2 1/4 cups all-purpose flour
1/2 cup sugar
1 (8 g) package fast rising yeast
1/2 teaspoon salt
1/4 cup water
1/4 cup milk
1/3 cup butter
2 large eggs
2 cooking apples, peeled cored and sliced
1/3 cup sugar
1/4 cup flour
1 teaspoon cinnamon
3 tablespoons cold butter

Steps:

  • In a large bowl, combine 1 cup flour, sugar, UNDISSOLVED yeast and salt.
  • Heat water, milk and butter until very warm (120 to 130 degrees F).
  • Gradually add to dry ungredients, with the eggs
  • Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally.
  • Stir in remaining flour to make a STIFF batter.
  • Spread evenly into a greased 9-inch square baking pan.
  • Arrange apple slices evenly over batter.
  • For topping: Combine all ingredients; mix until crumbly.
  • Sprinkle crumb topping evenly over apples.
  • Cover, let rise in a warm draft-free place until doubled in size (about 1 hour).
  • Bake in 375 degree oven, for 35-40 minutes, or until done.
  • Cool in pan 10 minutes.
  • Remove from pan; cool on wire rack.

1 1/4 cups brown sugar, divided
2 teaspoons ground cinnamon
1 cup softened butter or 1 cup margarine
2 eggs
2 cups all-purpose flour
1 cup finely chopped walnuts, divided

Steps:

  • Place apples in a greased 13-by-9-by-2-inch dish sprinkled with 1/4 cup brown sugar and cinnamon.
  • In a large mixing bowl, cream butter and remaining brown sugar.
  • Add eggs and stir in flour and 1/2 cup walnut.
  • Spread over apples.
  • Sprinkle with remaining walnuts.
  • Bake at 350 degrees for 45 to 55 minutes or until apples are tender.
  • Serve warm, with ice cream if desired.

You've got pumpkin and apple in one. This is a moist spicy cake with pieces of apple throughout. Optional-If you have a real sweet tooth drizzle powdered sugar mixed with buttershots or apple shnapps to glaze cake. This would also be great with dried cranberries or raisins mix in along with the apples. This recipe was given to me by Tim a Great guy I work with. Yes tweaked a bit! Made 60 mini muffins Nov 26, 2013 baked them for 15-18 minutes and I made twice the amount topping. I brought them to a party(leaving 12 home) so everyone could have a bite and room to enjoy the other food.

1 stick (8 tablespoons) unsalted butter, melted, still warm
1/3 cup granulated sugar
1/3 cup light brown sugar
1 teaspoon apple pie spice
1/4 teaspoon kosher salt
1 3/4 cups cake flour
2 tablespoons unsalted butter
3 cups diced peeled Granny Smith apples
1 tablespoon light brown sugar
1 teaspoon apple pie spice
Pinch of kosher salt
Nonstick cooking spray, for spraying the baking dish
One 15.25-ounce box yellow cake mix (plus required ingredients)
Confectioners' sugar, for dusting

Steps:

  • For the crumb topping: Whisk together the butter, granulated sugar, brown sugar, apple pie spice and salt. Add the cake flour and stir with a wooden spoon until dough-like. Set aside in the fridge to cool for 20 minutes.
  • When cool, use your fingers to break apart the mixture into large pea-sized crumbs. Hold in the refrigerator.
  • For the sauteed apples: Heat a small saucepot over medium heat. Add the butter and heat until melted. Add the apples, brown sugar, apple pie spice and salt and saute until the apples are slightly browned and al dente, about 10 minutes. Set aside to cool.
  • For the cake: Preheat the oven to 350 degrees F. Spray a 9-by-13-inch baking dish with cooking spray. Using 2 sheets of parchment, create an overlapping cross in the pan to cradle the cake and make it easy to remove once baked.
  • Prepare the cake batter according to the instructions on the box. Add the cake batter to the prepared baking dish, then "stud" in a layer of the cooled apples. Bake for about 20 minutes, then remove the baking dish and carefully spread the crumb topping into an even layer over the cake. Bake until the crumbs are golden and a cake tester comes out clean, another 10 to 20 minutes. Cool on a wire rack for 40 minutes. Once cooled, lift out of the pan using the parchment cradle. Dust with confectioners' sugar before serving.

