This fideo recipe was given to me by my mother in-law. It goes great with any meat dish including carne asada. I use this recipe in place of rice as my side dish.

Number Of Ingredients 7

2 tablespoons vegetable oil
1 (8 ounce) package fideo pasta
½ teaspoon ground cumin
½ teaspoon garlic salt
1 (8 ounce) can tomato sauce
1 tablespoon chili powder
1 ½ cups water

Steps:

  • Heat oil in a saucepan over medium-high heat. Add the fideo, and fry until browned. Pour in half of the can of tomato sauce, and 1 cup of the water. Season with cumin, garlic salt and chili powder, and stir to blend. Bring to a boil, and cook until the liquid has almost evaporated.
  • Stir in the remaining tomato sauce and water. Cover, and cook over medium heat for about 10 minutes, or until the fideo is tender, and the sauce has thickened.

Simple seasonings are all you need to flavor tender pieces of pasta and rice.

2 tablespoons olive oil
1 package (7 oz) fideo pasta or vermicelli or angel hair pasta, broken into 1-inch lengths
1/2 cup finely chopped onion
1 clove garlic, finely chopped
2 cups converted long grain white rice
4 cups chicken broth
1 teaspoon salt
Fresh cilantro leaves, if desired

Steps:

  • In 12-inch skillet, heat oil over medium-high heat. Stir in pasta; cook and stir 3 to 5 minutes or until golden brown. Stir in onion and garlic; cook 2 to 3 minutes, stirring constantly, until tender.
  • Stir in rice; cook 30 to 60 seconds or until light golden brown. Stir in chicken broth and salt. Reduce heat to low; cover and cook 20 to 25 minutes or until rice is tender and liquid is absorbed. Garnish with cilantro leaves.

1 cup white rice (basmati can be used)
2 tablespoons olive oil
1/2 tablespoon butter
2 ounces angel hair pasta broken to pieces
2 tablespoons white onion
1 garlic clove
2 cups chicken broth
1/2 teaspoon kosher salt

Steps:

  • Soak the white rice for 5 minutes. Drain. In a cooking pot, heat the oil over medium heat until hot but not smoking. Add the angel hair and fry for about 2 minutes, stirring constantly. It should be light brown. Incorporate the drained rice, cook for 3 to 4 minutes, stirring occasionally, until the rice achieves a milky white color and it feels and sounds heavier when you move it. Add the chopped onion and garlic, stir and cook for another 2 minutes. Pour the broth over the rice, add the salt and lime juice, and once it comes to a boil, reduce the heat to low, cover with the lid, and cook for about 20 minutes. The rice is ready when the water has been absorbed and the rice is tender and cooked. Turn off the heat and keep it covered for at least 5 minutes. Fluff with a fork and serve. Serve with lime or Yogurt Sauce.
