½ cup softened butter
⅓ cup white sugar
1 teaspoon vanilla extract
1 cup all-purpose flour, or as needed
1 (8 ounce) package cream cheese, softened
1 egg
¼ cup white sugar
1 tablespoon vanilla extract
4 cups peeled and sliced apples
⅓ cup white sugar
2 tablespoons ground cinnamon
¼ cup sliced almonds

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Mix butter, 1/3 cup sugar, and 1 teaspoon vanilla extract in a bowl. Stir flour into mixture to make a workable dough. You might not need all the flour. Press the crust into a 9-inch pie dish.
  • Mix cream cheese with egg, 1/4 cup sugar, and 1 tablespoon vanilla extract in a bowl. Pour cream cheese mixture into pie crust. Toss sliced apples with 1/3 cup sugar and cinnamon; top the cream cheese filling with the apple mixture. Sprinkle with sliced almonds.
  • Bake pie in the preheated oven for 10 minutes. Reduce oven temperature to 350 degrees F (175 degrees C) and continue baking until the filling is set, 20 to 25 more minutes. Cool before serving.

2 pie crusts
24 oz cream cheese
1 cup sugar
1 cup sour cream
½ teaspoon vanilla extract
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
3 eggs
3 medium apples, peeled, cored and cubed
1 cup water
⅓ cup sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
2 tablespoons cornstarch

Steps:

  • Preheat oven to 300˚F (150˚C).
  • Line a springform pan with a pie crust, pressing it around the sides of the pan until smooth.
  • In a medium bowl, beat the cream cheese, sugar, vanilla, cinnamon, and nutmeg until smooth.
  • Add the sour cream and mix together. Add in one egg at a time, whisking until smooth.
  • Pour mixture into the springform pan and bake for 1 hour and 15 minutes.
  • After baking, turn off the oven and let the cheesecake cool inside for 1 hour without opening the oven door.
  • Turn up the oven temperature to 425˚F (220˚C).
  • In a saucepan, add the apples, sugar, cinnamon, nutmeg, cornstarch, and water over medium-low heat. Stir occasionally until apples are soft (about 10 minutes), then remove from heat. Let cool.
  • Once cool, spread apple pie filling over cheesecake.
  • Cut the other pie crust in to ¼-inch (6 mm) strips and make a lattice pattern across the top.
  • Brush with egg wash.
  • Bake for 25 minutes, until golden brown.
  • Chill until set then serve.

3 tablespoons butter
5 cups thinly sliced peeled tart apples
20 caramels
½ cup half-and-half
1 (8 ounce) package cream cheese, softened

1 egg, lightly beaten
1 (9 inch) unbaked deep-dish pastry shell
¾ cup chopped pecans
2 cups whipped topping

Steps:

  • Combine 3/4 cup brown sugar and butter in a large skillet. Cook over medium-high heat until sugar has dissolved, stirring occasionally, 3 to 4 minutes. Add apples and cook uncovered, stirring occasionally, until apples are tender, 12 to 15 minutes. Drain and set aside.
  • Combine caramels and half-and-half in a large, heavy saucepan. Cook over low heat, stirring frequently until smooth, 10 to 15 minutes. Remove from heat; keep warm.
  • Beat cream cheese, remaining 1/2 cup brown sugar, vanilla extract, and 1 1/2 teaspoons cinnamon together using an electric mixer in a large bowl until smooth. Add egg; beat on low speed until just combined.
  • Stir 1/2 the caramel mixture into apples and pour into pastry shell. Sprinkle pecans over apples, reserving 2 tablespoons for topping. Fold remaining caramel mixture into cream cheese mixture; spread over pecans. Cover edges loosely with aluminum foil.
  • Bake in the preheated oven for 20 minutes. Remove foil; return to the oven and bake until filling is set, 15 to 20 minutes. Remove from the oven and transfer to a wire rack to cool completely, 15 to 30 minutes. Chill in the refrigerator for 30 minutes.

