3 lbs apples
1 (7 ounce) package red cinnamon candies
2 tablespoons lemon juice
1 cup sugar
1 cup water

Steps:

  • Peel/slice/core apples. I use my peeler/slicer/corer device. Put apples in bowl, sprinkle lemon juice and fruit fresh.
  • Repeat process, till apples are finished peeled and cut up.
  • Place some in blender, alittle of the water, some of the cinnamon imperial candies and 2 tbs lemon juice.
  • Blend at one of the higher speeds, till blended.
  • Pour in crock pot or dutch oven.
  • Note: I make several different batches at once. One in the dutch oven on medium-high heat and the other in the crock pot. Cook till hot.
  • Repeat process till apples, water, cinnamon candies have been blended.
  • Pour in crock pot or dutch oven, add 1 cup sugar.
  • Meanwhile while applesauce is cooking, wash canning jars, lids, and bands. Sterilize in hot water.
  • Take out a few jars at a time, pour in applesauce, put lids and bands on. Put in hot water bath for 25 minutes.

I found this recipe in Home Cooking magazine. I have not tried this recipe, but I'm posting it for safe keeping. I plan to use Splenda for the sugar.

2 cups unsweetened applesauce, divided
4 ounces unflavored gelatin (4 envelopes)
4 cups granulated sugar
1 cup raw walnuts, finely ground in a food processor
1/2 teaspoon lemon juice
1 teaspoon vanilla
3 tablespoons confectioners' powdered sugar
1 1/2 tablespoons cornstarch

Steps:

  • In a small bowl, soak the gelatin in 1/2 cup of the cooked applesauce.
  • Put the remaining applesauce in a saucepan, add the granulated sugar and bring the sauce to a boil.
  • After it is boiling, add the applesauce-gelatin mixture and bring the sauce back to a slow boil for 15 minutes, stirring frequently, to prevent burning.
  • Stir in the walnuts, lemon and vanilla.
  • Pour the mixture into a buttered 9x12-inch nonstick baking pan. The mixture should be about 3/4-inch thick.
  • Let the mixture stand at room temperature at least 24 hours to set and to dry.
  • When firmly set, cut into squares.
  • In a bowl combine the confectioners' sugar and cornstarch.
  • Roll the candy pieces in the mixture to thoroughly coat the pieces on all sides.
  • Store the candy in the refrigerator in a covered container between sheets of waxed paper with more confectioners' sugar and cornstarch between each layer to prevent them sticking together.

1 (3-ounce) package apricot jello or peach gelatin
3/4 cup walnuts finely chopped
1/4 cup powdered sugar

Steps:

  • Grease an 8 x 8 x 2-inch baking pan. Place sugar and applesauce in a medium saucepan. Over medium heat bring to a boil and boil for 2 minutes. Stir in gelatin until dissolved remove from heat.Stir in nuts. Pour into baking pan. Cover lightly and let stand at room temperature for 24 hours. Cut into 1-inch squares.Roll in powdered sugar. Let stand for 24 hours and roll in powdered sugar again.
