This baked brie puff pastry is rich, creamy, and dessert-like. It always disappears. I'm always asked for the recipe. Raspberry preserves goes great in this as well. Bringing in 2012 I made this using Recipe #463563!

0.5 (17 ounce) package frozen puff pastry, thawed
1 (8 ounce) package brie cheese, round
1/8 cup toasted almond, slices (optional)
1/4 cup raspberry preserves or 1/4 cup your favorite preserves

Steps:

  • Preheat oven to 425.
  • Lightly grease cookie sheet.
  • Roll puff pastry out slightly.
  • Place cheese wheel on top (leave rind on).
  • Place preserves on top of cheese.
  • Place almonds on top of preserves.
  • Bundle Puff Pastry up and around the cheese.
  • Bake for 20-25 minutes.
  • Let cool for five minutes.
  • Serve with your favorite crackers.

Perfect-for-Parties Baked Brie in Puff Pastry with Apricot Jam image

This is a classic dish for any type of gathering, and one we always put out. Imagine a croissant filled with melted Brie cheese and sweet fruit and jam. That's what this dish is. It's a pull-apart appetizer that can be spread on toast points or eaten as is. It's one of those centerpiece starters that is the talk of the party. Puff pastry is a cook's friend. It's great for making quick pastries and even beef Wellington. We always keep a pack in the freezer.

1 (8-ounce [224-g]) wheel of Brie
1 sheet puff pastry, frozen
3 tablespoons (60 g) apricot preserves
1 small Granny Smith apple, peeled, cored and cut into small dice
1/4 teaspoon ground cinnamon
1 large egg beaten with 1 tablespoon (15 ml) milk
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400°F (200°C).
  • Using a large chef's knife, cut the white rind off the top of the wheel of Brie and discard. Put the disk into the freezer and at the same time pull out the sheet of puff pastry. Allow the puff pastry to thaw until it is pliable but still cold, about 30 minutes.
  • Roll the puff pastry to a 14-by-14-inch (35.5-by-35.5-cm) square. Using a pizza cutter or knife, cut a 1/2-inch (1.3-cm) wide strip from one edge of the pastry. Transfer the dough to a parchment-lined baking sheet. Place 1 tablespoon (20 g) of the preserves at the center of the pastry and then the frozen Brie wheel. Top with the apple and cinnamon, then dollop the remaining 2 tablespoons (40 g) of preserves on top. Gather the four corners of the dough, one at a time, across the Brie to enclose it completely. Tie a simple knot with the strip of dough to make a purse.
  • Brush the entire top and sides of the purse with the egg wash. Sprinkle with salt and pepper. If at any point the pastry seems like it's melting or too soft, put it in the freezer for 5 to 10 minutes before continuing. Make sure the pastry is well chilled before baking.
  • Bake on the middle rack of the oven for 30 to 40 minutes, turning the baking sheet halfway through, until the pastry is golden brown and cooked through. Transfer to a wire rack and let cool for 8 to 10 minutes before serving warm.

1 cup plus 2 tablespoons sugar, divided
3 teaspoons baking powder
1/2 teaspoon salt

1 cup shortening
3 large eggs, separated
1/4 cup 2% milk
1-1/2 teaspoons vanilla extract
4 cans (12 ounces each) apricot filling
1 cup chopped walnuts

Steps:

  • In a large bowl, combine the flour, 1 cup sugar, baking powder, salt and baking soda. Cut in shortening until mixture resembles coarse crumbs. , In a small bowl, whisk the egg yolks, 2 egg whites, milk and vanilla; gradually add to crumb mixture, tossing with a fork until dough forms a ball. Divide in half, making one portion slightly larger., Roll out larger portion of dough between two large sheets of waxed paper into a 17x12-in. rectangle. Transfer to an ungreased 15x10x1-in. baking pan. Press pastry onto the bottom and up the sides of pan; trim pastry even with top edges. Spread apricot filling over dough; sprinkle with walnuts. , Roll out remaining pastry to fit top of pan; place over filling. Trim, seal and flute edges. Cut slits in top. Whisk remaining egg white; brush over pastry. Sprinkle with remaining sugar. , Bake at 350° for 35-40 minutes or until golden brown. Cool on a wire rack.

1 cup apricot jam, melted (melt just enough to make spreading easy)
1/2 cup confectioners' sugar
2 tablespoons whipping cream (unwhipped)
1 tablespoon fresh lemon juice

Steps:

  • Set oven to 400 degrees.
  • Line a baking sheet with parchment paper (you will most likely need two baking sheets for 16 pastries).
  • Roll out one puff pastry sheet onto a lightly floured surface into a 12x10-inch rectangle, then cut in half lengthwise (I use a pizza cutter for this).
  • Cut each half crosswise into four 5x3-inch strips (for a total of 8 strips).

