4 apples, peeleded and cut into thick slices
1/2 cup unsweetened apple juice
2 cups blackberries (fresh or frozen)
1 cup water
2 tablespoons blackberry preserves
1 cup sugar
4 teaspoons arrowroot
2 1/4 cups flour
1 1/2 teaspoons baking powder
10 tablespoons butter or 10 tablespoons margarine, room temperature
1/3 cup powdered sugar
1 egg
1/2 teaspoon vanilla
1 cup walnut halves
whipped cream, optional garnish

Steps:

  • Combine apples and juice in a large saucepan over medium heat. Cover and simmer 6-10 minutes or until apples are tender.
  • Drain, reserving juice and apples.
  • Measure 2 cups apple slices and set aside. Additional juice and apples can be used for another purpose.
  • Combine berries, water and preserves in medium saucepan.
  • Combine sugar and arrowroot powder in a small bowl and then stir into berry mixture.
  • Cook over medium heat nd simmer until thickened (6-10 minutes). Set aside and let cool to room temperature.
  • Preheat oven to 375-degrees F.
  • Sift together flour and baking powder in a small bowl.
  • In a large bowl cream butter and powdered sugar until fluffy. Add egg and vanilla. Stir in sifted dry ingredients to form a soft dough.
  • Divide dough into two parts, with one part being slightly larger than the other.
  • On a board on top of wax paper, roll the larger piece of dough out into a 12-inch circle.
  • Put pastry into a 9-inch pie pan.
  • Add reserved apples. Top with walnut halves. Pour berry mixture over walnuts.
  • Roll remaining dough out to a 9-inch circle.
  • Place over filling and press top and bottom pastry edges together to seal. Prick top over with fork.
  • Put pie pan on top of baking sheet in case of spill over.
  • Bake for 50-60 minutes or until pastry in golden and filling is bubbly.
  • Serve warm with whipped cream, if desired.

This recipe is from my junior high cooking class. Very good and simple. It is funny to see my beginning cooking era recipes compared to my Great, Great Auntie's--hers only has list of ingredients with amounts! ;)

2 c sifted flour
2 tsp baking powder
1/2 tsp salt
1/8 tsp cinnamon
1/8 tsp freshly grated nutmeg
1 c brown sugar, firmly packed
1/2 c butter, softened
1 egg
3/4 c milk
1 large tart apple, pared, cored and thinly sliced
1 Tbsp sugar

Steps:

  • 1. Heat oven 350. grease 9" pie plate. Bake 45 minutes until center is firm.
  • 2. Sift together dry ingredients into a large bowl, stir in brown sugar, cut in 6 Tbsp, butter until crumbly. (save 1/2 cup for topping)
  • 3. Break egg in glass measuring cup; stir with fork; add milk to make 1 cup (it will take about 3/4 c.)Stir into flour mixture until well blended; pour into greased 9" pie plate
  • 4. Arrange apple slices overlapping in two circles on top of crumbs.
  • 5. Sprinkle with saved 1/2 c. crumb mixture and dot with saved 1 Tbsp butter. Sprinkle lightly with sugar. Bake 45 minutes.
  • 6. Serve warm. Plain, with ice cream or whipped cream.

Filling:
2 c flour
2 T plus 2 teas sugar, divided
3 teas baking powder
1 teas ground cinnamon
1/2 teas salt
1 c heavy whipping cream
1/2 c plus 4 teas melted butter, divided
1/4 c butter, cubed
4 large tart apples, peeled and sliced
1/2 c packed brown sugar
1/2 teas ground cinnamon
1/8 teas ground nutmeg

Steps:

  • In a large bowl, combine the flour, 2 T sugar, baking powder, cinnamon and salt. In a small bowl combine cream and 1/2 c butter. Stir into dry ingredients just until moistened. Drop dough by 1/4 cupfuls 2 inches apart onto a greased baking sheet. Brush with remaining butter, sprinkle with remaining sugar. Bake at 375 for 18-20 minutes or until golden brown. Cool slightly. In a large skillet melt butter. Add the apples, saute until tender. Stir in the brown sugar, cinnamon and nutmeg. Gently split warm shortcakes in half horizontally. Top with apple mixture and replace tops. Can put ice cream on top or I whipped cream and put it on top.

1/2 cup caster sugar (3 oz)
1 egg
3/4 cup self-raising flour (3 oz)
3/4 cup plain flour (3 oz)
1 lb cooked apple

tsp finely grated lemon rind
extra caster sugar
1 1/2 cups all purpose flour
2 tsp baking powder

Steps:

  • Oven 180C/350F Cream butter and lightly. Add egg. Beat well. Beat in sifted flours Turn out onto floured surface. Knead until smooth. Divide into 2. Roll each piece in a round between 2 sheets cling film or grease proof paper. 8" round Line 8" tin with greaseproof paper. Place one ronf in tin. Press firmly. Spread apple, leaving room around the edges Place second round on top and press edges. Brush with water and sprinkle lightly with sugar. Bake 35-40 mins moderate oven. Rest 15 mins before removing from tin