Steps:

  • Cook apples, 1/4 cup sugar and 1/2 tsp. cinnamon in saucepan on medium heat 6 min. or until apples are tender, stirring frequently. Cool.
  • Heat oven to 325°F. Combine graham crumbs, oats, butter, remaining cinnamon and 2 Tbsp. of the remaining sugar; press onto bottom of 9-inch springform pan.
  • Beat cream cheese, vanilla and remaining sugar in medium bowl with mixer until blended. Add eggs, 1 at a time, mixing on low speed after each just until blended.

⅔ (16 ounce) package graham crackers, crushed into fine crumbs
1 ¼ sticks butter, melted
2 large apples - peeled, cored, and sliced
1 teaspoon brown sugar

1 (8 ounce) container mascarpone cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a 9-inch springform pan with parchment paper or grease with butter.

2 cups gingersnaps, crushed
6 tablespoons butter, melting
24 ounces cream cheese, softened
1 cup sugar
2 eggs
1 egg yolk
1/2 cup whipping cream
2 tablespoons all-purpose flour
1 teaspoon amaretto flavoring or 1 teaspoon vanilla extract
2 medium firm tart apples, peeled thinly sliced
1 tablespoon packed light brown sugar
1 teaspoon ground cinnamon
1/2 cup all-purpose flour
1/2 cup packed light brown sugar
1/4 cup walnuts or 1/4 cup pecans, finely chopped
1/4 cup butter, melted

Steps:

  • Heat oven 350°F Spray bottom of 10" springform pan with nonstick cooking spray. In small bowl, stir together gingersnaps with 6 Tbs melted butter(crust). Press into bottom and 1/2" up sides of pan; wrap outside of pan with foil. Bake 5-7 minutes until set.
  • Meanwhile, in large bowl, beat cream cheese and sugar at medium speed 2-3 minutes or until smooth. Beat in eggs, egg yolk, cream, 2 Tbs flour and flavoring 1 minutes or until blended.
  • In medium bowl, toss apples with 1 Tbs brown sugar and cinnamon until lightly coated.
  • Pour half of the filling into crust; arrange apples over the filling, overlapping slightly. Pour remaining filling over apples. Bake 40 minutes.
  • Meanwhile, in small bowl, stir together 1/2 cup flour, 1/2 cup light brown sugar, 1/4 nuts and 1/4 cup melted butter(topping); sprinkle over cake. Bake 20-25 minutes or until top is golden brown and set 3" from edge. Cool on wire rack to room temperature.
  • Refrigerate overnight.
  • Store in the refrigerator.

6 Tbsp melted butter
FOR CHEESECAKE

1 c sugar (white)

1 egg yolk
1/2 c heavy cream
1/2 c plus 2 tablespoons all-purpose flour
1 tsp vanilla extract
APPLE PIE LAYER
3 apples, peeled and sliced
1 Tbsp brown sugar
1 tsp cinnamon
1/4 tsp nutmeg
FOR TOPPING
1/2 c brown sugar
1/4 c melted butter
2 Tbsp optional: caramel sauce

  • 1. Preheat oven to 350.
  • 2. Spray 9-inch springform pan with cooking spray.
  • 3. In a bowl mix crumbs with 6 tbsp melted butter.
  • 4. Press firmly into springform pan, allowing it to go about 1/2 inch up the side of pan to create a nice crust.
  • 5. Wrap the outside of the pan with foil and bake 10 minutes. Set aside.
  • 6. While crust is cooking, beat cream cheese and sugar until smooth.
  • 7. Beat in eggs, egg yolk, flour, cream, and vanilla until well blended.
  • 8. In a separate bowl, toss apples with 1 tbsp brown sugar, cinnamon, and nutmeg until coated.
  • 9. Pour half the cream cheese mixture over crust.
  • 10. Arrange apples over the cream cheese mixture.
  • 11. Then pour remaining mixture over apples.
  • 12. Bake 40 minutes at 350.
  • 13. While cheesecake is baking, prepare the topping. In a small bowl stir together 1/2 c brown sugar and 1/4 c melted butter.
  • 14. After cheesecake has baked 40 minutes, drop topping mixture over cheesecake.
  • 15. Put back in oven and cook another 30 minutes until top is golden brown and edges have begun to pull away from sides of springform pan.
  • 16. Cool on wire rack to room temperature.
  • 17. Once the cheesecake has come to room temperature, wrap tightly in plastic and refrigerate overnight which will allow it to set properly. Optional: Drizzle caramel sauce over top before serving.

