4 medium apples (peeled, cored, sliced)
1 1/4 cups sugar (sucanat, rapadura, or maple syrup)
1/2 tsp cinnamon
1 3/4 cup flour
1 1/2 tsp baking powder
1 tsp salt
1/2 cup butter or coconut oil (softened)
1 cup milk
1 egg
1 tsp vanilla

Steps:

  • Preheat oven to 350 degrees and grease 8×8 pan with butter. Peel, core, and slice apples.
  • Place apples in pan and coat with 1/4 cup of the sugar and the 1 tsp cinnamon. For this I used Rapadura, although I would have loved to use maple syrup had I had it in the house! Stir mixture around until well coated.
  • In a medium sized bowl, mix together flour, the remaining 1 cup sugar, baking powder, butter, 2/3 cup of the milk, and salt until well combined and smooth.
  • I used spelt flour, but you could also use whole wheat with good results or a gluten free baking mix as well. I also used 1/2 rapadura and 1/2 sucanat for the sugar (again, would love to try this out with maple syrup next time), aluminum free baking powder, coconut oil (adds sweetness without more sugar), raw milk, and sea salt.
  • Then mix in the remaining 1/3 cup milk, egg, and vanilla until smooth again.
  • Spoon cake batter over apples.
  • Bake for 50 minutes or until slightly browned and toothpick comes out of batter clean. (if you test with a toothpick, don't hit the apples or it's not going to be clean!)
  • Let cool for a few minutes, then enjoy!! Definitely perfection when warm out of the oven!

1/2 cup butter, softened
1 cup sugar
2 eggs
1/4 teaspoon vanilla
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 1/2 cups shredded peeled apples (about 2 medium apples)
1/2 cup chopped walnuts
1 quart vanilla or cinnamon ice cream

Steps:

  • Heat oven to 350°F. Spray 9-inch round cake pan with baking spray with flour.
  • In large bowl, beat butter and sugar with electric mixer on medium speed until light and fluffy. Beat in eggs, one at a time. Stir in vanilla, flour, baking soda, cinnamon and salt. Stir in apples and walnuts. Spoon into pan.
  • Bake 40 to 45 minutes or until toothpick inserted in center of cake comes out clean. Cool 10 minutes. Remove from pan to cooling rack. Cool 10 minutes longer. Serve warm with ice cream.

In olden days this pudding was cooked in a Dutch oven hanging over an open fire. The name "Grunt" presumably came from the sound the pudding made as it bubbled and grunted beneath the biscuitlike topping.

4 tablespoons butter
1/3 cup tightly packed brown sugar
2 cups pared cored and sliced fresh apples
3/4 cup chopped walnuts
1 egg
1/2 cup sugar
1/3 cup milk
1/8 teaspoon salt
1 teaspoon baking powder
1 cup all-purpose flour
whipped cream or ice cream

Steps:

  • Melt butter in an 8-inch Dutch oven.
  • Remove 2 tablespoons of the butter and place in a mixing bowl.
  • Add the brown sugar to the Dutch oven and stir until dissolved.
  • Arrange apples over the brown sugar.
  • Sprinkle with walnuts.
  • Add eggs, granulated sugar, and milk to the bowl with the 2 tablespoons butter.
  • Mix in the salt and baking powder, then add the flour, mixing until smooth.
  • Pour batter over the apples.
  • Just cover it tightly and simmer over low heat for 1 hour.
  • Loosen cake from sides of pan with spatula and invert onto a serving platter.
  • Serve with whipped cream or ice cream.

1/4 cup butter
4 Granny Smith apples, peeled, cored, and sliced
1/2 cup brown sugar, firmly packed
Pinch nutmeg
1/4 teaspoon ground cinnamon
1/2 cup raisins
1/4 cup apple juice
1 tablespoon cornstarch
1 tablespoon water
3 ounces crushed granola
4 scoops vanilla ice cream
4 dollops whipped cream
4 maraschino cherries

Steps:

  • In a medium pan, melt the butter over medium heat. Add the apples and cook until browned. Add the brown sugar, nutmeg, cinnamon, raisins, and the apple juice and bring to a simmer. In a small bowl, combine the cornstarch and water and stir until the cornstarch is dissolved. Add the cornstarch slurry to the pan and bring to a simmer again. Cook while stirring until thickened, about 5 minutes.
  • Divide the mixture among 4 serving bowls. Top each bowl with crushed granola, a scoop of ice cream, a dollop of whipped cream, and a cherry. Serve immediately.

6-8 large granny smith apples (sliced)
1/2-1 c sugar cinnamon mixture/or just sugar
2-4 Tbsp cinnamon
1 stick butter or margarine (1/2 cup)

  • 1. SLICE APPLES TIL SOFT, STIR IN SUGAR, CINNAMON AND BUTTER.

1 cup vegetable oil
3 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour

1 c (or more) of sugar
dash(es) salt
cinnamon, ground( to taste)
nutmeg (to taste)
biscuit mix - prepared as for drop bisquits. amount depending on size of pan. can also make homemade bisquit dough or vanilla cake topping.
BAKE AT 350 DEGREES FOR 1 HOUR

Steps:

  • 1. Mix cut apples,sugar,salt,cinnamon and nutmeg. put into baking dish and dot with butter. Drop biscuit crust on top and spread across pan.Bake for 1 hour until the apples are done and the crust is brown.Serve Each Individual dish with homemade vanilla sauce on top, or cook and serve vanilla pudding still warm so its a sauce like consistency.
