4 cups chopped peeled apples
2 cups sugar
2 eggs
1/2 cup canola oil
1 teaspoon almond extract
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup chopped pecans
SAUCE:
1/2 cup butter, cubed
1 cup sugar
2 tablespoons all-purpose flour
1/8 teaspoon salt
1 cup water
2 teaspoons vanilla extract
1/2 teaspoon rum extract

Steps:

  • In a large bowl, combine the apples and sugar. Let stand for 30 minutes. , Preheat oven to 350°. In a small bowl, whisk the eggs, oil and almond extract. Add to apple mixture and toss to coat. Combine the flour, baking powder, salt and cinnamon; stir into apple mixture just until moistened. Stir in pecans. , Transfer to a greased 11x7-in. baking dish. Bake 35-40 minutes or until a toothpick inserted in the center comes out clean. , For sauce, in a small saucepan, melt butter. Stir in the sugar, flour and salt until smooth. Gradually add water. Bring to a boil; cook and stir for 2 minutes. Remove from the heat; stir in extracts. Serve with warm cake.

APPLE PIE CAKE
1/4 c butter, softened
1 c sugar
1 egg
1 c all purpose flour
1 tsp salt
1 tsp cinnamon
2 Tbsp water
1 tsp vanilla
3 c peeled, diced cooking apples
1/2 c chopped pecans
BUTTER RUM SAUCE
1/2 c brown sugar, firmly packed
1/2 c sugar
1/4 c butter, softened
1/2 c whipping cream
2 Tbsp rum

Steps:

  • 1. Cream butter, gradually add sugar, beating well at medium speed.
  • 2. Add egg; beat until blended.
  • 3. Combine flour, salt, and cinnamon; mix well.
  • 4. Add to creamed mixture; beat on low speed until smooth.
  • 5. Stir in water and vanilla.
  • 6. Fold in apples and pecans, spoon into greased and floured 9x9" baking dish.
  • 7. Bake at 350 degrees for 45 minutes or until toothpick inserted in center comes out clean.
  • 8. Serve warm or cold with Butter-Rum Sauce and a dollop of whipped cream.

  • 10. Combine brown sugar, sugar, butter and whipping cream in small saucepan.
  • 11. Bring to a boil, and cook 1 minute.

1/4 cup brown sugar
2 tablespoons flour
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/8 teaspoon nutmeg
1 (9 inch) double crust pie crusts
1/4 cup nuts, chopped
2 tablespoons rum
2 tablespoons butter
1 cup sugar
2 tablespoons cornstarch
3/4 cup water
1/4 cup water, cold
1/2 teaspoon cinnamon
1/2 cup rum

Steps:

  • Preheat oven to 425°F.
  • Combine apples with brown sugar, flour, spices and salt.
  • Place in a 9-inch pastry lined pie plate.
  • Flute edges of crust.
  • Sprinkle apples with nuts and rum; dot with butter.
  • Roll out remaining pastry.
  • Cut into 3/4-inch strips.
  • Arrange strips in a lattice pattern, atop of pie.
  • Bake for 50 to 60 minutes or until apples are tender.

1 cup powdered sugar
1/2 teaspoon rum flavor
3 to 4 teaspoons half-and-half or milk

Steps:

  • Heat oven to 350°F. Grease bottom and sides of 8-inch square pan with shortening or cooking spray.
