1 egg, lightly beaten
1/2 cup unsweetened applesauce
1 cup soft bread crumbs
1 teaspoon salt
1/4 teaspoon pepper
1 pound ground beef
SAUCE:
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1/4 cup water
1/2 teaspoon sugar
1/2 teaspoon prepared horseradish
3 to 5 drops Worcestershire sauce
3 to 5 drops hot pepper sauce

Steps:

  • In a large bowl, combine the first five ingredients. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls. In a large skillet, gently brown meatballs over medium heat; drain. Transfer to an ungreased 2-qt. baking dish. , Combine sauce ingredients; pour over meatballs. Cover and bake at 325° for 45-50 minutes or until meat is no longer pink.

Grandma's Applesauce Meatballs image

This is one of my family's favorite 'comfort' foods - by all six generations. Don't let the applesauce scare you off; you can't taste it, but it keeps the meatballs tender and moist. Add mushrooms and/or pearl onions for an even heartier 'comfort' meal! Serve over hot buttered noodles or rice. We like a salad and garlic bread, or a plate of sliced tomatoes and cucumbers. Enjoy!

1 egg
½ cup milk
1 ½ cups herb seasoned croutons
⅔ cup applesauce
3 tablespoons chopped onion
3 tablespoons minced garlic, or to taste
½ cup shredded Cheddar cheese
salt and black pepper to taste
1 ½ pounds ground beef
1 (10.75 ounce) can condensed cream of celery soup
½ cup evaporated milk
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13 inch baking dish with cooking spray.
  • Whisk the egg and milk together in a large bowl, and stir in the croutons. Allow the croutons to soak up the milk mixture for about 2 minutes. Lightly stir in the applesauce, onion, garlic, Cheddar cheese, and salt and pepper, and mix in ground beef with your hands until thoroughly combined. Form the meat mixture into 1 1/2-inch balls, and place into the prepared baking dish. In the same bowl, whisk together the cream of celery soup with evaporated milk. Pour the sauce over the meatballs.
  • Bake, uncovered, in the preheated oven until the sauce is bubbling and thickened and the meat is no longer pink in the middle, about 45 minutes. Sprinkle with Parmesan cheese 15 minutes before end of baking, and bake until the cheese is melted and beginning to brown. An instant-read thermometer inserted into the center of a meatball should read 160 degrees F (70 degrees C).

This was my mother's standard dinner recipe for guests. These meatballs are juicy and packed with flavor! They go great with scalloped potatoes as a side dish.

1 cup applesauce
1 egg
1 cup bread crumbs
½ teaspoon salt and pepper to taste
1 pound ground beef
flour
1 tablespoon vegetable oil
4 carrots, peeled and thinly sliced
2 onions, thinly sliced
3 cups tomato juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine applesauce, egg, bread crumbs, and salt and pepper, with ground beef; mix until well blended. (This is best done by hand.) Form mixture into medium-sized meatballs, and roll in flour.
  • Heat 1 teaspoon of oil in a large skillet over medium high or high heat. Cook meatballs, turning occasionally, until evenly browned but not cooked through. Transfer to a baking dish and set aside.
  • In the same skillet, partially cook the carrots and onions over medium high heat. Add tomato juice, season to taste with salt and pepper, and bring to a boil. Reduce heat, and simmer for 5 minutes, then pour over meatballs.
  • Cook, covered, in the preheated oven for 45 minutes, or until carrots are tender and meatballs are cooked through. Cook uncovered for 10 minutes before removing from the oven.

1 onion, peeled and chopped
1/8 teaspoon pepper
1 beaten egg
1 cup crushed corn flakes
1 1/2 teaspoons salt
1/4 teaspoon garlic salt
1/2 cup canned applesauce
2 (15 ounce) cans tomato sauce

Steps:

  • Mix all ingredients except tomato sauce and shape into meatballs. Put in open pan and pour tomato sauce over them. Bake 1 hour at 350°, basting frequently.

1 Tbsp sugar

  • 1. mix the cornflakes, onion,beef,egg,applesauce. form into balls. place in greased dish. add the sauce and bake 350 45 to 60 min the sauce, soup, sugar, water. heat until sugar is dissolved. pour over meat and bake. i have made extra sauce and put over pasta. this is a bland dish but you can spice it up. my kids like it this way.

1 egg
1/2 cup milk
1 1/2 cups herb seasoned stuffing mix (crumbs or croutons)
2/3 cup thick applesauce
2 tablespoons finely chopped onions (may use dehydrated minced onion)
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon sage
1 (10 1/2 ounce) can cream of celery soup
1/2 cup water

Steps:

  • Beat egg and milk add stuffing. Stir till smooth with fork. Add meat, applesauce, sage, onions, salt and pepper. Blend gently do not overwork. Form 24 meatballs. Arrange in a nice casserole dish or glass baking dish. Blend soup and water well. Pour over the meatballs. Bake at 350 degrees for 45 minutes.

2 lbs ground beef
1 cup applesauce
1 cup soft breadcrumbs
2 eggs
salt
pepper
flour
2 tablespoons vegetable oil
1 stalk celery, thinly sliced
1 green pepper, minced
1 carrot, thinely sliced
1 small onion, thinly sliced
2 cups tomato juice or 2 cups V8 vegetable juice

Steps:

  • Mix beef, applesauce, and bread crumbs.
  • Add eggs; season with salt and pepper.
  • Shape into small balls, roll in flour and brown in hot oil.
  • Place balls in a casserole dish.
  • To drippings in pan add vegetables and tomato juice.
  • Season with salt and pepper and bring to a boil, then pour over meat balls (this is an important step).
  • Cover and bake in a moderate oven of 350 degrees for about an hour, until vegetables have broken down and have created a nice sauce.
  • If desired, the gravy can be thickened with a little flour-water paste before serving.

2 pounds finely ground lean beef
1 cup breadcrumbs (I use seasoned breadcrumbs)
2 eggs
1 can (16-ounce or less) unsweetened applesauce
1/4 cup grated onion
2 teaspoons salt
1/4 teaspoon pepper
2/3 cup ketchup
1/2 cup water

Steps:

  • Combine all ingredients except ketchup and water. Mix lightly. Form into 16 balls (or size of your choosing). You can brown the balls in hot vegetable oil (I usually skip this step.) Place meatballs in baking dish. Combine ketchup and water; pour over meatballs. You can make more sauce if desired. Cover and bake at 350 degrees for 1 to 1-1/2 hours.
