2 cups sugar
2 eggs
3/4 cup canola oil
2-1/2 cups self-rising flour
1 teaspoon ground cinnamon
3 cups diced peeled tart apples
1 cup chopped walnuts
3/4 cup butterscotch chips

Steps:

  • In a large bowl, combine sugar, eggs and oil. Stir in flour and cinnamon (batter will be thick). Stir in apples and nuts. Spread into greased 13x9-in. baking pan. Sprinkle with chips. , Bake at 350° for 35-40 minutes or until golden and a toothpick inserted in the center comes out clean. Cool before cutting.

2 cups white sugar
2 eggs
¾ cup vegetable oil
1 teaspoon vanilla extract
2 ½ cups self-rising flour
1 teaspoon ground cinnamon
3 cups peeled, cored, and chopped tart apple
1 cup chopped walnuts
1 cup butterscotch chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C) and lightly grease a 9x13-inch baking dish.
  • In a large bowl, combine the sugar, eggs, oil and vanilla and mix until well blended. Stir in the flour and cinnamon. The mixture will be thick. Fold in the chopped apple and nuts. Spread the batter in the prepared baking dish, and sprinkle with butterscotch chips.
  • Bake in the preheated oven for 35 to 40 minutes, until a toothpick inserted in the center comes out clean. Cool and cut into squares.
