1 bottle (750 ml) fruity red wine
1 cup brandy
1 cup sugar
1 medium orange, sliced
1 medium lemon, sliced
1/8 teaspoon ground nutmeg
2 cinnamon sticks (3 inches)
1/2 teaspoon whole allspice
1/2 teaspoon aniseed
1/2 teaspoon whole peppercorns
3 whole cloves
Optional garnishes: Orange slices, star anise and additional cinnamon sticks

Steps:

  • In a large saucepan, combine the first 6 ingredients. Place remaining spices on a double thickness of cheesecloth. Gather corners of cloth to enclose spices; tie securely with string. Place in pan., Bring to a boil, stirring occasionally. Reduce heat; simmer gently, covered, 20 minutes. Transfer to a covered container; cool slightly. Refrigerate, covered, overnight., Strain wine mixture into a large saucepan, discarding fruit and spice bag; reheat. Serve warm. Garnish as desired.

1 (750 ml) bottle Shiraz
1 cinnamon stick
2 star anise
2 slices ginger
2 oranges, halved, juiced
2 lemons, halved, juiced
2 limes, halved, juice
1 cup sugar
1 cup cranberries
4 cups apple cider

Steps:

  • In a large stock pot, combine the wine, cinnamon, anise, ginger, the juice and the flesh of the oranges, lemons, limes, the sugar, cranberries, and apple cider. Bring to a slow simmer for about 1 hour and check for seasoning, may need more sugar. Serve strained in mugs.

1 orange, zested and juiced

2 x 75cl bottles red wine (such as Merlot; better quality wine makes all the difference)
1l good-quality cloudy apple juice
115g caster sugar
1long cinnamon stick , snapped in half
2 star anise
3 tbsp orange Curaçao or Cointreau
a handful or so (about 100g/4oz) frozen mulled fruit or fruits of the forest or Black Forest fruits
3small red-skinned apples , sliced into rings

Steps:

  • Pour the wine and apple juice into a large saucepan and add the sugar, cinnamon stick and star anise. Heat gently, stirring once or twice, until the sugar has dissolved, then continue heating gently for another 15 minutes.
  • Just before serving, swirl in the Curaçao or Cointreau, throw in the frozen fruits and add the apple slices.

This mulled wine recipe couldn't be easier to do. Don't bother with expensive wine - a cheap red will work beautifully and no one will ever know the difference! Start with a little sugar, then add more to taste. This recipe can be easily doubled or trebled.

2 (2 inch) pieces cinnamon sticks
1 teaspoon whole cloves
1 teaspoon whole allspice berries
1 large strip of lemon peel
1 large strip of orange peel
2 tablespoons sugar, or more to taste

Steps:

  • Combine red wine, cinnamon sticks, cloves, allspice, lemon peel, and orange peel in a heavy saucepan over medium heat. Heat gently, but don't boil. Stir in 2 tablespoons of sugar, and once dissolved, taste to see if you'd like to add more.
  • Keep hot on medium to low heat for 20 minutes to let the flavors infuse the wine. Serve your mulled wine hot in glasses or mugs.

Choose a red wine that isn't bone-dry-a little fruitiness is just fine here. I like the inexpensive Zweigelt from Erdenlied for this, which conveniently comes in 1-liter bottles.

2 large oranges
4 1/4 cups/1 liter red wine
1 1/4 cups/10 ounces brandy
1/2 cup dark brown sugar
2 cinnamon sticks
6 whole cloves
3 cardamom pods, slightly crushed

Steps:

  • Using a peeler, remove the peel in strips from 1 orange then juice the orange. Slice the other orange into rounds and reserve for garnish.
  • In a nonreactive saucepan, combine orange peel, juice and the rest of the ingredients. Stir over medium heat until the sugar dissolves, about 2 minutes. Increase the heat to high, bring mixture to a boil, then immediately reduce the heat to low. Simmer gently until flavors meld, about 30 minutes. Strain the mixture, discarding the solids.
  • Ladle into cups or mugs. Garnish each with a reserved orange round.
