2 cups all-purpose flour (spooned and leveled)
1 cup sugar
2 teaspoons baking powder
1/2 teaspoon fine salt
1/2 stick unsalted butter, room temperature
2 large eggs
1 cup dried apricots, finely chopped
1 cup shelled pistachios, chopped
1 1/2 teaspoons fennel seeds, chopped

Steps:

  • Preheat oven to 350 degrees. In the bowl of a stand mixer on low speed, using paddle attachment, combine flour, sugar, baking powder, and salt. Add butter and beat on medium until coarse crumbs form. With mixer on low, add eggs, one at a time, beating after each addition; mix in apricots, pistachios, and fennel seeds. Continue to mix until dough forms a ball, about 1 minute.
  • On a parchment-lined baking sheet, shape dough into two 2-by-12-inch logs. Bake until dry and set, about 25 minutes. Let cool completely on sheet on a wire rack. Transfer to a cutting board. With a serrated knife, cut logs on the diagonal into 1/4-inch slices. Bake on parchment-lined sheets until golden, 15 to 20 minutes, rotating sheets halfway through. Let cool completely on sheets on racks. (Store in airtight containers, up to 1 week.)

2 cups all-purpose flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 stick (1/4 cup) cold unsalted butter, cut into small pieces
1 whole large egg, lightly beaten
1/3 cup whole milk
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
1 cup whole almonds with skins (5 1/2 oz), toasted and cooled
1 cup dried apricots (6 oz), quartered
1 large egg yolk beaten with 1 tablespoon water for egg wash

Steps:

  • Preheat oven to 350°F.
  • Whisk together flour, sugar, baking powder, and salt in a bowl. Blend in butter with a pastry blender or your fingertips until mixture resembles coarse meal. Add whole egg, milk, and extracts, stirring with a fork until a soft dough forms, then knead in almonds.
  • Divide dough between 2 sheets of wax paper, then form into 2 equal mounds and flatten each mound into a 5-inch disk. Put half of apricots in center of 1 disk and fold dough over apricots to enclose them (use wax paper as an aid if necessary), then transfer to a parchment-lined baking sheet. Form into a 14- by 2 1/2-inch log lengthwise on 1 side of baking sheet, spreading dough with wet hands. Make another log with remaining dough and apricots, arranging it about 4 inches from first log.
  • Brush logs with egg wash and bake in middle of oven until pale golden and firm, about 20 minutes. Cool on baking sheet on a rack 20 minutes.
  • Reduce oven temperature to 300°F while logs cool.
  • Carefully transfer baked logs to a cutting board using 2 wide metal spatulas, then cut logs diagonally into 1/2-inch-wide slices with a large heavy knife.
  • Line baking sheet with a clean sheet of parchment. Stand slices, curved sides up, 1/2 inch apart on baking sheet and bake in upper third of oven until biscotti are dry, about 30 minutes (they will become hard as they cool). Transfer biscotti to rack to cool.

1 3/4 cups flour
2 teaspoons baking powder
1/3 cup chopped dried apricot
1/3 cup dried cranberries
1/3 cup sliced almonds
2 eggs
3/4 cup granulated sugar
1/4 cup butter, melted
2 1/2 teaspoons vanilla
1 orange, rind of, grated

Steps:

  • Mix flour and baking powder together& set aside.
  • In a separate bowl whisk together eggs, sugar, butter, vanilla and grated orange rind.
  • Add almonds, cranberries and apricots.
  • Add flour mixture to wet mixture.
  • The dough will be sticky.
  • Transfer onto a lightly floured work surface.
  • Divide dough into two pieces.
  • Flour your hands and roll one piece into a log almost the length of your cookie sheet.
  • Place on the cookie sheet and flatten to about ½ an inch.
  • Both logs should fit lengthwise on your cookie sheet.
  • Bake at 350°F for 20 minutes.
  • Remove from the oven and let rest 5 minutes.
  • Transfer to a cutting board and cut diagonally into ¾" slices.
  • Stand cookies on their side and return to a 300 degree oven for 10 minutes.
  • Remove from the oven and flip each cookie onto the other side.
  • Bake another 10 minutes.
  • Let cool on a rack.
  • You can use 1 cup of dried fruit mixture in any amount of each that you choose; it doesn't have to be 1/3 of each.

