1 1/2 cups chopped pecans, divided
1 stick butter, melted
2 cups sugar
2 eggs
1 teaspoon vanilla extract
2 cups flour
2 teaspoons cinnamon
1 teaspoon baking soda
1 teaspoon salt
4 large Granny Smith apples, peeled and cut into wedges

Steps:

  • Preheat oven to 350°F. Bake pecans in a single layer in a shallow pan 5 to 7 minutes or until lightly toasted and fragrant, stirring halfway through.
  • Combine butter, sugar, eggs, and vanilla extract in a large bowl until blended. Combine flour, salt, cinnamon, baking soda and butter mixture, stirring until blended. Stir in apples and 1 cup pecans. Spread thick batter into a lightly greased 13- x 9-inch pan.
  • Bake at 350°F for 45 minutes. Remove from oven when a wooden pick inserted in center comes out clean. Cool completely in pan on a wire rack for 30-45 minutes. Spread frosting (your choice) on cake and sprinkle with remaining pecans.

Like most fresh apple cakes, it actually tastes better after a day or two. For this recipe, any baking apple will do; but we suggest using pink lady, granny smith, or honeycrisp apples. 1 2/3 cups granulated sugar
1 cup vegetable oil
2 teaspoons vanilla extract
1 teaspoon baking soda
1 teaspoon table salt

3 cups diced peeled apples (from 3 medium apples)
1 cup chopped pecans
1 cup packed brown sugar
1/2 cup (4 oz.) unsalted butter
1/4 cup evaporated milk

Steps:

  • Prepare the Cake: Preheat oven to 325°F. Coat a 10-inch tube pan with cooking spray; dust with flour. Beat eggs, sugar, oil, and vanilla with a hand mixer on medium speed about 1 minute. Stir together baking soda, salt, cinnamon, and 2 1/2 cups of the flour in a separate bowl; gradually add to egg mixture, beating on low speed until blended.
  • Stir together apples, pecans, and remaining 1/2 cup flour in a bowl; fold mixture into batter. Spoon batter into prepared tube pan. Bake in preheated oven a until wooden pick inserted in center comes out clean, about 1 hour, 15 minutes. Cool in pan 15 minutes. Remove from pan; let cool until just warm, about 30 minutes.
  • Meanwhile, prepare the Frosting: Cook brown sugar, butter, and evaporated milk in a saucepan over medium, stirring often, until mixture comes to a boil and sugar is dissolved, about 2 minutes. Continue cooking, stirring constantly, until mixture reaches soft-ball stage (240˚F), about 3 minutes. Remove from heat; whisk until slightly thickened, abut 1 minute.
  • Drizzle Frosting over warm Cake. If desired, garnish with chopped pecans.

Is there anything nicer than the smell of apples and cinnamon? This is such a comforting dessert. Easy to make and low in fat too. You probably already have everything at hand. A good friend gave this to me many moons ago. I believe she got it from a women's group in Meaford Ontario. This is also terrific baked in individual ramekins or onion soup bowls. For a change of pace, try adding raisins or whole cranberries to the apples prior to pouring on the batter.

2 tablespoons water
1 cup flour
1/2 cup white sugar

1 tablespoon lemon juice
1/4 cup firmly packed light brown sugar
1 1/2 cups pancake mix (the just-add-water kind)
1/2 cup granulated sugar
3/4 teaspoon ground cinnamon
1/2 cup milk
3 tablespoons butter, melted
1 teaspoon vanilla extract
2 cups apple juice
ice cream (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Toss chopped apples with lemon juice in a medium bowl. Add brown sugar; stirring well to coat.
  • Whisk together pancake mix, granulated sugar, and cinnamon in a medium bowl; stir in milk, butter, and vanilla. Fold apple mixture and any accumulated juices into batter. Spread into a lightly greased 8" square pan.
