Apple Galette image

A fancy yet simple version of apple pie. This version was conceived in a Montreal hotel room (with a full kitchen, nonetheless) after being inspired by all the apples at the Marche Jean-Talon. I hope you enjoy this! Why not try adding some raisins, dried cranberries, or even some almonds to the mix. Serve warm with a scoop of good quality vanilla ice cream.

1 sheet puff pastry, rolled to 1/8-inch thickness
4 baking apples - peeled, cored, and cut into 1/3-inch thick slices
1 tablespoon freshly squeezed lemon juice
⅓ cup superfine sugar
2 tablespoons cornstarch
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
⅛ teaspoon ground cloves
1 egg, well beaten

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Lay puff pastry onto a round pizza pan.
  • Mix apples and lemon juice together in a bowl until evenly coated; add sugar, cornstarch, cinnamon, nutmeg, and cloves. Toss to evenly coat apples. Spread apple mixture into the center of the puff pastry and fold edges of pastry toward the center. Brush the folded pastry edges with about 1/2 the egg.
  • Refrigerate pastry-apple mixture for flavors and pastry to settle, about 10 minutes. Brush pastry with remaining 1/2 egg.
  • Place pan on the top rack of preheated oven and bake for 20 minutes. Give galette a 1/4 turn and lower heat to 350 degrees F (175 degrees C). Continue baking until pastry is lightly browned, 8 to 10 minutes. Cool slightly before serving, about 10 minutes.

2 sheets frozen puff pastry, thawed in the refrigerator
6 Granny Smith apples
3/4 cup sugar
6 tablespoons (3/4 stick) cold unsalted butter, small-diced
3/4 cup apricot jelly or warm sieved apricot jam
3 tablespoons Calvados, rum, or water

Steps:

  • Preheat the oven to 400 degrees F. Line 2 sheet pans with parchment paper.
  • Unfold the sheets of puff pastry and cut each sheet into quarters. Place the pastry pieces on the prepared sheet pans and refrigerate while you prepare the apples.
  • Peel the apples and cut them in half through the stems. Remove the stems and cores with a sharp knife and a melon baler. Slice the apples crosswise in 1/4-inch-thick slices. Place overlapping slices of apples diagonally across each piece of pastry and place a slice of apple on each side. Sprinkle the full 3/4 cup of sugar over all the pastry pieces and dot with the butter.
  • Bake for 40 minutes, until the pastry is browned and the edges of the apples start to brown. Rotate the pan once during cooking. If the pastry puffs up in one area, cut a little slit with a knife to let the air out. Don't worry! The apple juices will burn in the pan but the galettes will be fine! When the galettes are done, heat the apricot jelly together with the Calvados and brush the apples and pastry completely with the jelly mixture. Loosen the galettes with a metal spatula so they don't stick to the paper. Allow to cool and serve warm or at room temperature.

1 package (2 sheets) frozen puff pastry, defrosted
4 small (6 ounce) Granny Smith apples
3/4 cup sugar
6 tablespoons (3/4 stick) cold unsalted butter, small-diced
3/4 cup apricot jelly or warm sieved apricot jam
3 tablespoons Calvados, rum, or water

Steps:

  • Preheat the oven to 400 degrees. Line 2 sheet pans with parchment paper.
  • Cut each sheet of puff pastry into 4 squares. Divide the pastry between the prepared sheet pans and refrigerate while you prepare the apples.
  • Peel the apples and cut them in half through the stem. Remove the stems and cores with a sharp knife and a melon baller. Slice the apples crosswise in 1/4-inch-thick slices. Place overlapping slices of apples diagonally across the pastry and place one slice of apple on each side of the arranged slices. Sprinkle the apples evenly with the sugar and dot them with the butter.
  • Bake for 40 minutes, until the pastry is browned and the edges of the apples start to brown. Don't worry! The apple juices will burn in the pan but the tarts will be fine! When the tarts are done, heat the apricot jelly together with the Calvados until bubbly and brush the apples and pastry completely with the jelly mixture. Loosen the tarts with a metal spatula so they don't stick to the paper. Allow to cool and serve warm or at room temperature.

Apple Galette With Puff Pastry image

This is a combination of at least 3 recipes. I was feeling motivate to make an apple pie, then a crostata and got lazy. I didn't feel like making a pastry crust. So I searched and searched and found that puff pastry was an option, so here ya go! Enjoy! Prep times includes thaw time for the puff pastry sheet.

1 puff pastry sheet, thawed
1 egg, for egg wash
1/2 teaspoon water for egg wash
4 granny smith apples, medium, peeled, cored, sliced thin
1/2 cup sugar
sea salt, pinch
allspice, small pinch
1/8 teaspoon cinnamon
2 tablespoons butter, cold and diced
1 teaspoon sugar, Sugar in the raw, for sprinkling on crust (optional)
1/4 cup apricot preserves
1 tablespoon calvados, substitute water

Steps:

  • Preheat oven to 400°F.
  • Thaw 1 sheet of puff pastry, about 30-40 minutes. Once thawed, unfold. If it cracks, press the seams together with wet fingers.
  • Place on a baking sheet lined with parchment paper. *a four sided baking sheet works best in case of drips.
  • Halve apples, core>with melon-baller, peel apples. Slice into thin half moons. Place into a bowl. NOTE: *It is important to slice them thin or the pastry sheet will be done before the apple bake tender.
  • Combine sugar and spices. Pour over the apples and toss to coat.
  • You will make 3 rows of apples, leaving almost an inch of pastry exposed, all the way around.
  • Overlap the apple slices one on top the other covering the apple by 2/3 because the apples will shrink while baking. Dot apple slices with butter.
  • Make egg wash (mix egg and water together) and brush over the exposed pastry crust.
  • Bake for about 15 minutes. Rotate once during baking. If the crust is puffed up and golden brown and apples tender, it's done.
  • Meanwhile -- In a glass bowl add the calvados to the apricot preserve. Warm in the microwave for 20-30 seconds and stir. Warm a bit longer if necessary to thin.
  • While the galette still hot, brush with apricot & calvados mixture.
  • Serve warm with a small scoop of vanilla ice cream.