1 large Red Delicious apple - peeled, cored, and diced
1 cup cold water
1 tablespoon lemon juice
2 (8 ounce) packages cream cheese, softened
¼ cup brown sugar

¼ teaspoon ground allspice
1 cup white sugar
6 tablespoons unsalted butter, sliced and softened
½ cup heavy whipping cream, room temperature

1 pastry for a 9-inch double-crust pie

Steps:

  • Mix diced apple, cold water, and lemon juice together in a small bowl; soak for 10 minutes. Drain.
  • Stir cream cheese, brown sugar, cinnamon, nutmeg, and allspice together in a bowl until smooth. Fold the diced apple into the cream cheese mixture.
  • Spoon the cream cheese mixture onto the center of a sheet of plastic wrap. Use the plastic to shape the cheese mixture into a log, wrap the plastic around the log, and refrigerate until set, about 2 hours.

Prepared pie crusts for a double crust pie (such as Pillsbury) or your favorite pie crust recipe
2 x 8 oz cream cheese, softened
1/2 cup sugar
1 teaspoon vanilla
2 eggs
6 large apples, peeled and thinly sliced (about 1/8")
2 teaspoons lemon juice
1/2 cup white sugar
2 tablespoons flour
2 teaspoons ground cinnamon
caramel sauce for serving (optional)

Steps:

  • Preheat oven to 400°F. Line a pie pan with the bottom pie crust. With mixer on high, combine cream cheese, sugar and vanilla until fluffy. Add in eggs and mix until combined. Pour cream cheese mixture into the pie crust. In large bowl, combine apples, lemon juice, sugar, flour and cinnamon. Gently place apples on top of cream cheese mixture. Top apples with second pie crust turning the crust inwards to bake. Cut a few small slits into the top of the pie. Line a pan with parchment paper and place the pie on the pan. Cover loosely with a piece of foil and bake 30 minutes. Remove foil and bake an additional 30 minutes or until the apples feel soft when a knife is inserted. Remove from the oven and cool 10 minutes. Place a large plate over the top of the pie and flip it upside down releasing the pie onto the plate. Cool 1 hour on the countertop and then refrigerate 4 hours or overnight. Serve cold with caramel sauce.

1 teaspoon vanilla
1 egg
1 1/4 cups apple pie filling with more fruit, chopped (from 21-oz can)

Steps:

  • Heat oven to 350°F. Grease 9-inch glass pie plate with shortening.
  • In large bowl, stir together cookie mix and 1 1/2 teaspoons cinnamon. Add 1/2 cup softened butter; mix with pastry blender or fork until crumbly. Press half (about 2 cups) of the crumbly mixture in bottom and up side of pie plate. Bake 10 minutes.

