Fluffy, healthy Applesauce Muffins with oatmeal, cinnamon, and honey. No sugar and no butter needed for these moist, healthy muffins.

3/4 cup unsweetened applesauce
2/3 cup honey
2 large eggs
1/3 cup coconut oil (melted & cooled )
1 1/2 teaspoons pure vanilla extract
1 1/2 cups white whole wheat flour
1/4 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons cinnamon
1/2 teaspoon allspice
1/4 teaspoon nutmeg
1/2 teaspoon kosher salt
1/2 cup old-fashioned rolled oats
Up to 1/2 cup optional mix-ins:
1 1/2 tablespoons coarse sugar (such as raw (turbinado) sugar or sparkling sugar, for sprinkling on top (optional))

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease 10 wells in a standard 12-cup muffin tin with nonstick spray or line with paper liners.
  • In a large bowl, mix together the applesauce, honey, eggs, coconut oil, and vanilla. In a separate bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, allspice, nutmeg, and salt.
  • Add the flour mixture to the bowl with the wet ingredients and stir just until combined. The batter will be a little lumpy. Gently stir in the rolled oats and any other desired mix-ins.
  • Divide evenly among the muffin cups, filling each almost to the top. Sprinkle the tops with coarse sugar, if desired. Bake for 18 to 22 minutes, until a toothpick inserted into the center comes out clean. Remove from the oven and place the muffin tin on a wire rack to cool for 10 minutes, then gently remove the muffins from the pan (run a butter knife around the edges if the muffins are sticking) and let them cool completely on the wire rack.

1 cup applesauce
3 tbsp oil OR applesauce or mashed banana
2 tbsp milk of choice
2 tsp pure vanilla extract
2 tsp white or cider vinegar
1 cup spelt,
1/4 cup sugar or unrefined sugar
1/2 tsp salt
1/2 tsp each: baking soda and baking powder
1/4 tsp cinnamon
optional handful raisins, (crushed walnuts, shredded coconut, etc.)

Steps:

  • *If you want to make mini muffins, bake only 10 minutes. I recommend this mini muffin pan.Whisk all liquid ingredients together. Preheat oven to 350, and line a muffin tin. In a new bowl, stir remaining ingredients very well. Pour dry into wet, and stir until just evenly mixed. Fill each liner about 2/3 of the way, leaving a little room because they will rise. Bake on the center rack, 20 minutes or until muffins have domed and a toothpick inserted into the center of a muffin comes out mostly clean. Let cool. (If you loosely cover overnight on the counter or refrigerated, the liners peel off easily the next day and flavor and texture are even better.) Leftovers can be frozen if desired. 1 cup butter, softened
2 cups sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2 cups applesauce
4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1/4 teaspoon ground cloves
1 cup chopped walnuts, optional
Cinnamon-sugar, optional

Steps:

  • Preheat oven to 350°. In a bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Stir in applesauce. Combine flour, baking soda and spices; stir into creamed mixture. If desired, fold in nuts. , Fill greased or paper-lined muffin cups three-fourths full. Bake until a toothpick comes out clean, 20-25 minutes. Cool 5 minutes before removing from pans to wire racks. If desired, sprinkle with cinnamon-sugar.

I needed to use up some applesauce my 3 year old wouldn't eat and came up with this recipe. We both loved them, so I guess I got him to eat that applesauce anyway! I love the way the edges carmelize. 1 1/2 cups unsweetened applesauce
1 cup agave nectar
1 slightly beaten egg
1/3 cup melted butter
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup white flour
1/2 cup whole wheat flour
1/2 teaspoon cinnamon (or more to taste)

Steps:

  • Mix the applesauce, nectar, egg and butter together. Set aside.
  • In a separate bowl, mix together baking soda, baking powder, salt and flours.
  • Mix wet and dry ingredients all together. (Never over mix muffins.).
  • Pour into greased muffin tins, and bake in 350 degrees oven for approximately 30 minutes. Muffins are done when a toothpick stuck in the middle comes out clean.
  • Do not over fill muffin tins as these muffins tend to spread out instead of rising up.
