4 cups apricot halves
¼ cup white sugar
¾ cup brown sugar
½ cup all-purpose flour
½ cup butter
¾ cup rolled oats

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange the apricots in a 9x12-inch baking dish and sprinkle with white sugar. Mix together brown sugar and flour in a bowl; cut in the butter with a pastry cutter until the mixture resembles coarse crumbs. Lightly stir in the rolled oats and spoon the mixture over the apricots.
  • Bake in the preheated oven until the fruit is soft and the topping is browned and crisp, 35 to 40 minutes.

2 tablespoons brown sugar
1/2 teaspoon ground ginger
TOPPING:
1/4 cup all-purpose flour

3 tablespoons quick-cooking oats
2 tablespoons sweetened shredded coconut
1/4 cup cold butter, cubed

Steps:

  • Preheat oven to 400°. In a large bowl, combine apricots, brown sugar and ginger. Divide among four greased 8-oz. baking dishes. , In a small bowl, combine flour, brown sugar, oats and coconut. 2 1/2 pounds apricots, peeled, pitted and sliced 1/2-inch thick
1 pound cherries, pitted
3/4 cups sugar
1/4 cup flour
2 tablespoons butter
1 cup oatmeal
3/4 cup flour
3/4 cup brown sugar
1/2 cup butter, melted
1 teaspoon cinnamon
1 teaspoon salt

Steps:

  • Preheat the oven to 400 degrees. In a large bowl, mix together the apricots, cherries, sugar and flour. Grease an 8 by 8-inch or 1 1/2 quart baking dish with the butter. Pour the fruit mixture into the dish. In a separate bowl, mix together the oatmeal, flour, brown sugar, butter, cinnamon and salt and mix well. Top the fruit with this mixture and place in the oven. Bake for 25 minutes, or until the topping is golden brown. Remove from the oven and cool for 15 minutes before serving.

1/4 cup walnuts (or almonds)
1 1/4 cups sugar
8 ounces butter
1 pinch ground cloves

  • Preheat oven to 375°F.
  • Slice apricots in half and discard stone.
  • Cover bottom of a shallow, buttered oven proof dish with two layers of apricots.

2 ounces pine nuts, toasted (1/3 cup)
4 apricots, pitted and cut into sixths (about 2 cups)
12 ounces strawberries (about 15), hulled and halved, or quartered if large (about 2 1/2 cups)

1 teaspoon cornstarch

  • For topping:
  • Mix flour, oats, brown sugar, cinnamon, and salt in medium bowl. Add butter and rub in with fingertips until mixture comes together in moist clumps. Stir in walnuts.

Like all crisps and cobblers, this is very flexible. Blackberries or blueberries can be substituted for cherries, and peaches can be substituted for apricots (I add some cornstarch when using peaches as they generate more juices than apricots).

4 -6 cups pitted sweet cherries or 4 -6 cups your choice fruit (use a combination, Bing or Lambert are wonderful)
1/3 cup sugar
2 tablespoons flour
2 tablespoons orange juice

3/4 cup flour
1/2 cup sugar
1/4 cup brown sugar
1/2 teaspoon cinnamon
5 tablespoons butter, chilled

Steps:

  • Preheat oven to 375°F.
  • Mix fruit, 1/3 cup sugar, 2 T flour and orange juice together.
  • Turn into shallow buttered 2 quart baking dish.
  • Let stand 15-20 minutes.

  • Preheat oven to 375 degrees. Gently toss apricots in sugar, brandy and lemon juice. Sprinkle apricots with 3 tablespoons flour; gently toss. Spread apricot mixture into a buttered 8 inch square pan. Set aside. In food processor or blender, whirl 1/2 cup walnuts until fine; transfer to bowl. Add oats, brown sugar, cinnamon and remaining 1/4 cup flour. Use a pastry blender to cut butter into rolled oat mixture; mixture should be crumbly. Add remaining 1/2 cup chopped walnuts. Sprinkle oat/walnut topping over apricots. Bake about 20 minutes, until apricots are tender and topping is golden brown. Serve warm.

1 package(s) (7 oz.) tropical blend mixed dried fruit bits
1 cup(s) granola
1/3 cup(s) toasted coconut
1 pint(s) vanilla ice cream

Steps:

  • Lightly coat the inside of a 4-qt. slow cooker with nonstick cooking spray. In the prepared cooker, combine the pie filling with the dried fruit bits.
  • Cover and cook on LOW for 2-1/2 hours. Remove liner from cooker or turn off the cooker. In a small bowl combine granola and coconut. Sprinkle over fruit mixture in cooker. Let stand, uncovered, for 30 minutes to cool slightly before serving.
  • Serve warm with a small scoop of vanilla ice cream.
  • TOASTING COCONUT: Spread coconut in a shallow baking pan. Bake in a preheated 350-degree oven for 5 to 10 minutes until golden brown. Watch closely to avoid burning, and shake the pan once or twice to redistribute coconut.
