Soft and moist homemade applesauce muffins that can be oil free and are great for a healthy breakfast.

1 cup applesauce
3 tbsp oil OR applesauce or mashed banana
2 tbsp milk of choice
2 tsp pure vanilla extract
2 tsp white or cider vinegar
1 cup spelt,
1/4 cup sugar or unrefined sugar
1/2 tsp salt
1/2 tsp each: baking soda and baking powder
1/4 tsp cinnamon
optional handful raisins, (crushed walnuts, shredded coconut, etc.)

Steps:

  • *If you want to make mini muffins, bake only 10 minutes. I recommend this mini muffin pan.Whisk all liquid ingredients together. Preheat oven to 350, and line a muffin tin. In a new bowl, stir remaining ingredients very well. Pour dry into wet, and stir until just evenly mixed. Fill each liner about 2/3 of the way, leaving a little room because they will rise. Bake on the center rack, 20 minutes or until muffins have domed and a toothpick inserted into the center of a muffin comes out mostly clean. Let cool. (If you loosely cover overnight on the counter or refrigerated, the liners peel off easily the next day and flavor and texture are even better.) Leftovers can be frozen if desired. 3/4 c applesauce, unsweetened
1 large egg, beaten
3/4 c sugar
1/2 tsp kosher salt
1/3 c cooking oil
1/2 c buttermilk
1 2/3 c all purpose flour
1/2 tsp baking soda
1 1/4 tsp baking powder
1 1/2 tsp cardamom, ground
1/4+ c walnuts, chopped small

Steps:

  • 1. Chop walnuts and set aside.
  • 2. Measure flour, baking soda, baking powder, and cardamom in a bowl and stir with a fork to mix well.
  • 3. Place remaining ingredients in a separate bowl and whisk well to mix. Add flour mix and nuts and fold to mix just until no flour streaks show. Do not overmix.
  • 4. Divide batter to evenly fill a regular 12 muffin pan. The pan should be well buttered and lightly floured on the bottom....or alternately use muffin papers.
  • 5. Bake in an oven preheated to 400 degrees. When you place the pan in the oven, immediately reduce heat to 375 degrees. Muffins are done in 16 minutes.
  • 6. Remove muffins from oven and cool 10 minutes on a wire rack before releasing to cool completely on the rack.
  • 7. Serve these freshly baked muffins simply with softened unsalted butter to appreciate the delicate flavors.

Unsweetened applesauce, whole-wheat flour and toasted walnuts make these warmly spiced muffins a wholesome breakfast or afternoon snack. They are best served warm the day they are baked, but since they are made with oil, they will also stay soft and moist for a couple of days in an airtight container on the counter.

3/4 cup plus 1 tablespoon/165 grams granulated sugar
2 teaspoons ground cinnamon
2 large eggs
1 cup/250 grams unsweetened applesauce
1/2 cup/105 grams canola or other neutral oil
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon kosher salt (Diamond Crystal)
1 cup/128 grams all-purpose flour
1 cup/130 grams whole-wheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 cup/90 grams toasted walnut halves, finely chopped
1 small honeycrisp or other baking apple, peeled and cut into roughly 1/4-inch pieces, about 3/4 cup/80 grams (optional)

Steps:

  • Set a rack in the center of the oven and heat to 350 degrees. Line a 12-cup standard muffin tin with paper liners. In a small bowl, combine 1 tablespoon sugar and 1/2 teaspoon cinnamon, and set aside.
  • In a large bowl, whisk the eggs and remaining 3/4 cup/150 grams sugar until light and foamy.
  • Add the applesauce, oil, remaining 1 1/2 teaspoons cinnamon, nutmeg and salt, and whisk to combine.
  • Add the all-purpose flour, whole-wheat flour, baking powder and baking soda to the bowl. Fold until a few streaks of flour remain, then add two-thirds of the walnuts and all of the chopped apple, if using. Fold until well combined and no streaks of flour remain.
  • Divide the mixture among the 12 liners; they will be almost full to the top. Sprinkle with the remaining one-third of the walnuts and reserved cinnamon sugar.
  • Bake until muffin tops are puffed and golden, and a skewer inserted into the center comes out clean, 15 to 22 minutes. Let cool slightly before removing from the pan. These are best the day they are made, but will last a day or two on the counter in an airtight container. Alternatively, let the muffins cool completely, then transfer to an airtight container and freeze.

1 cup butter, softened
2 cups sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2 cups applesauce
4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1/4 teaspoon ground cloves
1 cup chopped walnuts, optional
Cinnamon-sugar, optional

Steps:

  • Preheat oven to 350°. In a bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Stir in applesauce. Combine flour, baking soda and spices; stir into creamed mixture. If desired, fold in nuts. , Fill greased or paper-lined muffin cups three-fourths full. Bake until a toothpick comes out clean, 20-25 minutes. Cool 5 minutes before removing from pans to wire racks. If desired, sprinkle with cinnamon-sugar.

3/4 teaspoon salt

8 ounces (2 sticks) unsalted butter, softened
1 cup granulated sugar
1 1/2 cups packed light-brown sugar
4 large eggs
Apple-Cider Applesauce or 1 1/2 cups store-bought applesauce
1 cup toasted pecans, chopped
1 package (8 ounces) cream cheese, room temperature

Steps:

  • Preheat oven to 350 degrees. Line a standard 12-cup muffin tin and a 6-cup tin with paper liners. Sift flour, cinnamon, baking soda, salt, nutmeg, and cloves together into a medium bowl. Set aside.
  • Put 8 tablespoons (1 stick) butter, the granulated sugar, and 1/2 cup brown sugar in the bowl of an electric mixer fitted with the paddle attachment. Cream on medium speed until smooth, about 3 minutes. Mix in eggs, one at a time. On low speed, mix in applesauce and then flour mixture. Stir in nuts by hand.
  • Divide batter among muffin cups, filling each about three-quarters full. Bake until a cake tester inserted in centers comes out clean, 18 to 20 minutes. Let cool completely in tins on a wire rack.
  • Meanwhile, in the clean bowl of electric mixer, mix cream cheese with remaining 8 tablespoons (1 stick) butter and 1 cup brown sugar on medium speed until smooth. Spread cream-cheese frosting on muffins.
