CHOCOLATE APPLE BREAD

The combination of chocolate, cinnamon and apple make a great sweet bread that all will love!

2 tablespoons white sugar
¼ teaspoon ground cinnamon
¼ cup finely chopped walnuts
2 cups all-purpose flour
½ teaspoon salt
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
½ cup margarine, softened
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
2 tablespoons buttermilk
1 cup chopped apples
½ cup walnuts
¼ cup semi-sweet chocolate chips

Steps:

  • To make the topping, in a small bowl mix the sugar, cinnamon and finely chopped walnuts. Set aside.
  • In a medium bowl combine flour, salt, baking powder, baking soda, cinnamon, and nutmeg. Set aside.
  • In a separate large bowl cream butter and sugar. Add eggs and vanilla extract, and mix well. Gradually beat in flour mixture alternately with buttermilk. Stir in apples, walnuts, and semi-sweet chocolate chips. Pour into a greased 9x5x3 inch loaf pan. Sprinkle with topping.
  • Bake in a preheated 350 degree F (175 degree C) oven for 50 to 60 minutes. Cool for 15 minutes. Remove from pan. Cool on a wire rack.

1/4 teaspoon ground cinnamon
1/4 cup chopped walnuts

1/2 cup unsalted butter, softened
1 cup white sugar
2 large eggs

2 tablespoons whole milk
1 apple, chopped
1/2 cup chopped walnuts

Steps:

  • Preheat the oven to 350°F.
  • To make the topping: In a small bowl, mix together the 2 tablespoons of sugar, 1/4 teaspoon of cinnamon and 1/4 cup of the walnuts and set aside.
  • In a medium bowl, combine the flour, salt, baking powder, baking soda, the 1/2 teaspoon of cinnamon and the nutmeg and set this aside as well.
  • In a large bowl, cream together the butter and the 1 cup of sugar. Add the eggs and vanilla extract and mix well. Gradually beat in the flour mixture alternately with the milk. Stir in the chopped apple (peeled if desired and chopped however small or large you prefer - I have used both Gala and Granny Smith varieties with great success), 1/2 cup of chopped walnuts and chocolate chips.
  • Pour batter into a greased 9x5x3 loaf pan and sprinkle the topping mixture over the top. Press the topping mixture lightly into the batter to prevent it from all falling off when you take the bread out of the pan.
  • Bake at 350F for 50-60 minutes, or until a toothpick inserted near the center comes out clean. Cool for 15 minutes before removing from pan to a wire rack.

3 eggs
1 ¾ cups white sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1 cup whole wheat flour
1 teaspoon ground cinnamon

3 cups peeled, cored and cubed apples
1 cup chopped walnuts

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Lightly grease two 9x5 inch loaf pans.
  • In a large bowl, stir together oil, applesauce, eggs, sugar and vanilla extract. In a separate bowl, sift together flour cinnamon, baking soda and salt. Gradually stir flour mixture into wet ingredients, mixing just until combined. Fold in apples and walnuts. Pour batter into prepared pans.

3/4 cup cake flour
1 teaspoon baking powder
1/4 cup cornstarch
9 tablespoons butter, at room temp
2 eggs, at room temp
1 teaspoon vanilla extract
2 tablespoons raisins
1/4 cup finely chopped walnuts
1/2 grated lemon, rind of
1/4 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350*.
  • Combine flour, baking powder and cornstarch in a small bowl and set aside.
  • Line bottom and long sides of an 8.
  • 5 x 4inch loaf pan with waxed paper and grease.
  • Sprinkle 1 1/2 tbl of the sugar into the pan and tilt pan to distribute evenly on bottom and sides; tip out any excess.
  • In a medium bowl, cream the butter until soft and add the remaining sugar.
  • Beat until light and fluffy and then add eggs, one at a time, beating well after each addition.

Unsalted butter, for pan
2 cups all-purpose flour, plus more for pan
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup vegetable oil
1/2 cup packed dark-brown sugar
2 large eggs
1/2 to 3/4 cup fresh cider
1/4 cup apple brandy, preferably Calvados (optional)
1/2 teaspoon pure vanilla extract
2 small apples, preferably McIntosh, peeled, cored, and cut into 1/2-inch cubes (2 cups)

Caramel Sauce for Apple Quick Bread

Steps:

  • Preheat oven to 350 degrees. Butter and flour a 5-by-9-inch loaf pan. Whisk together flour, baking powder, cinnamon, and salt. Mix together oil and sugar with a mixer on medium speed until combined. With machine running, add eggs, 1 at a time. Reduce speed to low, and beat in flour mixture in 3 additions, alternating with 1/2 cup cider and the brandy (if not using brandy, use an additional 1/4 cup cider), beginning and ending with flour. Add vanilla, and fold in apples. Pour mixture into pan, and top with oatmeal-walnut crumble.
  • Place pan on a rimmed baking sheet, and bake until a tester inserted into center comes out clean, 45 to 55 minutes. Transfer pan to a wire rack, and let cool for 15 minutes. Invert pan to remove bread. Let cool completely on a wire rack, crumble side up. Drizzle with caramel sauce just before serving.

2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
3/4 cup sugar
1/2 cup warm 2% milk (110° to 115°)
1/4 cup reduced-fat butter, softened
2 eggs
1 teaspoon salt
4 to 4-1/2 cups all-purpose flour
FILLING:
2 cups chopped peeled apples
1/2 cup chopped walnuts
2/3 cup sugar
1 tablespoon all-purpose flour
2 teaspoons ground cinnamon
2 tablespoons reduced-fat butter, softened
GLAZE:
1 cup confectioners' sugar
2 tablespoons apple cider or juice

Steps:

  • In a large bowl, dissolve yeast in warm water. Add sugar, milk, butter, eggs, salt and 2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a bowl coated with cooking spray, turning once to coat the top. Cover and let rise in a warm place until doubled, about 1 hour., For filling, in a small bowl, combine apples and walnuts. 1 cup finely chopped tart apple
1/2 cup chopped walnuts

Steps:

  • In a bowl, cream shortening and sugar. Add eggs, one at a time, beating well after each addition. Beat in buttermilk and vanilla. Combine the flour, baking powder, baking soda and salt; add to creamed mixtures. Fold in apple and walnuts. Pour into a greased 8x4-in. loaf pan. Bake at 350° for 55-65 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
