EASY APPLES FOSTER RECIPE

This recipe is a play on the classic bananas foster, with a apple twist. I used Cortland apples, but any cooking apple should work.These apples cook up quickly and make for a great dessert. I didn't do the flame trick most people think of when they think bananas foster, but I suppose that could be entertaining if you had guests over. Perhaps google some bananas foster recipes to find out a safe way to do that. Enjoy on its own or serve over ice cream. *Vegetarian, Vegan options listed*

1 tablespoon butter (or sub vegan substitute, like Earth Balance)
1 apple, cored, chopped small (peel optional)
1 tablespoon rum, optional (but definitely gives that unique taste to the dish)
1 tablespoon brown sugar
1/4 teaspoon vanilla
dash cinnamon
ice cream, optional (use ice cream of choice - I went with a vanilla dairy-based ice cream, but there are delicious vegan ice creams out there made with coconut milk that would be wonderful)

Steps:

  • Melt butter over medium low heat in a large pan.
  • Add apples and cook until softened, about 6-8 minutes.
  • Remove pan from heat, add rum, brown sugar, vanilla, and cinnamon. Return to heat, turn heat up a little (I turned mine to between medium-low and medium). Cook until most liquid absorbed, about 2-3 minutes.
  • Enjoy plain or serve over ice cream.

1/2 stick unsalted butter
Splash vanilla extract
Cinnamon stick
Pinch kosher salt
1/2 cup packed brown sugar
3 or 4 firm apples, such as Gala, or Fuji, peeled, cored, and cut into eights
Splash dark rum
Vanilla, Chocolate, Cinnamon, or Chocolate Chip ice cream, for serving

Steps:

  • Melt butter in a large nonstick frying pan over medium heat. When the foaming subsides, add the vanilla, cinnamon, and salt. Sprinkle sugar evenly into pan and cook until bubbly.
  • Remove the pan from the heat and arrange the apples on top in a single layer. Return the pan to stove and cook over medium heat until the apples are glossy and knife tender, about 5 to 7 minutes. Remove the pan from the heat and add the rum. Carefully light the rum, with a long kitchen match. Return the pan to the heat and cook, shaking gently, until the flames subside. Transfer the apple mixture to serving dishes and serve immediately over ice cream.

This is a great recipe for a slightly sweet, tender pot roast made with apple cider and onion soup mix.

1 (3 pound) boneless beef chuck roast
1 (12 fluid ounce) can frozen apple juice concentrate, thawed
1 dash soy sauce
3 cloves garlic, chopped
1 (1 ounce) envelope dry onion soup mix
3 baking potatoes, peeled and diced
2 carrots, peeled and sliced

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Place the roast in a roasting pan or large casserole dish. Fill the dish with about 1/2 inch of water, then stir in the apple juice concentrate. Sprinkle soy sauce over the top of the roast. Make several small slits in the roast and stuff pieces of garlic into them. Season the roast with onion soup mix. Cover with aluminum foil or a lid.
  • Bake for 2 hours in the preheated oven, then remove from the oven and add the carrots and potatoes. Cover again, and continue to cook for an additional 2 hours, or until roast is fork tender.
