A healthy dish that goes good with pork!

Number Of Ingredients 12

1 cup(s) green cabbage, shredded
1 cup(s) red cabbage, shredded
1 - small apple, julienned
1 - carrot, shredded
1/2 - small red onion, chopped small
1/2 cup(s) dried cranberries
3-4 tablespoon(s) light exta virgin olive oil
1 teaspoon(s) splenda
1 tablespoon(s) apple cider vinegar
pinch(es) cumin
dash(es) pepper
dash(es) sea salt

Steps:

  • Thinly slice the apple and place slices in a bowl with water/lemon juice (ratio is 1 part lemon/4 parts water) to keep from turning brown.
  • Meanwhile shred cabbage and carrot with grater (can buy pre-packaged cole slaw mix.
  • Chop the onion into small pieces (larger if you like onions).
  • Take apple slices out of water, pat dry and slice into strips.
  • Toss all fruit/vegetables together; drizzle with olive oil to coat (don't drown).
  • Sprinkle with vinegar; splenda, salt and pepper; combine. Taste and adjust as needed (need more oil? splenda? salt/pepper?
  • Serve immediately.

Delicious sweet-and-tangy slaw! The perfect topping for a pulled pork sandwich or as a garden-fresh summer side dish.

1 small head cabbage, cored and finely chopped
1 Granny Smith apple, cut into matchstick-size pieces
5 green onions, thinly sliced
½ cup apple cider vinegar
½ cup white sugar
3 tablespoons olive oil
3 tablespoons vegetable oil
1 tablespoon Dijon mustard
¼ teaspoon red pepper flakes

Steps:

  • Toss cabbage, apple, and onions together in a large bowl.
  • Whisk vinegar, sugar, olive oil, vegetable oil, Dijon mustard, and red pepper flakes together in a saucepan over medium heat; bring dressing to a simmer. Pour hot dressing over cabbage mixture and toss to coat. Cover the bowl with plastic wrap and refrigerate until flavors blend and slaw is cold, at least 1 hour.
