APPLE AND SAUSAGE FRENCH TOAST CASSEROLE WITH CINNAMON SYRUP



Apple and Sausage French Toast Casserole with Cinnamon Syrup image

The aroma from this dish is divine! What a wonderful - and festive - way to start your day.

FRENCH TOAST
1 lb loaf of challah or french bread, cubed
8 oz cream cheese, softened
1/3 c brown sugar, packed
1 1/2 tsp cinnamon
6 eggs, slightly beaten
2 c whole milk
1 tsp pure vanilla extract
1/2 c seedless raisins
5 oz dried apples, diced
1 granny smith apple, peeled and chopped
1 lb breakfast sausage, cooked and crumbled
CINNAMON SYRUP
1 c brown sugar, packed
3/4 tsp cinnamon
1/8 tsp salt
1 c water
1 Tbsp corn starch
1 tsp pure vanilla extract
2 Tbsp unsalted butter

Steps:

  • 1. Spread cubed bread in a single layer on 2 sheet pans and bake in a 325 degree oven for about 15 minutes. Cool slightly then transfer bread into a greased 9 by 13 inch baking pan.
  • 2. In a large bowl, mix cream cheese, brown sugar and cinnamon. Add eggs, milk, and vanilla.
  • 3. Sprinkle the raisins, dried apples, chopped apple and the sausage over the bread. Now pour the egg mixture over the bread. With a spoon, gently push the bread down until it is soaked.
  • 4. You can bake it now or cover with foil and refrigerate overnight to bake in the morning.
  • 5. If you are baking it in the morning leave the casserole at room temperature while the oven preheats. Bake uncovered at 350 degrees F, for 35 - 45 minutes just until the center is set.
  • 6. While the french toast is baking, prepare the cinnamon syrup. Combine the brown sugar, cinnamon, and salt in a small saucepan. Combine the water and corn starch in a measuring cup then pour into the pan.
  • 7. Cook over medium heat and bring to a rolling boil, stirring often. Remove from heat and add the vanilla extract and butter. It will be the consistency of syrup.
  • 8. When the french toast is out of the oven drizzle some syrup over it and serve the rest on the side. By now everyone has smelled it cooking and they will be ready to eat! Serve hot.

3/4 pound bulk pork sausage
2 medium apples, peeled and cut into 1/4-inch slices
6 eggs
2-1/2 cups milk
1/3 cup maple syrup
1/2 teaspoon ground nutmeg
18 slices French bread (1/2 inch thick)

Steps:

  • In a skillet, cook sausage over medium heat until no longer pink; drain. Remove and set aside. Add apples to the skillet; cover and cook for 3-5 minutes or until tender, stirring occasionally., In a bowl, lightly whisk the eggs, milk, syrup and nutmeg until combined. In a greased 13-in. x 9-in. baking dish, arrange half of the bread. Top with the sausage, apples and remaining bread. Pour egg mixture over the top. Cover and refrigerate for 8 hours or overnight., Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 45-50 minutes or until eggs are set and bread is golden.

½ cup Egg Beaters® Original
1 ½ cups Reddi-wip® Original Dairy Whipped Topping
1 (6.4 ounce) package Banquet® Brown 'N Serve™ Original Sausage patties
¼ cup maple-flavored syrup
8 slices whole-grain white bread
1 medium Granny Smith apple, peeled, cut into 1/4-inch slices
2 tablespoons Parkay® Original Spread - tub

Steps:

  • Whisk together Egg Beaters and Reddi-wip in large shallow dish; set aside.
  • Heat sausage in microwave according to package directions. Meanwhile, spread syrup evenly over bread. Top each of 4 bread slices with 1/4 of the apple and 2 sausage patties. Top with remaining 4 bread slices, syrup-side down, to make sandwiches.
  • Melt 1 tablespoon Parkay in 12-inch nonstick skillet or large griddle over medium heat. Carefully dip 2 sandwiches, 1 at a time, in Egg Beaters mixture, coating both sides. Place in skillet; cook 2 to 3 minutes on each side or until golden brown. Repeat with remaining Parkay, Egg Beaters mixture and sandwiches. Cut each in half to serve.