1 sheet frozen puff pastry (one 14 ounce package), preferably Dufour ( dufourpastrykitchens.com), thawed
All-purpose flour, for surface
3/4 cup ground toasted walnuts
3 tablespoons light-brown sugar
2 tablespoons cornstarch
Salt
1 large egg, beaten for egg wash
4 apricots, pitted and each cut into 8 wedges
12 ounces fresh blackberries (about 2 to 3 cups)
1/4 cup granulated sugar

Steps:

  • Preheat oven to 425 degrees. Roll out pastry to a 13-by-15-inch rectangle on a lightly floured surface; trim edges with a knife. Transfer to a baking sheet; freeze for at least 30 minutes or overnight.
  • Combine walnuts, brown sugar, cornstarch, and 1/4 teaspoon salt. Brush pastry with egg wash, avoiding edges so that egg doesn't drip over sides. Score a line around edge of pastry using a knife to create a 3/4-inch border (do not cut all the way through). Cover center with walnut mixture. Arrange apricots and blackberries on top. Sprinkle with granulated sugar.
  • Bake for 10 minutes. Reduce oven temperature to 400 degrees. Bake until pastry is golden brown and fruit is soft, about 30 minutes more. Let cool.

a 1-inch piece vanilla bean, split lengthwise
1 tablespoon sugar
a pinch cinnamon
a 1/2-pound frozen puff pastry sheet, thawed
2 plums, cut into 1/4-inch-thick slices
2 fresh apricots, cut into 1/4-inch thick slices
3 tablespoons apricot jam, melted, strained, and kept warm
vanilla ice cream as an accompaniment if desired

Steps:

  • Preheat oven to 400°F.
  • Scrape seeds from vanilla bean with a knife into a small bowl, discarding pod, and stir in sugar and cinnamon.
  • On a lightly floured surface roll out pastry 1/8 inch thick and cut out two 6- by 5 1/2-inch rectangles. Arrange pastry on a baking sheet and fold edges in on all sides to form 1/2-inch borders, leaving corners unfolded. Form points at corners by twisting ends and pressing them gently onto baking sheet. On pastry arrange plum and apricot slices, overlapping them slightly, in rows and sprinkle with sugar mixture.
  • Bake tarts in middle of oven until pastry is golden brown, 20 to 25 minutes. Cool tarts on a rack and brush with jam.
  • Serve tarts warm with ice cream.

1/4 cup apricot preserves
2 cups vanilla frozen yogurt or ice cream

Steps:

  • Preheat the oven to 400 degrees F.
  • Roll out puff pastry into a rectangle, about 12 by 15 inches. Spread preserves over the dough, to within 1/2-inch of the edges. Fold dough in half lengthwise. Gently roll again to seal edges. Using a sharp knife or pizza cutter, cut dough crosswise into 1/2-inch thick strips. Take each strip by the ends and tie into a knot. Arrange knots on a large baking sheet and press down the ends. Bake 6 to 10 minutes, until puffed up and golden brown.
  • Scoop frozen yogurt or ice cream into dessert bowls and lay twists over top.

A nice cooky like base covered with cooked apricot puree and finished with a lattice covering and sprinkled with powdered sugar at serving time. This was another of my mother's favorites...and mine, too. Pretty looking and good.

4 cups all-purpose flour
1/2 teaspoon baking powder
1 grated lemon, rind of
2 -4 tablespoons sour cream
3/4 cup sugar
1/2 lb sweet butter
4 egg yolks
1 lb dried apricot
water
granulated sugar

Steps:

  • For the dough:.
  • Sift flour, baking powder and sugar into bowl.
  • Add lemon rind and butter.
  • Work butter into flour mixture as for pie crust.
  • Add egg yolks and enough sour cream so that when it's mixed it resembles soft pie dough.
  • Gather into ball and divide into 4 parts.
  • Put one part to the side.
  • Pat remaining dough into an ungreased 11 x 17 x 1 inch jelly roll pan.
  • Bake in 350 degree F. oven for 12 minutes to set the dough.
  • Remove from oven and spread with Apricot Filling.
  • For the filling:.
  • Place apricots in saucepan and pour enough water to cover apricots by an inch.
  • Cook over medium heat until apricots are soft and liquid has been reduced, stirring occasionally so they don't stick to pan.
  • Mash apricots with a fork or an immersion blender to a somewhat smooth puree.
  • Add sugar to desired sweetness.
  • Filling must be thick and not runny.
  • Finish assembling:.
  • Roll remainder of dough to 1/8" thickness and cut into 1/2" strips with pie jagger or knife.
  • Arrange diagonally in lattice fashion over apricots, or you can roll pieces of dough into 1/4" diameter and arrange as above.
  • Bake in 350 degree F. oven for approximately 30 minutes or until lightly browned around edges.
  • Before serving sprinkle with sifted powdered sugar and cut into small squares or diamond shaped pieces.
  • NOTE: I like to trim the edges of the pastry before cutting into serving pieces. It looks better, and the trimmings are delicious with coffee as the baker's reward for the work!