2 3/4 cups sifted all-purpose flour
1 1/2 cups sugar
1/2 cup chilled unsalted butter, cut into pieces
2 1/2 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground ginger
3 1/2 ounces white chocolate, cut into pieces
1 2/3 cups whole almonds, toasted
2 large eggs
5 tablespoons apricot brandy
2 teaspoons almond extract
1 (6 ounce) package dried apricots, diced

Steps:

  • Line 18x12x1-inch cookie sheet (or jellyroll pan) with foil (or parchment paper).
  • Butter and flour foil (not the parchment).
  • Combine flour, sugar, butter, baking powder, salt, and ground ginger in food processor.
  • Process until fine meal forms.
  • Add white chocolate and process until finely chopped.
  • Add toasted almonds and chop coarsely, using 5 to 7 on/off pulses.
  • Beat eggs, brandy and extract in large bowl (You might want to use a counter top mixer).
  • Add flour mixture and apricots to liquid mixture.
  • Stir until moist dough forms.
  • Drop dough by spoonfuls in three evenly spaced 12-inch-long strips on prepared sheet.
  • Moisten fingertips and shape each dough strip into 2-inch-wide log.
  • Refrigerate until dough is firm, about 30 minutes.
  • Position rack in center of oven and preheat to 350 degrees (F).
  • Bake until logs are light brown, about 30 minutes.
  • Transfer sheet to rack and cool completely.

1 cup walnut halves
2 cups all-purpose flour, plus more for dusting
1/2 teaspoon baking powder
1/4 teaspoon salt
5 tablespoons unsalted butter, softened, plus more for baking sheet
1 cup granulated sugar
1 teaspoon pure vanilla extract
2 large eggs, lightly beaten
3/4 cup dried apricots, cut into 1/4-inch dice
1 large egg white, lightly beaten
2 tablespoons sanding sugar
4 ounces bittersweet chocolate, coarsely chopped

Steps:

  • Preheat oven to 375 degrees. Spread out nuts on a baking sheet; toast in oven, stirring occasionally, until fragrant and golden brown, about 8 minutes. Remove from oven; reduce temperature to 350 degrees.
  • Rub nuts between paper towels to remove loose skins; coarsely chop nuts.
  • Sift flour, baking powder, and salt together into a medium bowl; set aside. Put butter and granulated sugar in the bowl of an electric mixer fitted with the paddle attachment. Cream on medium speed until pale and fluffy. Mix in vanilla. Mix in eggs in two batches, mixing each until just combined. On low speed, mix in flour mixture until just combined. Stir in walnuts and apricots by hand.
  • Butter a large baking sheet; set aside. Transfer dough to a lightly floured surface; divide in half. With floured hands, shape each half into an 8 1/2-by-2 1/2-by-1-inch log. Place logs at least 2 inches apart on buttered baking sheet. Bake until golden, about 30 minutes. Transfer sheet to a wire rack; let logs stand 10 minutes.
  • Transfer logs to a cutting board. Clean and butter the large baking sheet; set aside. Brush logs with egg white, and sprinkle with sanding sugar. Cut each log crosswise on the diagonal into 12 pieces (each 1/2 inch thick). Lay flat on buttered sheet. Bake 7 minutes; turn pieces. Bake until golden, 7 to 9 minutes. Transfer to a wire rack; let cool until crisp.
  • Melt chocolate in a heatproof bowl set over a pan of simmering water, stirring occasionally, until smooth, 3 to 5 minutes. Let cool slightly.
  • Dip a flat side of 12 biscotti in melted chocolate, arranging cookies, chocolate sides up, on parchment paper as you work. Let stand until chocolate is set, about 30 minutes. Store in an airtight container, keeping chocolate-dipped ones in a single layer on top, up to 2 days.

  • Chop the apricots.

1/2 cup unsalted butter, at room temperature
1 cup sugar
1 lemon, rind of, finely grated
2 eggs
1 teaspoon vanilla extract

1/4 teaspoon salt
2/3 cup dried apricot, chopped

Steps:

  • Preheat oven to 350°F.
  • Spread hazelnuts on a baking sheet and toast in oven 8 to 10 minutes, until fragrant. Let cool slightly. Place nuts in a dishtowel and rub together to remove some of the skin. Coarsely chop and set aside.

