6 tablespoons cold unsalted butter, cut into pieces, plus more for the pan
3 medium apples (such as Gala), peeled and chopped
1 pint raspberries
1/2 cup granulated sugar
1 1/2 cups plus 1 tablespoon all-purpose flour
2 teaspoons pure vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon plus a pinch of kosher salt
2 teaspoons baking powder
1 large egg
1/3 cup cold buttermilk, plus more for brushing
Turbinado sugar, for topping
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 375˚ F. Butter a 12-cup muffin pan. Combine the apples, raspberries, 1/4 cup granulated sugar, 1 tablespoon flour, the vanilla, cinnamon and a pinch of salt in a medium bowl. Toss and set aside.
  • Whisk the remaining 1 1/2 cups flour, 1/4 cup granulated sugar and 1/2 teaspoon salt and the baking powder in a medium bowl. Add the cut-up butter and toss to coat, then work the butter into the flour using your fingers until it looks like coarse meal with some pea-size bits. Whisk the egg and buttermilk in a small bowl, then add to the flour mixture and stir to form a sticky dough.
  • Divide the apple mixture among the muffin cups. Spoon the dough evenly over the fruit (about 2 tablespoons per muffin cup). Brush the dough with buttermilk and sprinkle with turbinado sugar. Bake until the fruit is bubbling and the dough is browned and cooked through, 25 to 30 minutes. Let cool at least 10 minutes, then scoop out of the pan and serve with ice cream.

A few tablespoons of the mixture also enlivens white wine, vodka, and iced or hot tea. Make a double or triple batch to keep in the refrigerator. It will last for up to a week.

1 lemon, sliced 1/4 inch thick (optional)
1 vanilla bean (split, seeds scraped, pod reserved) or 1/2 teaspoon pure vanilla extract
1/4 cup sugar
3 cups seltzer
Lemon wedges, for serving

Steps:

  • Combine raspberries, sliced lemon (if using), vanilla bean, and sugar in a double boiler or heatproof bowl set over a pan of simmering water. Cook, stirring, until raspberries have released most of their juices, about 12 minutes.
  • Strain through a fine sieve, pressing gently with the back of a spoon; discard solids. Let cool. Pour 1/4 cup syrup into each of 3 ice-filled glasses. Top each with 1 cup seltzer. Serve with lemon wedges.

1 can (21 oz) raspberry pie filling with more fruit
1 tablespoon finely chopped crystallized ginger
1 crust from 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
2 teaspoons milk
1 tablespoon sugar

Steps:

  • Heat oven to 400°F. Into ungreased 8- or 9-inch square (2-quart) glass baking dish, spoon both pie fillings and ginger; stir gently to mix well.
  • Remove pie crust from pouch; place flat on cutting board. Cut crust into 1/2-inch-wide strips. Place half of the strips, about 1/2 inch apart, on filling mixture. Weave a cross-strip through center by first folding back every other strip of the first layer of strips. Continue weaving cross-strips with second half of strips, folding back alternate strips before adding each cross-strip, until lattice is complete. Trim ends as needed. Brush crust with milk; sprinkle with sugar.
  • Bake 40 to 50 minutes or until filling is bubbly and crust is golden brown. Cool at least 20 minutes before serving.

1 cup packed brown sugar
1 tablespoon all-purpose flour
5 large Granny Smith apples - peeled, cored and thinly sliced
1 cup frozen raspberries, thawed
½ cup old-fashioned oats
½ cup all-purpose flour
1 ½ teaspoons ground cinnamon
¼ teaspoon salt
6 tablespoons butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x9 inch square baking dish.

1 cup flour
1/2 cup sugar
1/4-1/2 cup butter, but in pieces
1/4 teaspoon nutmeg

  • Heat oven to 375.
  • Peel and core apples, cut into 8-10 slices.
  • Arrange in a buttered shallow baking dish.
  • Sprinkle lemon juice over them.
  • Drain raspberries.
