Here's a deliciously different appetizer for a holiday party. I top a prebaked pizza crust with caramelized onions, two kinds of cheese, orange chunks, dates and seasoning.-Mary Tamaki, Calgary, Alberta

Yield 1 flatbread (8 slices).

Number Of Ingredients 9

2 teaspoons olive oil
1 medium red onion, thinly sliced
1/8 teaspoon salt
1 prebaked 12-inch thin pizza crust
1 cup shredded part-skim mozzarella cheese
1/4 teaspoon Italian seasoning
1 large navel orange, peeled, sectioned and cut into 1/2-inch pieces
1/2 cup pitted dates, chopped
1/4 cup crumbled feta cheese

Steps:

  • Preheat broiler. In a large skillet, heat oil over medium heat. Add onion and salt; cook and stir 6-8 minutes or until onion is softened. Reduce heat to medium-low; cook 20-25 minutes or until deep golden brown, stirring occasionally., Place crust on an ungreased baking sheet; sprinkle with mozzarella cheese. Broil 3-4 in. from heat 1-2 minutes or until cheese is melted., Top with Italian seasoning, onion, orange and dates. Sprinkle with feta cheese. Broil 2-3 minutes longer or until heated through.

This impressive flatbread couldn't come together more simply. Prepared pizza dough is stretched and topped with thinly sliced onions and shredded cheese. Bake until browned in a hot oven and that's it! Top with herbs and flaky salt and you have a delicious side dish perfect with any meal or on its own.

Steps:

  • Press 12 ounces pizza dough into an 8-by-12-inch rectangle on a floured parchment-lined inverted baking sheet. Rub with 2 tablespoons olive oil, then top with 1/2 cup shredded cheddar and 1/2 thinly sliced red onion. Slide the parchment onto a preheated pizza stone or baking sheet in a 475˚ F oven; bake until browned, 9 to 11 minutes. Top with sea salt and chopped parsley.

Quick and easy little pizzas for lunch or a light dinner. I love caramelized onions, so this is one of my favorite pizzas to make at home.

1 large red onion, thinly sliced
2 garlic cloves, minced
2 tablespoons olive oil
4 pita bread rounds, whole wheat
1 large tomatoes, quartered and sliced or 1 cup cherry tomatoes, halved lengthwise
3/4 cup mozzarella cheese, shredded
1/4 cup parmesan cheese, grated
1/4 cup fresh basil leaf, shredded

Steps:

  • In a medium saucepan cook the onions and garlic in hot olive oil over medium heat.
  • Cook, covered for 10-15 min or until the onion is very tender, stirring occasionally.
  • Set the onions aside.
  • Heat grill to medium heat.
  • Toast one side of each bread round directly over the heat for 1-2 minute.
  • Remove from the grill.
  • Top the toasted side of each bread round with the onion mixture, sliced tomatoes, mozzarella cheese, and Romano cheese.
  • Return bread rounds to the grill, over indirect heat.
  • Cover the girll and cook for 5-10 min or until the cheese is melted and toppings are heated through.
  • Remove from the grill and top with basil before serving.

Here is a recipe for pizza that calls to mind - at least this mind - the joys of car travel through southeastern France, where pizzas such as this are available at all the imaginary cafes in small towns near the Italian border. It certainly tastes as if it comes from that region and, if you close your eyes as you eat it, you can almost imagine yourself halfway through a drive from Aix to Turin. The time spent caramelizing the onions is more than worth it, so do it the day before you intend to make the pie. Which is when, as it happens, you should make the dough as well. And we have a recipe for that as well - a version adapted from the team behind the magical Roberta's Pizza in Brooklyn.

2 tablespoons butter
1 large Spanish onion
2 teaspoons fresh thyme leaves
2 bay leaves
Kosher salt
4 thick slices bacon, cut into 1/4-inch thick batons
1 ball pizza dough
Flour, for dusting surface
12 dried mission figs, stems trimmed, cut into quarters or small pieces
3/4 cup crumbled Gorgonzola
Extra-virgin olive oil, to drizzle
Freshly cracked black pepper

Steps:

  • At least 45 minutes before cooking, preheat the oven and pizza stone to 550 degrees.
  • Melt the butter in a large sauté pan over high heat. Add the onions, thyme and bay leaves. Cook for 5 minutes, stirring often, until the onions begin to wilt. Reduce the heat to medium-low and cook, stirring occasionally, until the onions have softened and turn a deep, golden brown, about 25 minutes. Season to taste with salt and pepper. Remove the bay leaves and transfer the onions to a small bowl.
  • Place the bacon in the pan and set over high heat. Cook, stirring occasionally, until brown and crispy. Using a slotted spoon, transfer the bacon to a small bowl.
  • Place the pizza dough on a heavily floured surface and stretch and pull, using your hands or a rolling pin, into about a 14-inch round. Place on a lightly floured pizza peel or rimless baking sheet. Cover with the toppings, careful not to press on the dough and weigh it down: the caramelized onions first, then the figs and bacon, and finally the Gorgonzola, leaving roughly a 1/2 inch border. Shake the pizza peel slightly to make sure the dough is not sticking. Carefully slide the pizza directly onto the baking stone in one quick, forward-and-back motion. Cook until the crust has browned on the bottom and the top is bubbling and browning in spots, about 7 minutes. Drizzle with a little olive oil and some cracked black pepper. Serve hot. Makes 1 pizza.

Number Of Ingredients 7

6 tablespoons extra-virgin olive oil
4 Granny Smith apples, peeled, cored and cut into 6 wedges
2 stems fresh thyme
2 bay leaves
2 tablespoons butter
3 large white onions, peeled and sliced
Kosher salt and freshly ground black pepper to taste

Steps:

  • Heat half the olive oil in a large nonstick skillet over medium-high heat and add the apples and then one stem of thyme and one bay leaf. Cook, stirring occasionally, until the apples are golden brown but not mushy, 5 to 10 minutes. Remove from heat and throw away the thyme and bay leaf.
  • In another skillet over medium-high heat, add the remaining olive oil, the butter and the onions, then the remaining thyme and bay leaf. Season with salt and pepper. Reduce heat to medium low and cook, stirring frequently, until the onions are soft and golden brown, 20 to 30 minutes. Remove from heat and throw away the thyme and bay leaf.
  • To serve, warm the apples and onions over medium-high heat and spoon them around the pork chops on a warmed platter.
