APPLESAUCE SPICE COOKIES WITH BROWNED BUTTER-CREAM CHEESE FROSTING



Applesauce Spice Cookies with Browned Butter-Cream Cheese Frosting image

Betty Crocker™ Super Moist™ spice cake mix combined with applesauce makes these chewy cookies taste like fall, while a browned butter-cream cheese frosting spread adds extra decadence.

1 box Betty Crocker™ Super Moist™ spice cake mix
1 cup unsweetened applesauce
1 egg, slightly beaten
1/4 cup canola oil
1/4 cup unsalted butter
1 package (8 oz) cream cheese, softened
2 1/2 cups powdered sugar
Dash of salt

Steps:

  • Heat oven to 350° F. Line 2 cookie sheets with cooking parchment paper; set aside.
  • In large bowl, beat Cookie ingredients with whisk until combined. Using 2-tablespoon scoop, drop mixture 2 inches apart onto cookie sheets.
  • Bake about 10 minutes or until edges start to brown, tops are dry and cookies spring back when touched lightly in center. Cool 5 minutes; remove from cookie sheets to cooling racks. Cool completely before frosting.
  • In 1-quart saucepan or 6-inch skillet, brown the butter by melting over medium heat until it begins to foam, then stirring constantly until solid bits in butter turn dark brown and smell fragrant like toffee. Remove from heat; pour into heatproof dish to cool.
  • In medium bowl, beat cream cheese and cooled butter with electric mixer on medium speed until smooth. Add powdered sugar and salt; beat to combine. Generously frost cooled cookies with frosting.

2 cups flour
1 cup whole wheat flour
1 1/2 teaspoons cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon allspice
1 cup butter, softened
1 1/2 cups packed brown sugar
2 eggs
1 cup applesauce, recipe follows
1 1/2 cups raisins
Powdered sugar, for garnish
6 apples, McIntosh preferred
1 cup water
1 tablespoon fresh lemon juice
1 teaspoon sugar
1/4 teaspoon cinnamon, optional

Steps:

  • Preheat oven to 375 degrees F.
  • In a bowl, combine the dry ingredients and set aside.
  • In the bowl of a standing mixer, fitted with a paddle attachment, cream the butter. Add the brown sugar and continue creaming. Then add the eggs and applesauce mixing well. Gradually add the dry ingredients and raisins to make dough.
  • Drop by rounded tablespoons onto a greased cookie sheet (save those butter papers!) and bake until light golden brown, about 9 to13 minutes. The cookies do not brown very much. Sprinkle with powdered sugar.
  • Peel and core apples and cut into quarters. Place them in an enamel sauce pan with the water and lemon juice then bring to a boil then turn the heat down slightly and simmer 30 minutes to break them down and get them to thicken. Take off the heat and stir in the sugar and cinnamon, if using.

2 cup(s) sifted all purpose flour
1 teaspoon(s) baking soda
1/4 teaspoon(s) salt
1 teaspoon(s) ground cinnamon
1/2 teaspoon(s) ground nutmeg
1/2 cup(s) butter or margarine
1/2 cup(s) granulated sugar or splenda
1/2 cup(s) dark brown sugar, firmly packed
1 - egg
1 cup(s) applesauce
1 cup(s) rolled oats
1/2 cup(s) seedless raisins
1/2 cup(s) chopped nuts
1/2 cup(s) semisweet chocolate chips
- a smidge of vanilla if you like

Steps:

  • Sift together flour, baking soda, salt, cinnamon, and nutmeg; set aside.
  • In a large bowl, using an electric mixer, beat butter and gradually add the sugars. Beat until light and fluffy. Add egg and beat until blended, this would be the time to add vanilla or what ever extract you like.
  • On low speed, add applesauce and sifted dry ingredients.
  • Beat just until all ingredients are blended together, using a rubber spatula to scrape down sides of bowl.
  • Stir in the oats, raisins, nuts, and chocolate chips.
  • Drop dough by level tablespoon onto ungreased cookie sheets, about 1 inch apart.
  • Bake 8 to 10 minutes or until cookies are lightly browned. Remove immediately from cookie sheets to racks to cool completely. Makes 5 dozen.
