic, minced
salt and pepper

Steps:

  • Bring a large pot of salted water to boil; add pasta and boil until al dente.
  • Drain well and rinse with cold water.
  • In a large mixing bowl, combine pasta, artichoke hearts, mushrooms, tomatoes, olives, parsley, basil, oregano, garlic, salt and pepper; toss well.
  • Refrigerate for at least 4 hours.
  • Before serving, season the pasta dish with salt and pepper to taste.

8 oz sun-dried tomatoes, packed in oil, undrained
1/4 C olive oil
1 Tbsp lemon juice
1 Tbsp minced garlic
1 tsp freshly ground pepper
1 tsp salt
8 oz marinated artichoke hearts, drained, quartered
1/2 c cashews, halves and pieces
1# tortellini or ravioli, cooked, drained and cooled

Steps:

  • Drain sun-dried tomatoes, reserving 1 Tbsp liquid. Chop sun-dried tomatoes and set aside. Combine reserved oil, olive oil, lemon juice, garlic and salt and pepper. Stir in the chopped tomatoes, artichokes and cashews. Add tortellini and toss to combine. Let salad stand at room temp for 1 hour to allow flavors to blend, or chill overnight.
