I love potatoes...especially mashed. When I came up with this combination, it was declared a winner. I serve this as a side dish when I have pork as an entree, but it's great with any meat. -Rebecca Page, Pensacola, Florida

4 medium potatoes, peeled and cubed
2 medium tart apples, peeled and quartered
1/2 teaspoon salt
4 bacon strips, diced
1 small onion, quartered and thinly sliced
1/4 cup butter, softened
1 teaspoon cider vinegar
1/2 teaspoon sugar
Dash ground nutmeg

Steps:

  • Place the potatoes, apples and salt in a large saucepan; add enough water to cover. Bring to a boil; cover and cook for 12 minutes or until tender., Meanwhile, in a small skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 1 teaspoon drippings. In the drippings, saute onion until tender., Drain the potatoes and apples. Add the butter, vinegar and sugar; mash until smooth. Top with bacon, onion and nutmeg.

All-Day Roast Pork, Spicy Apple Chutney, Mashed Citrus Sweet Potatoes, Sauteed Chard image

1 (5-pound) bone-in pork shoulder
Sea salt and freshly ground black pepper
2 teaspoons fennel seeds
2 tablespoons chopped fresh thyme
2 medium onions, sliced
1 head garlic, cloves peeled and sliced
2 medium carrots, sliced
2 ribs celery, sliced
5 to 6 fresh bay leaves
2 cups chicken stock
1 cup white wine
1 tablespoon extra-virgin olive oil
2 medium onions, chopped
2 Fresno chile peppers, seeded and finely chopped
1 (1-inch) piece fresh ginger, grated or minced
6 medium Braeburn or Gala apples, peeled and chopped
2 tablespoons dark brown sugar
1 tablespoon chopped fresh thyme
1/4 cup dark amber maple syrup
1/4 cup cider vinegar
1 tablespoon fresh lemon juice
Kosher salt
Freshly grated nutmeg
4 large sweet potatoes, peeled and sliced
1 tablespoon orange zest
1 cup chicken stock
Juice of 1 lemon
Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 very large bunch red chard, stemmed and shredded
Kosher salt and freshly ground black pepper
Freshly grated nutmeg

Steps:

  • From 6 hour pork, cook your way through the day with slow-cooked, braised, and simmered comfort foods.
  • Preheat the oven to 450 degrees F.
  • Score the top of the roast in a crosshatch pattern about 3/4-inch apart. Rub the salt, pepper, fennel, and thyme into the pork skin and set the pork into a roasting pan. Roast about 30 minutes, or until crispy on top. Cover the pork tightly with foil and reduce oven to 325 degrees F, and roast about 4 hours.
  • Remove the pork from the oven and set onto a cutting board. Spoon off most of the fat from the drippings and add the onions, garlic, carrots, celery, bay leaves, salt, and pepper to the pan, and stir to combine. Set the roast on top of the vegetables and cover again with foil, roasting for 1 to 1 1/2 hours more.
  • Meanwhile, start on the spicy apple chutney and side dishes.
  • For the spicy apple chutney: Heat 1 tablespoon extra-virgin olive oil in a saucepot over medium to medium-high heat. Add the onions, chiles, and ginger to the pan and cook to soften, 10 to 12 minutes. Add the apples, dark brown sugar, thyme, maple syrup, cider vinegar, lemon juice, a little salt, and nutmeg. Cover and cook, stirring occasionally, for 15 to 20 minutes, until a thick sauce forms. Adjust the seasoning and transfer to a serving dish.
  • For the sweet potatoes: Cover the sweet potatoes with water in a pot over medium-high heat, bring to a boil, and cook until tender. Drain and return to the hot pot. Mash the sweet potatoes with orange zest, chicken stock, lemon juice, salt, and pepper. Keep warm until ready to serve.
  • For the chard: Heat 2 tablespoons extra-virgin olive oil in a large skillet over medium heat, season with salt, pepper, and nutmeg, and saute until just tender, about 5 minutes. Keep warm until ready to serve.
  • Remove the pork roast to a carving board and cover with the roasting foil to tent. Skim the fat again, and then place the roasting pan over medium-high heat on the stovetop. Deglaze the pan with stock, and wine, and stir for a few minutes with a wooden spoon to scrape up all drippings. Strain the sauce and pour it into a serving bowl or gravy boat. Serve the pork with the spicy apple chutney, mashed citrus sweet potatoes and sauteed chard.

1 lb turnips, peeled, cut into 1-inch pieces
1 lb Yukon Gold potatoes, peeled, cut into 1-inch pieces
3 slices bacon, cut into 1/4-inch pieces
2 medium Golden Delicious apples, peeled, chopped
2 teaspoons roasted garlic (from 10-oz jar)
1 teaspoon chopped fresh thyme leaves
3/4 cup buttermilk
2 tablespoons butter, melted
Salt and pepper to taste

Steps:

  • In 5-quart Dutch oven, place turnips and potatoes; add enough water to cover. Heat to boiling; boil uncovered 15 to 20 minutes or until tender. Drain.
  • Meanwhile, in 10-inch nonstick skillet, cook bacon over medium-high heat 5 to 6 minutes or until crisp. Drain on paper towels; reserve 2 tablespoons drippings in skillet. Crumble bacon; set aside. In reserved drippings, cook apples over medium-high heat 6 minutes, stirring frequently, until tender and lightly browned.
  • In large bowl, mash turnips, potatoes, apples, garlic and thyme with potato masher until blended (mixture will be chunky). Stir in buttermilk and melted butter. Season with salt and pepper. Sprinkle with bacon.

2 apples, peeled, cored, minced (McIntosh, Empire or Spartan)
3 shallots, finely chopped
1/3 cup butter
1/2 cup 15% cream
1/4 teaspoon ground nutmeg
salt and pepper

Steps:

  • In a saucepan, cook potatoes in salted boiling water until tender, about 15 minutes.
  • Drain.
  • Meanwhile, cook apples and shallot in 2 tablespoon of butter until very tender.
  • Put cooked apples in the saucepan with the drained potatoes.
  • With a potato masher, roughly mash the mixture with the remaining butter.
  • Then, with an electric mixer, reduce the mixture in a puree with the cream and nutmeg.
  • Add salt and pepper.
  • Serve now.

1/4 cup grated raw onion
1 teaspoon caraway seeds

3 1/2 pounds baby Yukon gold potatoes, halved
Kosher salt
8 to 10 garlic cloves
Freshly cracked black pepper
1 tablespoon olive oil
1 1/2 cups half-and-half
3 tablespoons butter
2 Granny Smith apples, cored and diced

Steps:

  • Preheat oven to 350 degrees F.
  • Put the potatoes in a large pot and cover by 1-inch with cold water. Bring the water to a boil over high heat, add salt, to taste, and cook until the potatoes are tender, about 20 minutes.
  • Meanwhile, create a boat shape out of aluminum foil and add the garlic cloves. Season with salt and pepper, to taste, and drizzle with oil. Seal the foil and roast until the garlic is nicely caramelized, about 30 minutes. Heat the half-and-half in a small saucepan over low heat until hot.
  • Drain the potatoes and put them back into the pot. The heat from the pot will continue to dry out the potatoes. Add the half-and-half, butter and roasted garlic and mash. Fold in the apples and season, to taste, with salt and pepper. Transfer to a serving bowl and serve.
