2/3 cup all-purpose flour
2 teaspoons sugar
1/2 teaspoon baking powder
1/8 teaspoon salt
1/4 cup cold butter, cubed
1/4 cup milk
2 medium apples, peeled and cored
4 teaspoons brown sugar
1/4 teaspoon ground cinnamon
4 teaspoons butter
CARAMEL SAUCE:
2 teaspoons all-purpose flour
1/2 cup water
1/3 cup sugar
1/3 cup packed brown sugar
3 tablespoons butter
Dash salt

Steps:

  • In a small bowl, combine the flour, sugar, baking powder and salt; cut in cold butter until crumbly. Gradually add milk, tossing with a fork until dough forms a ball; divide dough in half. Cover and refrigerate for 1 hour or until easy to handle., On a well-floured surface, roll each portion of dough into an 8-in. square. Cut apples in half horizontally; place an apple bottom on each square. Place brown sugar and cinnamon in the core of each bottom; dot each with 2 teaspoons butter. Replace apple tops., Gently bring up corners of pastry to center; pinch edges to seal. Place in a greased 8-in. baking dish. Bake, uncovered, at 350° for 15 minutes., Meanwhile, in a small saucepan, combine flour and water until smooth. Add the sugars, butter and salt. Bring to a boil; cook and stir until smooth and blended. Pour over dumplings. , Bake 35-40 minutes longer or until apples are tender and pastry is golden brown. Serve warm.

This old fashioned dessert is certainly kicked up a notch with the spiced bourbon caramel sauce. My family LOVED this dessert.

SPICED BOURBON CARAMEL SOUCE
2 c water
1 c sugar
2 Tbsp bourbon
3/4 c packed brown sugar
4 tsp unsalted butter
1 tsp ground cinnamon
1/2 tsp freshly grated nutmeg
1/4 tsp ground cloves
3/4 tsp salt
DUMPLING DOUGH
2 c all-purpose flour
1/2 tsp salt
2/3 c shortening
2 to 3 Tbsp ice cold water
APPLES
6 tart apples (like granny smith) peeled and cored
1/4 c packed brown sugar
1/4 c sugar
1 tsp ground cinnamon
pinch salt
2 Tbsp unsalted butter, cut into 6 pieces
GARNISH WITH ICE CREAM

Steps:

  • 1. Pre-heat oven to 500 degrees F. To make the sauce, combine "sauce" ingredients in a small saucepan over medium heat; bring to boil, reduce to low simmer 5 minutes, cook and stir until sugar dissolves. Remove from heat.
  • 2. To make the dough, combine ingredients except the water and use a pastry blender to cut in shortening. Add 2 tablespoons of water and stir to combine. Add more water, 1 teaspoon at a time, until dough is sticking together but not sticky. Dump on a floured surface and knead, work into a ball. Divide and form into 6 balls. Wrap tightly in plastic wrap and refrigerate until ready to roll out. Roll each dough ball into a large square - large enough to wrap around the apple.
  • 3. Set an apple in the center of each square. Mix together sugar and cinnamon; sprinkle over apples. Bring sides of dough together to cover apples; press to seal. Place seam-side down in a greased 13"x9" baking pan. Pour caramel sauce over dumplings.
  • 4. Bake at 500 degrees for 5 to 7 minutes. Reduce heat to 350 degrees; bake for an additional 35 to 40 minutes, until golden and apples are tender. Serve with a scoop of ice cream and drizzled with sauce.

1 cup packed brown sugar
2 tablespoons butter
1 teaspoon vanilla extract

DUMPLINGS:
1-1/4 cups all-purpose flour
1/4 cup sugar
1-1/2 teaspoons baking powder
1/2 cup milk
2 tablespoons butter, melted
1 teaspoon vanilla extract
1 cup diced peeled tart apples
Whipped cream or vanilla ice cream, optional

Steps:

  • In a large saucepan, combine sauce ingredients; bring to a boil, stirring constantly. , For the dumplings, combine flour, sugar and baking powder in a large bowl. Add milk, butter and vanilla; stir just until moistened. Gently fold in apples. Drop by heaping teaspoonfuls into the boiling sauce. Cover and cook over low heat until a knife inserted in the center comes out clean, about 8-10 minutes. Serve warm with whipped cream or ice cream if desired.

These are the ones my grandmother used to make: warm, flaky, apple-y sweet and drizzled with a sauce that bakes right with them. These are not difficult to make, just a little time-consuming. Serve warm with whipped cream or ice cream.

1 recipe pastry for double-crust pie
6 large Granny Smith apples, peeled and cored
½ cup butter
¾ cup brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
3 cups water
2 cups white sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13 inch pan.
  • On a lightly floured surface, roll pastry into a large rectangle, about 24 by 16 inches. Cut into 6 square pieces. Place an apple on each pastry square with the cored opening facing upward. Cut butter into 8 pieces. Place 1 piece of butter in the opening of each apple; reserve remaining butter for sauce. Divide brown sugar between apples, poking some inside each cored opening and the rest around the base of each apple. Sprinkle cinnamon and nutmeg over the apples.
  • With slightly wet fingertips, bring one corner of pastry square up to the top of the apple, then bring the opposite corner to the top and press together. Bring up the two remaining corners, and seal. Slightly pinch the dough at the sides to completely seal in the apple. Repeat with the remaining apples. Place in prepared baking dish.
  • In a saucepan, combine water, white sugar, vanilla extract and reserved butter. Place over medium heat, and bring to a boil in a large saucepan. Boil for 5 minutes, or until sugar is dissolved. Carefully pour over dumplings.
  • Bake in preheated oven for 50 to 60 minutes. Place each apple dumpling in a dessert bowl, and spoon some sauce over the top.

In a small bowl, combine 1 egg, water and vinegar; gradually add to crumb mixture, tossing with a fork until dough forms a ball.
