ARTICHOKE HEARTS WITH CARAMELIZED ONIONS AND HERB DRESSING
Steps:
- Preheat oven to 350 degrees. Julienne the red and yellow onions. Drain and rinse the artichokes. Combine artichokes with 2 tbsp of olive oil, minced garlic, and spices in a bowl. Spread out mixture onto a sheet pan and bake for 35 minutes at 350 degrees, artichokes will be slightly soft and browned-do not burn. On medium heat, in a sauté pan, heat the remaining 2 tbsp of olive oil. Add the red and yellow onions and sauté on medium for 5-6 minutes. When the onions start to brown, reduce the heat and cook for an additional 15-20 minutes, stir as needed to keep from burning. Once the onions are caramelized, stir in the lemon juice and cook until the liquid is evaporated. Do not burn the onions. In a large bowl, combine the roasted artichokes and caramelized onion mixture. Gently mix until everything is evenly combined. Chill.

Steps:
- Preheat oven to 425 degrees F (220 degrees C). Lightly spray a shallow baking dish or glass pie plate with cooking spray.
- Arrange artichoke hearts in the bottom of dish. Drizzle 1/4 cup salad dressing over artichokes.
- Bake in preheated oven for 10 minutes. Remove, spread cheese over the top, and drizzle with remaining 1/4 cup salad dressing. Return to oven, and bake until cheese is melted and bubbly, about 10 minutes. Turn off oven. Sprinkle fried onions over the top, and return to oven for 1 minute.

ARTICHOKE HEARTS GRATIN

Steps:
- Place artichoke heart halves on a paper towel cut-side down to drain for about 15 minutes.
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil and lightly coat with vegetable oil.
- Place artichoke heart halves on the prepared baking sheet, cut side up. Season with salt and pepper, sprinkle with breadcrumbs and Parmigiano-Reggiano cheese, and drizzle with olive oil.
- Broil artichoke hearts until browned on top, about 7 minutes. Serve with lemon wedges.

CARAMELIZED ONION DRESSING

Steps:
- 1. Saute onions and garlic in 1 T of the olive oil until well browned.
- 2. Add brown sugar and stir.
- 3. Add vinegar to deglaze.
- 4. Add rest of the oil and the salt and pepper. Check for balance adding more oil if needed.
- 5. Pour over mixed greens or spinach salad while warm. Bacon is a great addition. Makes about 2 cups.

- Heat oven to 350ºF.
- Heat oil in skillet on medium heat. Add sweet onions; cook 12 to 15 min. or until onions are golden brown and tender, stirring occasionally. Remove from heat. Mix with all remaining ingredients except green onions.
- Spoon into shallow ovenproof dish sprayed with cooking spray.
- Bake 20 to 25 min. or until hot and bubbly. Top with green onions.

- Mince 1 jar artichoke hearts in processor. Mix in next 5 ingredients. Transfer mixture to large bowl. Add mayonnaise; whisk until smooth. Gradually whisk in oil. Cover; chill dressing for at least 30 minutes to allow flavors to develop. (Can be made 3 days ahead. Cover; keep chilled.)
- Combine lettuce, onion and tomatoes in bowl. Toss with enough dressing to coat. Divide salad among plates. Top with remaining artichokes and Parmesan.