Steps:

1 cup chopped pecans
For the Apples:
5 tablespoons unsalted butter
½ cup light brown sugar
1 teaspoon ground cinnamon
¼ teaspoon salt
5 Granny Smith apples, peeled, cored and thinly sliced
For the Cheesecake:
8 ounces cream cheese, at room temperature
¼ cup granulated sugar
1 egg, at room temperature
1 tablespoon lemon juice
1 teaspoon vanilla extract
For the Whipped Cream:
¾ cup heavy cream
3 tablespoons powdered sugar
For the Garnish:
Salted caramel sauce
Chopped pecans

Steps:

  • 1. Preheat oven to 375 degrees F. 2. Make the Crust: Whisk together the graham cracker crumbs, sugar and cinnamon. Add the melted butter and use a fork to toss the mixture together until all of the crumbs are evenly moistened. Dump the crumbs into a 9-inch springform pan or a 10-inch pie plate and press them into an even layer over the bottom and two-thirds of the way up the sides of the pan. Bake for 6 to 8 minutes, or until golden brown. Allow to cool for 10 minutes. 3. Pour the salted caramel sauce over the bottom of the crust, gently spreading it into an even layer. Sprinkle the chopped pecans evenly over top of the caramel layer. Place the pan in the refrigerator while the apples are prepared. 4. Reduce oven temperature to 350 degrees F. 5. Make the Apples: Melt the butter in a 12-inch skillet, then add the brown sugar, cinnamon and salt, stirring to combine. Cook the mixture until it is gently bubbling, about 1 minute. Add the apples to the pan and toss to coat with the butter mixture. Cook until the apples are very tender and just about all of the liquid has been evaporated, 15 to 20 minutes, stirring occasionally. Allow to cool for 10 minutes, then add to the pan on top of the caramel-pecan layer, spreading the apples into an even layer. Return the pan to the refrigerator. 6. For the Cheesecake: Using an electric mixer, beat the cream cheese and sugar on medium speed until completely smooth. Add the egg and beat until completely combined. Add the lemon juice and vanilla extract, and beat until completely smooth, another 1 to 2 minutes. Pour the cheesecake batter over the apples in the pan, smoothing it into an even layer. Bake until the cheesecake is set and doesn't jiggle in the middle, about 30 minutes. 1 c sugar
1 Tbsp cinnamon
1/2 c butter melted
CHEESECAKE
1 c heavy cream
1 c cream cheese softened
1 tsp each lemon zest and vanilla
1/2 c powdered sugar
APPLE PIE FILLING
1 large can apple pie filling

Steps:

  • 1. Preheat oven 400 degrees. With a round cookie cutter cut 3 to 4 rounds out of each tortilla. You'll get about 24 shells. Dip each round in the melted butter then into the cinnamon sugar mixture. Turn a muffin tin upside down and place the shells in between the muffin cups. Bake for 10 minutes then let them cool on the pan. Remove and set aside. Continue until all are baked.
  • 2. In a mixing bowl beat the heavy cream, cream cheese, lemon zest, vanilla, and powdered sugar. Spoon evenly into the bottom of each shell.
  • 3. Top with the apple pie filling and chill in fridge for at least an hour.

15 pecan shortbread cookies
4 Tbsp butter, melted
3 pkg cream cheesesoftened
1/4 c light brown sugar
1/2 c sugar
2 tsp ground cinnamon

1 can(s) 21oz apple pie filling (comstock)
3 c whip cream or topping
2 Tbsp caramel sundae topping

Steps:

  • 1. Preheat Oven to 350 F. Wrap outside of 9" springfoam pan with foil. Place Cookies in food processor; process to fine crumbs. Gradually add butter, pulsing until combined. Press mixture into the bottom and up one quater of side.
  • 2. On medium speed, beat cream cheese, sugars, cinnamon and vanilla until creamy. Beat in eggs, one at a time.
  • 3. Pour 3 cups of Cheesecake Batter into crust Top with Apple Pie Filling Then pour remaining Cheesecake Batter on top.
  • 4. Bake 45 minutes or until set Turn oven off; Let Cheesecake stand in oven with door closed for 1 hour. Remove from from oven; cool completely on rack. Remove Foil and refrigerate cheesecake until ready to serve.
  • 5. Remove side of Pan. Top Cheesecake with Whip Cream Drizzle with Caramel topping.