3 Tbsp. butter

4 fresh apricots, pitted, sliced
1/2 cup thawed COOL WHIP Whipped Topping

Steps:

  • Heat oven to 425ºF.
  • Unfold pastry sheet on cutting board; cut into 9 squares. Place in single layer on parchment-covered baking sheet.
  • Use tip of sharp knife to score lines 1/2 inch from edges of each square; prick center of each square with fork. Brush with milk; sprinkle with nuts.
  • Bake 13 to 15 min. or until golden brown. Cool completely.
  • Meanwhile, melt butter in medium skillet on medium heat. Add sugar and apricots; stir. Cook 5 min. or until apricots are softened, stirring frequently. Remove from heat. Let stand until ready to use.

2 cups whole milk
1/2 cup sugar, divided
1/2 vanilla bean, split lengthwise, seeds scraped
Pinch of salt
4 large egg yolks
1/4 cup cornstarch
2 tablespoons unsalted butter, cut into small pieces

Steps:

  • In a medium saucepan, combine the milk, 1/4 cup sugar, vanilla bean and seeds, and salt. Cook over medium heat until mixture comes to a simmer.
  • In a medium bowl, whisk together the egg yolks, cornstarch, and remaining 1/4 cup sugar. Whisking constantly, slowly pour about 1/2 cup of the hot milk mixture into the egg yolk mixture. Continue adding milk mixture 1/2 cup at a time, until it has been incorporated. Pour mixture back into saucepan, and cook over medium-high heat, whisking constantly, until it thickens and registers 160 degrees on an instant-read thermometer, about 2 minutes. Remove and discard vanilla bean.
  • Transfer to the bowl of an electric mixer fitted with the paddle attachment. Add the butter, and beat on medium speed until the butter melts and the mixture cools, about 5 minutes.
  • Cover with plastic wrap, pressing it directly onto the surface of the pastry cream to prevent a skin from forming. Refrigerate until chilled, at least 2 hours or up to 2 days. Just before using, beat on low speed until smooth (you can also whisk by hand).

200g plain flour , plus extra for dusting
2 tsp cinnamon
140g cold butter , cut into small chunks
85g light muscovado sugar
1 egg , separated
1 tbsp polenta
700g apricot , halved and stoned
1 tbsp demerara sugar

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the flour and cinnamon in a food processor, then add the butter. Process to make fine crumbs. Reserve 2 tbsp of the sugar, then add the remainder and briefly mix. Add the egg yolk and 1 tbsp water, then pulse to make a firm dough. Turn out onto a lightly floured surface and briefly knead. Wrap in cling film and chill for 30 mins.
  • Toss apricots in the reserved sugar. Roll out pastry on a sheet of baking parchment to a roughly 30cm round. Slide the paper and pastry onto a large baking sheet. Sprinkle the central 20cm with the polenta, then cover with apricot halves, cut sides up. Flop edges of the pastry over the apricots, leaving the centre uncovered. Lightly beat egg white and brush over the pastry. Sprinkle with remaining sugar, then bake for 30-35 mins until the pastry is crisp and the apricots tender.

8 Tbsp apricot preserves
6 peaches,..de-fuzzed, pitted and thinly sliced and skin left on.
2 Tbsp water

Steps:

  • 1. Heat oven to 375 F.. Cut a 9-inch circle from puff pastry sheet. Prick with a fork. Bake on a cookie sheet until golden,14-20 minutes. Let cool. Spread 4 tablespoons of apricot preserves over baked pastry.
  • 2. Arrange fresh sliced peaches on top. From the outside rim to the center.
  • 3. Combine remaining apricot preserves and the hot water in a saucepan over medium heat, for 3 minutes, to make a glaze. Brush on peaches.....and enjoy! Be sure to take a picture! It is so pretty...and delicious!
