We would just look at her and laugh...."YOUR APPLE JACKS MRS. NANNIE!" She would wink at us and say, "Oh, I co do that!" Mrs. Nannie died several years...

1 (10-count) pillsbury grand biscuits
2 cans apple pie filling
oil for frying

Steps:

  • 1. Flatten each biscuit into circles with rolling pin.
  • 2. Place pie filling in center of each biscuit.
  • 3. Fold biscuits over and press edges together with fork.
  • 4. Fry in hot oil until a light golden brown.

1 cup light brown sugar
1 egg
1/2 teaspoon baking soda
1 teaspoon nutmeg
1/2 cup shortening
1 1/3 cups sifted flour
1/2 teaspoon salt
1 cup chopped unpeeled apple

Steps:

  • Cream together sugar and the shortening. Beat in the egg. Sift together the dry ingredients and add, beating until well blended. Stir in the apples. Drop in the shape of balls on greased cookie sheet and bake at 375 degrees for 12 - 15 minutes.

Another recipe filed away in my apple folder.. It must be over 1 inch thick! The folder I mean.. not the Apple Jacks! LOL What does it matter. It is a delicious recipe I want to share with you. My friends love them, and always ask for the recipe. WARNING! They go fast, you might want to double the recipe..

1/2 21 oz. can apple pie filling
18-20 wonton wrappers
1/2 c confectioners' sugar
water and oil

Steps:

  • 1. Cut pie filling apples into smaller pieces. Place 1 Tablespoon of filling in to the center of each wrapper. Moisten edges of wrappers with water. Fold diagonally. Press edges with a fork to seal. Heat oil to 35o degrees..fry until golden on both sides. Drain on paper towels. Sift conf. sugar on tops when cool. Makes 18-20
  • 2. Be sure they are sealed tight, so the filling does not leak out when cooking. I like to add cinnamon to the apples, before filling. TIP: For cleanup, I find it is easier to put down folded newspapers under the paper towels. .

1 cup all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup margarine or butter, softened
1/2 cup creamy peanut butter
1/2 cup granulated sugar
1/2 cup firmly packed brown sugar
2 eggs
2 cups Apple Jacks® sweetened multi-grain cereal

Steps:

  • 1. In medium mixing bowl, stir together flour, baking soda and salt. Set aside.2. In large mixer bowl, beat together margarine, peanut butter and sugars until light and fluffy. Add eggs beat well. Add flour mixture mix until thoroughly combined. Stir in KELLOGG'S APPLE JACKS® cereal. Drop by level measuring-tablespoon onto ungreased baking sheets.3. Bake at 350°F about 15 minutes or until golden brown. Cool slightly before removing from baking sheets.
