64 pecans or 64 walnut halves
1 cup cambozola cheese or 1 cup gorgonzola
2 (3 ounce) packages cream cheese
1 teaspoon fresh ground pepper
1 lb dried apricot halves
1/2 cup fresh parsley, minced fine

Steps:

  • Stir nuts in a small frying pan over medium heat until toasted, about 4 minutes.
  • Pour from pan and cool.
  • In a small bowl or food processor, beat or process cheeses and pepper.
  • Spread equal amounts of cheese mixture on each apricot half.
  • Press a nut onto cheese.
  • Press cheese-side down into minced parsley.
  • Serve cheese-side up on a platter.

12 fresh apricots or a can (28 oz) apricot halves
1/2 lb. soft blue cheese

Steps:

  • 1. Cut apricots in half and remove seed, or drain canned apricots well on absorbent paper. Put apricots cut side up on serving plate. Spread each with a teaspoon of cheese. If desired, apricots and cheese may be grilled for about 1 minute or til cheese begins to melt. Serve at once, Makes 24

WARMED BLUE CHEESE AND APRICOT CROSTINI WITH AN ARUGULA DRIZZLE



Warmed Blue Cheese and Apricot Crostini with an Arugula Drizzle image

Number Of Ingredients 10

3 garlic cloves, peeled and roughly chopped
2 tablespoons walnuts
1 cup arugula, washed
Salt and pepper
2 tablespoons Extra Virgin Olive Oil
1/3 cup apricot jam
1/3 cup blue cheese
1/4 cup walnuts, roughly chopped
8-10 slices of French Baguette 1/4 inches thick
I Can't Believe It's Not Butter!® Spray made with Extra Virgin Olive Oil

Steps:

  • Preheat the oven to 375 degrees F. In a food processor, combine the garlic, walnuts, arugula, and pinches of salt and pepper. Pulse to blend, adding the olive oil gradually until pureed. Set aside.
  • In small bowl, combine the cheese and jam using a fork to break up the cheese, and blend it with the jam. Fold in the walnuts.
  • Place the bread slices on a cookie sheet, and spray each liberally with I Can't Believe It's Not Butter!® Spray made with Extra Virgin Olive Oil. Bake for about 10 minutes until toasted; monitor the bread so you can remove it from the oven as soon as it is browned. Flip the slices over, spray the non-browned side with I Can't Believe It's Not Butter!® Spray made with Extra Virgin Olive Oil. Spread the cheese and jam on the bread, and place back into the oven for 5-7 minutes, or until the cheese starts to melt. Remove the crostini from the oven and place on a serving platter; drizzle with the arugula puree. Serve immediately warm, or at room temperature.

This summer-season chicken salad is a dance between sweet, creamy, and acidic flavors and tender, crunchy, and juicy ingredients. Make it in early summer when apricots are peaking and choose a fairly nonassertive blue cheese that won't overwhelm the mix.

1 small rotisserie chicken, skin removed, meat shredded (about 4 cups)
1 bunch of celery, stalks separated, thinly sliced on a diagonal, leaves reserved
1 1/2 tsp. kosher salt, divided
1/2 cup buttermilk
3 Tbsp. white wine vinegar
1 tsp. honey
1 tsp. freshly ground black pepper, plus more
3 large or 4 small apricots, sliced
4 oz. mild blue cheese, sliced into shards
1 cup mint leaves

Steps:

  • Toss chicken, celery stalks, and 1 tsp. salt in a large bowl. Let sit until ready to serve.
  • Whisk buttermilk, vinegar, honey, 1 tsp. pepper, and remaining 1/2 tsp. salt in a small bowl or measuring cup. Pour over celery mixture. Add apricots, blue cheese, mint, and celery leaves and toss just to coat.
  • Transfer salad to a platter and season with more pepper.
