Here is a low fat slaw that looks very good. It was served with Maple Glazed Pork Tenderolins and I have posted that recipe also. This would be an very simple, great tasting, low fat meal. This recipe is from Pillsbury Cool Cooking for Hot Days cookbooklet, July 1997 #197.

4 cups coleslaw mix, purchased
1/4 cup sliced green onion
2 medium granny smith apples, cubed
3 tablespoons sugar
1/4 teaspoon salt
1/4 teaspoon apple pie spice
3 tablespoons cider vinegar
2 tablespoons oil

Steps:

  • In a large bowl, toss together all salad ingredients.
  • In a small bowl, blend together the dressing ingredients. Pour this over the salad mix and toss until well coated with dressing. Keep refrigerated until time to serve.

From Southern Living May 2009 "Summer Living" Special Section, this is a nice combination of red and green fruits and veggies. Great as a side for bar-b-ques. You could probably use the short-cut of buying prepared slaw mix with the cabbages already shredded and ready to use - could even include matchstick carrots. NOTE: Prep time includes 1 hour chill time.

2 granny smith apples, thinly sliced
4 cups shredded green cabbage (about 1/2 head)
4 cups shredded red cabbage (about 1/2 head)
1 medium cucumber, seeded and sliced
2 large jalapeno peppers, seeded and finely minced
1/2 cup cider vinegar
1/3 cup raw honey
1/3 cup canola oil (or vegetable oil)
2 teaspoons kosher sea salt (to taste)
1/2 teaspoon fresh ground black pepper

Steps:

  • Combine apples, cabbages, cucumbers, and jalapenos in a large bowl.
  • Whisk together vinegar, honey, oil, salt and pepper. Toss with apple mixture.
  • Cover and chill at least 1 hour or up to 4 hours.

This is a tasty twist on traditional cole slaw. It's great for a summer bbq, but would work well all year long. Easy to make, too. :) It's simple to double this, and can't be all that bad for you--especially if you use lights sour cream. Hope you enjoy.

3/4 cup sour cream
1/4 cup granulated sugar
3 tablespoons apple cider vinegar
2 tablespoons ranch dressing mix
1 (8 ounce) package shredded cabbage and carrot coleslaw mix
3 green apples, cored and diced (not peeled)
3 green onions, thinly sliced
3 stalks celery, chopped
salt and pepper

Steps:

  • For the dressing: Whisk sour cream, sugar, vinegar, and ranch seasoning in large bowl until blended.
  • Add the cabbage, apples, green onions and celery.
  • Toss with dressing to coat.
  • Season with salt and pepper.
  • Cover tightly and refrigerate for 20 minutes or up to 4 hours.
  • Serve cold.
  • Enjoy!
