1 Tbsp. honey
1/2 tsp. ground ginger
4 small boneless skinless chicken breasts (1 lb.)

Steps:

  • Heat grill to medium heat.
  • Mix all ingredients except chicken until blended.
  • Reserve half the mustard mixture for later use. Brush chicken with remaining mustard mixture.
  • Grill chicken 6 to 8 min. on each side or until done (165°F), brushing occasionally with reserved mustard mixture.

4 boneless skinless chicken breast halves (5 ounces each)
1/3 cup honey mustard
3 tablespoons apricot preserves
1/4 teaspoon ground ginger
Dash each salt and pepper

Steps:

  • Flatten chicken to 1/4-in. thickness. In a small bowl, combine the mustard, apricot preserves, ginger, salt and pepper. Place the chicken on a greased foil-lined baking sheet. Spoon half of the mustard mixture over chicken., Broil 4-6 in. from the heat for 4 minutes. Turn; brush with remaining mustard mixture. Broil 3-4 minutes longer or until juices run clear.

I was making egg rolls one night, and just started adding things. These turned out pretty good. I had to guesstimate on the amounts of the spices. Please feel free to adjust to your taste.

4 cups finely shredded green cabbage
3/4-1 cup of finely shredded cooked chicken (i used leftovers from Crock Pot Whole Chicken thanks again kathy)
3/4 cup of finely shredded carrot
1 egg
2 teaspoons onion powder (taste to suit)
1 1/2 teaspoons garlic powder (taste to suit)
1 teaspoon black pepper
1/2 teaspoon salt
1/2-1 teaspoon cayenne pepper (taste to suit)
14 -15 egg roll wraps (16 oz.pkg.)
1 cup canola oil
1 cup honey
3/4 cup apricot preserves
1/3 cup cold water

Steps:

  • In a large bowl combine cabbage and carrots; mix well.
  • Add chicken; mix well.
  • Add seasonings, mixing well.
  • Taste, adjust seasonings if needed.
  • Add egg, mixing well.
  • To wrap egg rolls--.
  • Lay wrapper on work surface.
  • With wet fingers, damp all edges of wrapper.
  • Place 4 tablespoons of mixture evenly across center of wrapper.
  • Make sure filling is 3/4 inches away from edge.
  • Fold bottom half over to meet top.
  • Roll until tightly wrapped.
  • Make sure that you are folding in sides as you are rolling.
  • In a large 12 inch skillet, heat oil until hot.
  • Fry on both sides until golden brown, about 3 minutes on each side.
  • Drain on paper towels.
  • For Honey-Apricot Dipping Sauce--.
  • In small saucepan combine all sauce ingredients.
  • Over low heat, stir until boiling.
  • Then cool.

2 tablespoons soy sauce

1 tablespoon butter
1/4 cup chopped onion
1/3 cup apricot fruit spread
2 tablespoons honey
1 teaspoon freshly grated lemon peel
1/2 teaspoon dried oregano leaves
1/4 teaspoon salt
1/4 teaspoon pepper
crushed red pepper flakes, to taste
4 (4 ounce) boneless skinless chicken breast halves

Steps:

  • Heat gas grill on medium or charcoal grill until coals are ash white.
  • Meanwhile, melt butter in 1-quart saucepan until sizzling; add onion.
  • Cook over medium heat until onion is softened (1 minute).

Made with traditional ingredients used throughout most of North Africa but somehow it has the taste of Morocco to me. My best shot is that it's an old recipe that has been modernized to suite current tastes.

4 - chicken breasts, boneless, skinless
2 - whole lemons, juiced
1 cup(s) pistachios, coarsely chopped
4 teaspoon(s) honey
2 tablespoon(s) butter
1 - small onion, finely diced
1 cup(s) orzo pasta
2 cup(s) long grain rice
4 slice(s) orange zest
1 pinch(es) saffron
1/2 cup(s) dried apricot, finely diced
1/2 cup(s) golden raisins
1/4 cup(s) scallion, finely chopped
- salt and pepper

Steps:

  • Preheat oven to 350 degrees. In a small mixing bowl combine the lemon juice, pistachios and honey and mix together.
  • Season the chicken breast with salt and pepper. Sear the chicken in a saute pan over the medium heat until golden brown on both sides.
  • Add the lemon honey pistachio mixture onto the tops of the chicken. Place in the oven and cook for 15 minutes.
  • In a heavy bottom pot with a lid, melt the butter over medium low heat. Add the onions and orzo and cook until golden brown, or until the orzo smells nutty.
  • Add the rice and stir to coat with onions and orzo, add the stock, orange zest, saffron, dried apricots, raisins and season with salt.
  • Bring the rice mixture to a boil. Stir once and cover with the lid. Bake in the oven for 15 minutes.
  • Remove from the oven and rest on the stove top for 10 minutes with the lid on. Add the chopped scallions and fluff into the rice using a fork.
  • To serve, spoon the apricot rice onto a plate and top with the lemon honey pistachio chicken.
