Served at the 1870 Wedgwood Inn in New Hope Boro, Pennsylvania, this simple chicken salad combines common ingredients in a less-than-common way, and with great results. If you happen to have some cooked chicken in your fridge (or perhaps a rotisserie chicken), you could probably save time by simply shredding that and using it instead of the freshly cooked diced chicken. NOTE: Cook time is chill time for the prepared salad.

1 tablespoon olive oil
2 cups chicken breasts, diced
2 cups apples, diced (red or green)
1/2 cup walnuts, chopped
1/2 cup celery, chopped
1/2 cup mayonnaise
4 tablespoons honey
3 tablespoons Dijon mustard
1 dash rosemary

Steps:

  • Heat olive oil in a skillet; add the diced chicken and cook thoroughly; cool.
  • In a big bowl, combine cooled chicken, apples, walnuts, and celery.
  • In a small bowl, combine the mayonnaise, honey, mustard, and rosemary. Fold the mayonnaise mixture into the chicken mixture.
  • Chill.
  • Serve over a red lettuce leaf.

1/4 cup honey mustard
2 tablespoons apple jelly
1 tablespoon water
1 tablespoon olive oil
2 medium apples, sliced
1 package (12 ounces) fully cooked apple chicken sausage links or flavor of your choice, sliced
Hot cooked rice

Steps:

  • In a small bowl, whisk honey mustard, jelly and water until blended. In a large skillet, heat oil over medium heat. Add apples; cook and stir 2-3 minutes or until tender. Remove from pan., Add sausage to skillet; cook and stir 2-4 minutes or until browned. Return apples to skillet. Add mustard mixture; cook and stir 1-2 minutes or until thickened. Serve with rice.

1 (12-oz.) jar apple jelly
1 teaspoon ginger
1/2 teaspoon garlic powder
2 tablespoons soy sauce
2 tablespoons honey mustard
4 boneless skinless chicken breast halves

Steps:

  • Heat grill. In small saucepan, combine all glaze ingredients; mix well. Bring to a boil over medium heat. Boil 1 minute, stirring constantly.
  • When ready to grill, lightly brush glaze on one side of each chicken breast half. Place chicken, glaze side down, on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Lightly brush glaze over chicken; cook 5 to 8 minutes.
  • Turn chicken; cook an additional 5 to 8 minutes or until fork-tender and juices run clear. Bring any remaining glaze to a boil; serve with chicken.

Honey Mustard Chicken Breasts with Apple Slices image

Our family loves honey mustard, and it is a natural with chicken breasts since they are mild and absorb the flavor so well. Just make sure they are skinless and can absorb the sauce (plus they are so much healthier that way!) This is a favorite fall and winter dish for us, or when we have guests!

3-4 large boneless, skinless chicken breasts
1 large apple, cored and thinly sliced
3 Tbsp honey
3 Tbsp mustard
1/4 c minced green onion
1 1/2-2 c chicken broth (reserved from chicken breasts)
2-3 tsp cornstartch
salt and pepper to taste

Steps:

  • 1. Begin by rinsing chicken breasts and slicing them into halves (this results in 6-8 servings).
  • 2. Then, in large saucepan, boil chicken breasts until meat is no longer pink.
  • 3. While chicken is cooking, mince green onion and set aside, reserving 2 teaspoons for garnish.
  • 4. Next, mix honey and mustard thoroughly in a mixing bowl and stir in green onion.
  • 5. When chicken is cooked thoroughly, extract 1 1/2-2 cups broth from saucepan and mix with honey mustard mixture in bowl to prepare a sauce. Stir in 2 teaspoons of cornstarch until absorbed completely sauce is smooth; cook mixture in a small saucepan over low heat until thickened. Slowly add additional teaspoon of cornstarch only if needed.
  • 6. Then, pour a small amount of sauce over bottom of prepared glass baking dish (11" X 7" or 9" square)to coat. Arrange split chicken breasts over this sauce in dish. Add remainder of honey mustard sauce, covering the chicken.
  • 7. Thinly slice apple into 12-16 slices. Arrange slices between chicken breasts, also coating with sauce. Sprinkle reserved minced green onion over top as garnish.
  • 8. Bake in preheated 350 degree oven for approximately 30 minutes. Sauce will thicken more during baking.
  • 9. Allow to sit about 5 minutes before serving.
  • 10. Serve chicken warm. A small ladle can be used for apples and sauce. Remaining servings refrigerate well for 1-2 days.
