3 to 3-1/2 pounds country-style pork ribs
1 teaspoon canola oil
1 can (32 ounces) sauerkraut
2 cups applesauce
2 cups thinly sliced onion
3/4 cup chicken broth
3/4 cup apple juice

Steps:

  • In a large skillet over medium-high heat, brown ribs in oil. Arrange ribs in an ungreased 13-in. x 9-in. baking dish. Rinse and squeeze sauerkraut; layer the sauerkraut, applesauce and onion over ribs. Combine broth and apple juice; pour over all. , Cover and bake at 350° for 1-3/4 hours; uncover and bake 15 minutes longer or until onion begins to brown and meat is tender.

1 rack pork spareribs cut into 2-rib portions
salt and pepper to taste
4 red potatoes, quartered
1 (16 ounce) jar sauerkraut, drained

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Coat a 9x13 inch baking dish with cooking spray. Season the ribs with salt and pepper, and arrange them in the greased baking dish.
  • Roast for 20 to 25 minutes in the preheated oven. Remove from the oven, and reduce the temperature to 350 degrees F (175 degrees C).
  • Set the ribs on a plate, and drain excess grease from the baking dish. Spread the sauerkraut evenly in the bottom of the dish. Place the ribs on top with the meat side up. Tuck the potato wedges in amongst the ribs. Cover tightly with heavy aluminum foil.
  • Bake for 30 minutes in the preheated oven. Carefully remove the foil to avoid hot steam, and serve.

2 pounds bone-in country-style pork ribs
1 medium onion, chopped
1 tablespoon canola oil
1 can (14 ounces) sauerkraut, undrained
1 cup unsweetened applesauce
2 tablespoons brown sugar
2 teaspoons caraway seeds
1 teaspoon garlic powder
1/2 teaspoon pepper

Steps:

  • In a Dutch oven, cook ribs and onion in oil until ribs are browned and onion is tender. Remove from the heat. Combine remaining ingredients and pour over ribs. , Cover and bake at 350° until ribs are tender, 1-1/2 to 2 hours.

amount of ingredients depends on your needs.
1 can, jar or small bag sauerkraut
1-2 lb pork spareribs, country style ribs (or your choice of pork ribs)
1 large apple, grated (i like honeycrisp)
water, enough to cover ingredients
pepper, to taste

Steps:

  • 1. Place ribs in a large pan, add enough water to cover ribs and season with pepper. Cover pan and bring to a boil, turn heat down and simmer until ribs are just tender (fork inserts easily but won't come out without resistance). Add sauerkraut and grated apple, add more water if needed. Cover and bring back to a boil, turn heat down and simmer until ribs are tender and starting to fall apart. Now they are done and ready to serve.
  • 2. VARIATION: Sliced onion can be added to the pot when the sauerkraut is added. Instead of serving mashed potatoes with this meal the potatoes can be cut up in large chunks and added to the pot about 1/2 hr or so before meat is done.

The recipe was handed down to Camille MacKusick by her father-in-law, from the family archives. All sorts of magical juices ooze out of everything. When the last finger is licked and the last lip smacked, everyone will weep.

8 country-style spareribs
1 1-pound can sauerkraut, drained
About one-half 18-ounce bottle barbecue sauce
No salt, no freshly ground black pepper!

Steps:

  • Preheat the oven to 300°F. Choose a baking pan that will accommmodate the ribs in pieces or all hitched together, with the kraut in the space left over. Eight country-style ribs cut into a 6-rib and a 2-rib hunk, plus the can of kraut, fit perfectly in a 9-by-13-inch pan. For more ribs, get a bigger pan and more kraut.
  • Place the ribs in the pan and the sauerkraut in a mound beside them. Cover the ribs - not the kraut - with the barbecue sauce. Use as much as you like, maybe more than half the bottle, maybe less. Cover the pan tightly withaluminum foil and bake for 3 hours. Lift a corner of the foil near the end of the time to sneak a look. The ribs should be nicely browned and glazed and your mouth should water. Serve hot.
