Apple Cinnamon Oatmeal is a hot breakfast that smells like apple pie and tastes as if fall has arrived.

2 cups rolled oats
3 3/4 cups water
3 small sweet apples or 2 cups apple pieces (diced small)
1/2 teaspoon kosher salt
1/2 teaspoon cinnamon
dash of nutmeg
1/4 cup (plus 1-2 tablespoons brown sugar, adjust to taste)
Butter (a teaspoon or so for on top of each serving)
Optional: chopped pecans (just a sprinkling for serving each bowl)

Steps:

  • Combine the oats, water, apples, cinnamon and nutmeg in a medium size saucepan. Bring to a boil over medium high heat, stirring occasionally.
  • As soon as it boils, reduce heat to low and simmer for just a few minutes, until the oats are soft and the apples are tender. Remove from the heat and add brown sugar to taste.
  • The sweeter the apples, the less brown sugar you will need. Scoop into serving bowls and top with butter and pecans if desired. Enjoy!

This is a delicious way to start the day. This is a low GI recipe so great for those trying to eat healthy or for diabetics. I love to use braeburn apples but you can use any baking apple you like.

2 cups nonfat milk
3 tablespoons brown sugar
1 tablespoon reduced fat margarine or 1 tablespoon light butter
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
1 medium baking apple (peeled, cored, and diced)
1 cup rolled oats (not quick oats)
1 teaspoon vanilla extract
1/4 teaspoon ground nutmeg
1 tablespoon cream (optional)

Steps:

  • Preheat oven to 350. Lightly coat a 1 quart baking dish with oil spray.
  • Combine the milk, sugar, margarine or butter, cinnamon, and salt in a 2 quart saucepan. Cook, stirring constantly, over high heat for 4 minutes to scald the milk.
  • Add the apple and the oats. Continue cooking on high for 1 minuted. Remove from heat and stir in the vanilla.
  • Pour the mixture into the prepared baking dish. Bake for 15 minutes.
  • Remove from the oven, stir thoroughly. Sprinkle the top with nutmeg. Return to the oven and bake for 15 more minutes.
  • Serve warm with cream, if desired.

This is my favourite apple dessert. This recipe came from my mother and we had this many times growing up. Use enough apples to generously cover the bottom of the dish. So Yummy!

4 -5 apples (enough to generously cover the bottom of the dish)
1/4 cup shortening
1/2 cup sugar
1 egg, beaten
1/2 cup milk
1 cup flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon vanilla
1 cup brown sugar
1 tablespoon butter
1 tablespoon flour
1/2 teaspoon vanilla
1 1/2 cups water

Steps:

  • Slice peeled apples into a greased 8x8 baking dish; sprinkle with cinnamon.
  • Cream shortening, sugar and egg together; then add milk alternately with dry ingredients.
  • Add vanilla.
  • Spread over apples.
  • Combine all sauce ingredients and boil for 5 minutes.
  • Pour over batter and bake 35- 45 minutes at 350.

8 slices cinnamon-raisin bread, cubed
2 medium tart apples, peeled and sliced
1 cup chopped pecans, toasted
1 cup sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
3 large eggs, lightly beaten
2 cups half-and-half cream
1/4 cup apple juice
1/4 cup butter, melted
Vanilla ice cream

Steps:

  • Place bread cubes, apples and pecans in a greased 3-qt. slow cooker. In a bowl, combine the sugar, cinnamon and nutmeg. Add the eggs, cream, apple juice and butter; mix well. Pour over bread mixture. Cover and cook on low for 3-4 hours or until a knife inserted in the center comes out clean. Serve with ice cream.
