We took some of fall's best flavors-apples, maple syrup and gingersnaps-and put them in one extraordinary dessert pizza. Step one: make sugar cookie dough crust. Step two: spread with maple cream cheese mixture and top with apples and crushed gingersnaps. Step three: devour.

1 roll (16.5 oz) refrigerated Pillsbury™ Sugar Cookie Dough
1 medium sweet-tart apple (Honeycrisp), cut into 1/4-inch slices
1/3 cup plus 1 tablespoon sugar
1/4 teaspoon ground cinnamon
1 package (8 oz each) cream cheese, softened
1/2 teaspoon maple extract
1 1/2 cups Cool Whip original whipped topping, thawed (from 8-oz container)
1/2 cup coarsely crushed gingersnap cookies (about 6 cookies from 16-oz box)

Steps:

  • Heat oven to 350°F. Line 12-inch pizza pan with cooking parchment paper, leaving some to hang over edge of pan.
  • Cut cookie dough into 1/4-inch slices; place in pan. Press evenly over bottom to form crust. Bake 17 to 20 minutes or until golden brown. Cool completely, about 30 minutes.
  • Meanwhile, in small microwavable bowl, mix apples, 1 tablespoon sugar and the cinnamon. Microwave uncovered on High 1 to 2 minutes, stirring after 1 minute, until apples are softened. Cool completely, and drain any liquid from apples. Loosely cover, and refrigerate until ready to serve.
  • In medium bowl, beat cream cheese, remaining 1/3 cup sugar and the maple extract with electric mixer on medium speed until smooth. Add whipped topping; beat just until well mixed. Spread mixture on top of cooled cookie crust; refrigerate 1 hour.
  • Just before serving, arrange apples in single layer on top of cream cheese layer; top with crushed cookies. Cover and refrigerate any remaining pizza.

1/2 cup finely ground ginger snap crumbs (from 10 to 15 cookies processed in a food processor)
1/4 cup all-purpose flour
2 tablespoons sugar
1/4 teaspoon fine salt
2 tablespoons unsalted butter, cold
3 tablespoons unsalted butter, cold
4 large pink lady apples, cheeks removed and cut into 1/2-inch slices
3 tablespoons light brown sugar
2 teaspoons minced fresh ginger
1 tablespoon lemon zest plus 2 tablespoons lemon juice
1 teaspoon pumpkin pie spice
Unsweetened whipped cream, for garnish

Steps:

  • For the ginger snap crumble: Preheat the oven to 350 degrees F.
  • Combine the ginger snap crumbs, flour, sugar and salt. Using your fingers, work in the pieces of butter. Large clumps will form; this is what you want. Spread onto a baking sheet and bake until golden brown, 12 to 15 minutes.
  • For the sauteed apples: Meanwhile, over medium heat, melt the butter in an enameled cast-iron skillet over medium heat until golden in color, about 2 minutes. In a large bowl, combine the apples, brown sugar, ginger, lemon zest, juice and pumpkin pie spice. Toss to coat all the apples. Add the apple mix to the skillet and saute until tender, 8 to 12 minutes. Remove from the heat.
  • Divide the apples and crumb topping among plates. Top with the whipped cream. Serve immediately.