1/3 cup dried apricots (about 2 ounces)
2 large eggs
1 teaspoon water
1 1/3 cups all-purpose flour
1/2 cup sugar
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon vanilla
2 tablespoons chopped candied ginger (about 1 ounce)

Steps:

  • Preheat oven to 325° F. Lightly butter a baking sheet and dust with flour, knocking out excess flour.
  • In a bowl soak apricots in boiling hot water to cover 5 minutes. Drain apricots well and pat them dry with paper towels. Chop apricots fine. In another bowl lightly whisk together eggs and transfer 1 teaspoon egg to a small bowl. Whisk water into the 1 teaspoon egg and reserve egg wash.
  • In a large bowl with an electric mixer blend flour, sugar, baking soda, baking powder, and salt. Add remaining egg and vanilla and beat until a dough forms (dough will be sticky). Stir in apricots and ginger.
  • Turn dough out onto a floured surface and knead 6 times. Working on baking sheet, with floured hands form dough into a 6 1/2- by 4 1/2-inch rectangle. Brush rectangle with some reserved egg wash and bake in middle of oven 30 minutes. Cool rectangle on baking sheet on a rack 10 minutes. Loosen rectangle from baking sheet with a metal spatula and carefully transfer to a cutting board.
  • Cut rectangle crosswise into 1/2-inch-thick slices. Arrange biscotti, cut side down, on baking sheet and bake 10 minutes on each side, or until pale golden. Transfer biscotti to rack and cool. Biscotti keep in an airtight container at room temperature 3 days or frozen 1 month.

A delicious and easy recipe for Roberto's apricot and toasted almond biscotti

2 ¾ cups All-purpose flour
1 ½ cups sugar
1 stick chilled unsalted butter, cut into small pieces
2½ tsp. baking powder
1 tsp. salt
1 tsp. ground ginger
1⅔ cups whole almonds, toasted
3½ oz. white chocolate (or good quality white chocolate chips)
2 large eggs
¼ cup plus 1 TBSP. apricot- flavored brandy (like Jacquins's)
2 tsp almond extract
6 oz. dried apricots, diced

Steps:

  • Line two, 18x12x1-inch cookie sheets with parchment paper or foil (I prefer parchment paper but if you use foil, butter and flour it first.). Combine the first 6 ingredients in the bowl of a food processor. Process until it forms a fine meal. Add white chocolate chips and pulse a few times until roughly chopped. Add the toasted almonds and chop coarsely, using 6 to 8 on/off turns.
  • Beat the eggs, brandy and almond extract together in large bowl. Add the flour mixture and the diced apricots and stir until a moist dough forms. Divide the dough into four portions.
  • Form the dough into four, 14-inch-long by 2-inch-wide logs and place them on the two prepared sheets, spacing evenly. If the dough is too sticky, moisten fingertips before you shape it. Refrigerate until the dough is firm, about 30 minutes.
  • While the dough is resting in the refrigerator, position a rack in the center of oven and preheat the oven to 350°F. Bake one sheet at a time until light golden brown, or about 25-30 minutes. Transfer the sheet to a rack and cool completely. Repeat the process with the second sheet.
  • Reduce the heat to 300°F. Transfer the logs to a work surface. Using a serrated knife, cut each log crosswise into ½- to ¾- inch wide slices. Arrange half of the biscotti cut side down on cookie sheet. Bake for about 8 minutes.

2 1/4 c plus 2 tb flour
1 tsp baking powder
1/2 tsp baking soda
1 c chopped walnuts
2 tsp cinnamon

1/4 tsp ground cloves
1/4 tsp nutmeg
1/4 tsp salt
2 tsp orange zest
3/4 c chopped apricots
3 Tbsp melted butter
2 Tbsp orange juice
2 eggs
4 Tbsp molasses
WHITE ICING
1 c white chocolate candy melts or white chocolate chips
1 1/2 tsp shortening
1/2-3/4 tsp orange zest
1 tsp milk( add more if needed for drizzling)

Steps:

