An old fashioned recipe my mother has made since 1954. You add a cooked syrup over the apples, and top with a flour combination topping. It is a different type of apple cobbler you will really enjoy. You can serve plain or top with milk or ice cream.

4 cups peeled and sliced apples
1 cup brown sugar
¼ cup all-purpose flour
2 tablespoons vinegar
1 cup water
1 teaspoon vanilla extract
1 tablespoon butter
1 cup all-purpose flour
2 teaspoons baking powder
2 ½ tablespoons shortening
¾ cup milk

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9-inch square baking dish. Layer the sliced apples evenly into the baking dish.
  • Mix together brown sugar and 1/4 cup flour in a saucepan, and stir in vinegar and water until the mixture is well blended and the sugar has dissolved. Bring to a simmer over low heat, and stir constantly until the mixture has thickened, about 3 minutes. Remove from heat, let cool for about 10 minutes, and stir in the vanilla extract and butter. Pour the mixture over the apple slices in the pan.
  • Mix together 1 cup flour and the baking powder in a bowl until there are no more lumps, and cut the shortening into the flour mixture until the mixture forms crumbs the size of peas. Stir in the milk, and spread the batter over the apples and syrup.
  • Bake in the preheated oven until the topping is golden brown and the apples are tender, about 35 minutes.

1/4 cup margarine, melted
1 cup sugar
1 large egg
1 cup flour
1 pinch salt
1/4 teaspoon baking soda
1 teaspoon cinnamon
2 cups apples, finely cut
1 cup raisins

Steps:

  • Grease a 9" square pan. Mix all ingredients, except apples and raisins, in a medium size bowl. Add apples and raisin and gently mix until well blended.
  • Bake at 350 degrees for 25 to 30 minutes or until a toothpick inserted into center comes out clean. Cool.

FRUITY BOTTOM LAYER:
6 large apples (any kind you like), peeled, sliced thin
2/3 c molasses
1/4 c butter
1/4 c water
CRUSTY BISCUIT TOP:
2 c bisquick
1/2 c sugar
1 tsp cinnamon
1/2 tsp nutmeg
2 eggs yolks
1/4 c milk
2 egg whites, beaten til stiff
OPTIONAL:
1 pt cold heavy cream (for serving)

Steps:

  • 1. FRUITY BOTTOM LAYER: Bring to boil in a large pan the apples, molasses, butter and water -- then reduce the heat to medium and cook for 1 minute
  • 2. Then pour the apple mixture into a 9x13 pan and spread out evenly with a wooden spoon.
  • 3. CRUSTY BISCUIT TOP: Combine the Bisquick, sugar, cinnamon, and nutmeg in a large mixing bowl with a fork, then make a well for the wet ingredients
  • 4. In a separate bowl combine the 2 egg yolks and milk till incorporated, then add to the dry ingredients by pouring into the well -- stir to incorporate -- do not overmix
  • 5. Beat the egg whites until stiff and fold into the biscuit mix -- do not overmix.
  • 6. Drop the biscuits by small spoonfuls onto the apples in the pan till all the dough is used. Don't make them too tall in the pan... flatten with a fork if necessary so they are all about the same height (this prevents burning the tips).
  • 7. Bake 375 F, 20-25 minutes or til golden brown
  • 8. To dowdy: break up the biscuits with a fork or knife, to get some of the golden brown baked parts of the biscuits covered with the syrup and apples, but leave some dry.
  • 9. SERVING SUGGESTION: Pour a little cold cream over the warm dessert in each serving bowl, if you like. (optional)

About 5 pounds cooking apples (see cook's notes)
2 to 3 tablespoons fresh lemon juice
½ to ¾ teaspoon shredded lemon or orange zest
2½ teaspoons apple pie spice blend (see cook's notes)
Pinch or two ground cloves
¼ teaspoon freshly ground black pepper
½ cup packed light brown sugar
⅓ cup pure maple syrup
⅓ cup orange juice
Optional: ¾ cup dried currants

Steps:

  • Use comb of Granny Smith, Golden Delicious and Rome varieties. instead of using the apple spice blend, use a mixture of ground cinnamon, allspice and ginger to equal 2½ teaspoons. Can include nutmeg. Can use prepared pie dough Preliminaries: Heat oven to 375 degrees shortly before you prepare the filling. Use some of the butter to generously coat a wide, fairly shallow 3½ 2- to 4-quart baking dish or casserole. Prepare the pastry squares: Unwrap dough and place on a work surface dusted with flour. Using a rolling pin coated with flour, roll out the dough to about ¼-inch thickness. With the tip of a sharp knife, cut 12 to 20 random squares and rectangles of dough. Transfer pieces to a cookie sheet lined with plastic wrap or baking parchment, and return sheet to the refrigerator. Prepare the filling: Pour the lemon juice and orange or lemon zest into a large mixing bowl. Peel, core and cut apples into slices about ½-inch thick, dropping them into the mixing bowl and occasionally flipping the apples to coat with juice. When apples all are cut, sprinkle mixture with spices, salt, brown sugar, maple syrup, orange juice, optional currants -- then toss to combine thoroughly. • Pour apple mixture into the prepared baking dish. Dot with remaining butter. • Remove pastry squares from the refrigerator. Arrange randomly over the apples, overlapping somewhat to produce a casual patchwork, not a uniformly sealed topping. • Brush pastry with egg-water mixture. Sprinkle generously with cinnamon sugar. • Transfer pan to preheated oven. Bake for about 30 minutes, until pastry begins turning a light golden brown. • Remove pan from oven. Using the back of a large kitchen spoon, gently press down pastry to push it down into the apples so that some of the juices flow over the pastry • Return pan to oven and continue baking 15 to 25 minutes, until pan dowdy is bubbling and pastry reaches a rich, golden brown. Let stand 20 to 40 minutes.

Crust:
1 cup all purpose Flour
1 tbsp sugar
1/4 tsp salt
6 tbsp butter chilled
2 tbsp shortening chilled
Filling:
1/2 Cup Apple Cider
1/3 Cup Maple Syrup
2 tbsp fresh lemon juice
2 tsp cornstarch
2 lbs Apples, combine tart and sweet, peeled
2 tbsp butter Egg whites and sugar for wash

Steps:

  • In food processor pulse flour, sugar, salt. Then add butter and shortening. Pulse together to form cornmeal like crumbs. Remove and put in bowl, add 2 - 4 tbsp water, and form into dough. Put into plastic wrap, and put in fridge for at least one hour. Filling: Melt 2 tbsp butter, high heat. Add apples and saute until brown and not too soft, approximately 5 minutes. Turn heat off. Whisk cider, maple syrup, 2 tbsp fresh lemon juice, 2 tsp cornstarch in separate bowl. Whisk the sauce, and pour over apples. Roll out dough with flour. Rotate and spin, roll into 11" piece to fit inside skillet. Roll over rolling pin, loosely drape, then unroll on top of skillet. Brush with egg whites wash, then sprinkle sugar on top. Cut dough into 6 pieces. Bake in a 500 oven for 20-25 minutes. Let sit 15 minutes before serving.

1 Tbsp egg beaten
1 1/2 c corn flour
1/2 c butter
1/2 c sugar
1/2 tsp salt
2 tsp gluten free baking powder

  • 1. Melt butter, add egg ,and milk.
