- Preheat oven to 350°F.
- Combine apple jelly, chives, horseradish, vinegar,and 1/4 tsp salt, stirring well with whisk.
- Sprinkle salmon with 1/4 tsp salt and pepper.
- Heat oil in large nonstick skillet over medium heat.
- Add salmon, and cook 3 minutes. Turn salmon over; brush with half of apple mixture.
- Pour salmon and juices into baking dish; bake at 350°F for 7 minutes and turn fillets over and brush with mixture again. Bake 7 more minutes.

- Steam broccoli in a colander over simmering water or in the microwave until tender-crisp. Set aside.
- Meanwhile, in a medium bowl, whisk together apple, yogurt, mayonnaise, mustard, and horseradish. Arrange salmon on a serving platter. - Preheat the oven to 300 degrees F. Fit a baking sheet with a wire rack.
- In a medium saute pan, heat the butter and canola oil over medium heat. Season the salmon with salt and pepper on both sides and cook on one side until light golden brown, 2 to 3 minutes. Flip the fillets, then add the apple cider and shallots and raise the heat to medium high to bring the liquid to a simmer. Cook the fish another 2 minutes, then gently remove the fillets to the rack and transfer to the oven. Bake 8 to 10 minutes for medium rare.
- Meanwhile, continue simmering the pan sauce over medium-low heat, whisking often, until slightly reduced, about 2 minutes. Whisk in the honey and mustard and continue to simmer until slightly reduced, 2 to 4 minutes more. Whisk in the creme fraiche and simmer, whisking often, until the sauce is thick and glossy and coats the back of a spoon, 3 to 5 minutes more. Taste and adjust the seasoning, adding apple cider vinegar as desired.
- Transfer the salmon to serving plates and spoon the sauce over the fish. Garnish with the tarragon, mint, chives and jalapeños.

- Heat oven to 400°. Mix apples and onion in ungreased rectangular baking dish, 11x7x1 1/2 inches. Place fish, skin side down, on apple mixture. Mix mustard, honey and garlic salt. Spoon onto fish; spread evenly.

GLAZED SALMON

- Combine brown sugar, apple cider vinegar, olive oil, Dijon mustard, and pepper in a bowl for the marinade.
- Place salmon fillets into a shallow glass dish and pour 1/2 of the marinade over the fish. Reserve remaining marinade. Cover and refrigerate for 1 hour.
- Preheat an outdoor grill for medium heat and lightly oil the grate. Discard marinade from the glass dish.
- Grill salmon, brushing with reserved marinade several times, until it flakes easily with a fork, 4 to 6 minutes.

- Preheat oven to 350 degrees.
- Rinse fish, pat dry and place in a deep glass baking dish coated in cooking spray. Season fish with kosher sea salt and freshly ground pepper.
- In a small bowl, combine apple jelly, vinegar, horseradish, apple juice and chives. Mix well, however there may be lumps and it will be a little milky. This is normal.
- Baste over salmon filet, reserving anything leftover, you'll baste it again.
- Bake uncovered, for 10 minutes. Remove, baste again and turn oven to high broil. Broil for 1-2 minutes until edges brown slightly.
- Remove and allow to sit for 5 minutes before serving. Garnish with additional chives and/or chopped parsley.

- Check that all bones have been removed from filets. In a small bowl, cream together butter and horseradish with a spoon. Stir in breadcrumbs and combine well. - Heat oven to 200C/fan 180C/gas 6. Whizz the bread into crumbs in a food processor. Add the horseradish and thyme, then season and mix well.
- Put the salmon in one layer in a lightly oiled baking dish. Press the crumbs on to the flesh, then bake for 10-12 mins.
- Meanwhile, put the cabbage in a large pan with a little salt and pour in boiling water to come halfway up. Cover and cook for 8-10 mins until tender. - Heat greased grill to medium heat.
- Mix first 4 ingredients until blended.
- Skewer potatoes. Brush potatoes and fish with oil. Grill potatoes and fish, flesh-side down, 10 min., turning after 5 min. Brush flesh side of fish with horseradish mixture; grill 10 min. or until fish flakes easily with fork, turning potatoes occasionally.