  • 1. heat oven to 350 degree's whisk together all of the dry ingredients in a large bowl. Make sure to chop up any lumps from the brown sugar.Whisk until very well incorporated.
  • 2. add the apricots and nuts and stir really well. add the molasses, orange juice, orange zest, eggs,and butter.
  • 3. put your hands in the bowl and knead the dough. knead until all ingredients are well mixed. This will take about 5 minutes. Be patient. Just keep squeezing the dough together when kneading it. It will become smooth and moist after kneading it well.
  • 4. Flour your hands well. Take the ball of dough and place on parchment or waxed paper. Make in to a log about 4-5 inches wide by 16- 18 inches long and 1 inch in thickness.Pick up log and place on a parchment lined cookie sheet.(butter the sheet pan before applying the parchment on top. this will help keep the parchment in place.)
  • 5. Bake at 350 for 30-40 min.. Remove from oven and cool for 15 minutes. Leave log on sheet pan. Cut slices with a serrated knife about one inch or less in thickness.
  • 6. lay the pieces you cut on their sides on the parchment lined pan.Put back in the oven for 10 minutes. do not over brown. It depends on how hard you like your Biscotti. The longer you bake them. The harder they will be. I prefer them harder, and crunchy. Remove from oven and flip cookie over. Return to the oven.Bake again for 10 You can bake them longer for a crispier Biscotti. Also they harden up more after they cool.
  • 7. Let Biscotti cool thoroughly. Next Pick up Biscotti and line them up on the pan smooth side up like the log is being put back together. Put cookies close as possible.
  • 8. make the icing. Melt the white chips with the shortening,and milk in microwave. set timer for 2 minutes. Stop every 30 seconds or so to stir. When they are all nicely melted add the orange zest and stir well. Take the icing and drizzle all over the top of the Biscotti.
  • 9. let it set in refrigerator for a few minutes. Some cookies may be stuck together after doing this. Simply get the knife and score on area's where they were sliced. Now they are ready to serve. Keep in an air tight container,or you may freeze them.

2-3/4 C. flour
1/4 t. baking powder
1/4 t. salt
1 C. unsalted butter - softened
1 C. sugar
2 egg yolks - save the whites
1 t. vanilla
1/2 C. dried appricots, diced
1/2 C. toasted whole pistachios - chopped
Parchment paper

Steps:

  • Mix together flour, baking powder and salt and set aside. With electric mixer, beat butter and sugar until fluffy then beat in egg yolks and vanilla. Gradually beat in flour mixture. Add apricots and nuts. The batter will be VERY thick - I usually mix by hand at the end. Separately beat 2 egg whites with 2 T. sugar until stiff peaks form. Gently fold egg whites into dough 1/3 at a time until fully incorporated Preheat oven to 375. Shape dough into two 12" logs (5" wide squared off on ends) on parchment lined cookie sheet. The dough is very sticky - you can flour your hands to help form logs. Bake for 20 min. and then let cool 20 min. Slice into 3/8" slices. This is difficult as the dough has a crust and the insides are mushy. I slice and then lift with the edge of the knife to turn on their sides in single layer on cookie sheet (using a serrated knife helps). Lower oven temp to 250 and bake 20 minutes, turn over and bake another 20 min. To make them nice and crispy, I turned the oven off and left them in the oven overnight...I've also just left them in the oven for a couple of hours after baking.

Steps:

  • preheat oven to 350f degrees.
  • In a large bowl, stir together flour, sugar, baking soda, salt, apricots and almonds.
  • Make a well in centre of flour mixture.
  • Drop in eggs, egg whites, margarine and almond extract, whisk until blended.
  • Stir in dry ingredients until combined.
  • Form dough into a ball.
  • Place on a baking sheet.
  • With slightly wet hands, form dough into a 16 inch long log.
  • Flatten log to 1 inch thickness.
  • Bake until light brown and cracked on top, about 30 minutes.
  • Cool log on baking sheet for 10 minutes.
  • Reduce oven temperature to 325f degrees.
  • Place warm log on cutting board.
  • Using a serrated knife, cut log on sharp diagonal into 1/3 inch slices.
  • Arrange on baking sheet.
  • Bake 20 to 25 minutes or until pale golden brown.
  • Cool biscotti on baking sheet (biscotti will harden while cooling).

2 teaspoons baking powder

1 teaspoon coarse salt
1 cup toasted hazelnuts
1 cup coarsely chopped dried apricots
3 large eggs, plus 1 more, beaten, for brushing
Fine sanding sugar, for sprinkling (optional)

Steps:

  • Preheat oven to 350 degrees. In the bowl of an electric mixer, whisk together flour, granulated sugar, baking powder, anise seeds, salt, and nuts. Add dried apricots after beating the dough for about two minutes. Transfer to mixer fitted with the paddle attachment. Add eggs; beat until a stiff dough comes together, about 3 minutes.
  • Divide dough in half. Form each half into a 12-inch log. (Dough may be sticky; dampen your hands for easier handling.) Transfer to a parchment-lined baking sheet and flatten so each log is 13 inches long, 2 1/4 inches wide, and 3/4 inch thick.
