Make these protein-packed overnight oats the night before, place them in the fridge, then enjoy in the morning!

3 Cups Rolled oats
1 Tsp Baking powder
1 Cup Almond milk or skim milk
2 Eggs
1 Scoop Whey Protein (vanilla flavor)
1/2 Cup Maple syrup
Cooking Spray
1 Cup Fresh fruit such as berries, kiwi, bananas, etc.
Additional maple syrup for serving

Steps:

  • Preheat the oven to 350 degrees. Coat a 12 cup muffin tin with cooking spray.
  • In a large bowl, mix together the oats, baking powder, and protein powder.
  • Add the milk, eggs and maple syrup and still until combined.
  • Divide the oat mixture evenly among the cups of the muffin tin.
  • Bake for 20-25 minutes until the tops of the muffins are golden brown.
  • Cool in the pan for 5 minutes, then use a thin knife or spatula to remove the muffins from the pan
  • Top with fruit and serve, with additional maple syrup if desired.

BATTER
1 c steele cut oats
2 scoop(s) vanilla whey-to-go protein powder
1/2 c light agave nectar
2 Tbsp cinnamon
1/4 c egg whites
2 eggs
CANDIED APPLES
1 Tbsp earth balance (butter)
1 granny smith apples
2 Tbsp palm sugar

Steps:

  • 1. Preheat oven to 325 degrees. Prep and cook 1 cup of steel cut oats using directions on label. Chop 1 to 2 Apples of your choice into small slices, add Earth Balance (or butter), and Palm Sugar (or sugar of your choice) and Cinnamon, then cook on medium heat until semi soft.
  • 2. Mix all ingredients for the batter directly into the cooked steele cut oats.
  • 3. Fill the muffin pan with batter. Side note: Don't make the same mistake I did; use cup cake liners. ;)
  • 4. Bake for about 40 minutes and serve, let cool for about 10, and serve.

¼ cup quick-cooking oats
1 tablespoon brown sugar
1 tablespoon melted butter
¼ teaspoon ground cinnamon
1 ½ cups quick-cooking oats
1 ¼ cups all-purpose flour
2 tablespoons all-purpose flour
½ cup brown sugar
1 ½ teaspoons ground cinnamon
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup unsweetened applesauce
½ cup milk
¼ cup vegetable oil
1 egg, lightly beaten
1 teaspoon vanilla extract
1 apple - peeled, cored, and chopped

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 12-cup muffin pan or line with paper liners.
  • Stir 1/4 cup oats, 1 tablespoon brown sugar, melted butter, and 1/4 teaspoon cinnamon together in a small bowl; set aside.
  • Whisk together 1 1/2 cups oats, flour, 1/2 cup brown sugar, 1 1/2 teaspoons cinnamon, baking powder, baking soda, and salt together in a large bowl.
  • Stir applesauce, milk, oil, egg, and vanilla extract together in a bowl. Stir applesauce mixture into flour mixture just until all ingredients are moistened; stir in apple. Spoon apple mixture into prepared muffin cups about 2/3 full; sprinkle oat topping mixture evenly over each muffin.
  • Bake in the preheated oven until a toothpick inserted near the center comes out clean, about 15 minutes.
