Number Of Ingredients 6

1 - 3 ounce package orange Jello
1 - 3 ounce package apricot Jello
1 - 8 ounce tub of Cool Whip
1 large package of cream or Neufchatel cheese, softened
2 cans or 1 large can of Mandarin oranges
Optional: Use orange juice in place of cold water when making the jello.

Steps:

  • 1. Combine both jello flavors and make according to package directions. (Use orange juice in place of cold water if desired.) Let it set in refrigerator, until of egg white consistency. 2. Soften cream cheese. Beat cream cheese. Add Cool Whip. 3. Fold mixture into Jello. 4. Place mandarin orange pieces in a greased mold or 13 x 9 Pyrex dish. Pour Jello mixture over them. 5. Chill until set.

As a small child I requested this at every Thanksgiving. The addition of the Sprite made this a carbonated jello salad with a great tang. Garnish with green grapes, pineapple slices or any other fruit you choose.

2 - 1# cans apricots in syrup (4 cups)
2 - 3 oz boxes of orange jello
1 dash(es) of salt
6 ounce(s) can frozen orange juice
2 tablespoon(s) lemon juice
7 ounce(s) bottle of lemon lime soda (sprite)
OPTIOANL TOPPING
1/2 cup(s) mayonnaise
1/2 cup(s) whipping cream sweetened, whipped
- mix the two together and refridgerate

Steps:

  • Drain apricots, reserving 1 1/2 cup of syrup.
  • Puree apricots in blender. You will need 2 cups of puree
  • Combine reserved syrup, jello and salt. Heat to a boil to dissolve jello.
  • Remove from heat, add orange juice, puree, lemon juice, stir to melt the orange juice.
  • SLOWLY, pour lemon lime soda down the side of the pan to help keep the bubbles. Mix gently with an up and down motion to keep bubble in.
  • Pour into a 6 1/2 cup ring mold. Chill until firm about 6 hours or over night un-mold on a platter. If using mayo and whipping cream, place mixture in the center of the ring. Garnish with green grapes, pineapple or any fruit of your choice.