Steps:

  • Heat oven to 350 degrees.
  • Lightly butter a 9 inch square pan and dust with flour (you can also use nonstick spray).
  • For the topping, melt 1 tbsp butter in a skillet. Add the apple slices and saute over medium high heat for 2 minutes (stir often). Move the slices to a plate and allow to cool while preparing the cake.
  • For the cake, sift the flour, baking powder, and salt into a medium bowl; set aside.
  • With an electric mixer, cream the butter (1/2 cup) and cream cheese in a large bowl.
  • Gradually add in the sugar, 1/2 cup at a time.
  • Add in the eggs one at a time, beating well after each addition.
  • Add the flour, a third at a time, blending well after each addition.
  • Add the vanilla and lemon zest.
  • Pour the batter into the prepared pan and smooth it with a spoon.
  • To finish the topping, combine the flour, sugar, cinnamon, and salt in a large bowl.
  • Rub the butter into the dry ingredients until you have uniform crumbs.

CINNAMON CRUMB
1 Tbsp cinnamon
1/2 c light brown sugar
1 c flour
1/2 c chilled butter chopped up into cubes
1/2 c optional: chopped nuts (pecans or walnuts)
CAKE
4 apples peeled cored and sliced into 1/2" slices
1-2 Tbsp lemon juice ( to prevent apples from browning )
1/2 c softened butter
1 c light brown sugar packed
2 eggs
1 tsp vanilla extract
1/2 c apple sauce
1 c sour cream
2 1/2 c flour
1/2 tsp salt
1 tsp baking soda
1 tsp cinnamon
1/2 c optional: walnuts or pecans

Steps:

  • 1. Grease and flour AN angel food pan. Set aside. Preheat oven to 350° .
  • 2. Topping: In a bowl. Mix brown sugar cinnamon, and flour together. Add chopped butter. Mix well with pastry cutter or 2 sharp knives. It will look crumbly. Add the nuts. Place hands in bowl. Knead mixture together until it forms almost like A dough. Break it apart until it resembles large crumbs. Place in refrigerator until needed.
  • 3. Slice apples and toss with lemon jjuice
  • 4. Cake: In a large bowl. Cream together brown sugar and butter . Beat until smooth.
  • 5. Add the eggs and vanilla to the mixture.. mix well . Blend in apple sauce and sour cream. Do not beat.
  • 6. Sift in the flour, salt, 1/2 tsp cinnamon and baking soda. Mix on low speed until blended. Mix in nuts.
  • 7. Place 1/2 of the mixture into the bottom of a angel food pan. With the back of a spoon make batter level. Make a well in the center of the battter with spoon all the way around.
  • 8. Place half of the sliced apples in the well overlapping in a spiral pattern. Push down on apples with the back of a large spoon so that The apples are pushed into the batter. Cover with remaining batter smooth out
  • 9. Place remaining apples on top in a spiral pattern until gone. Place on top of each other. If you have extra Avoid putting apples on the outside and inside edges. Center the apples. Slightlty push diwn on apples iwith the back of a spoon. Sprinkle top with the cinnamon crunch you placed in the fridge.
  • 10. Place on center rack in 350° oven. Bake for about 50 minutes, or until toothpick inserted comes out clean.
  • 11. Remove center cone from pan after it cools for 30 minutes. Then, Cool completely. Run a knife around cake in pan to loosen cake. You may need to do the same to the bottom of the cone pan. Place platter over pan. Flip cake on platter. Carefully! Turn cake over with crumbs on top.

Steps:

  • Preheat oven to 325 degrees. Spray an 8-inch-square baking pan with nonstick cooking spray. Line pan with two pieces of parchment paper, creating a 1-inch overhang on all sides of the pan. Spray parchment paper with cooking spray.
  • Make the Apple Topping: In a medium skillet, melt butter over medium-high heat. Continue cooking until butter becomes golden brown and fragrant. Reduce heat to medium and add sugar, 1/4 cup water, and apples. Cook until apples have softened slightly and liquid is thick and syrupy, about 5 minutes. Remove from heat; stir in Cognac, working carefully as alcohol may ignite. Return to heat, and cook until alcohol evaporates, about 30 seconds. Remove from heat and cool to room temperature.
  • Make the Crumb Topping: In a medium bowl, whisk together flour, both sugars, cinnamon, and salt. Add melted butter and, using your fingers, mix together to form large crumbs; set aside.
  • Make the Cake: In a large bowl, whisk together flour, baking powder, baking soda, and salt; set aside. In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and sugar until light and fluffy, 2 to 3 minutes. Add creme fraiche, egg, yolk, and Cognac; mix until well combined. Add flour mixture and mix until well combined.
  • Pour cake mixture into prepared baking pan. Top with apples and their liquid to cover; sprinkle evenly with crumb topping. Transfer to oven and bake until a tester inserted into the center of cake comes out clean, about 55 minutes. Remove from oven and let cool completely before serving.

3/4 c butter, softened
1 1/4 c granulated sugar
3 eggs
2 tsp vanilla
2 c low-fat plain yogurt
2 apples (such as golden delicious) peeled, cored, and chopped

Steps:

  • 1. Preheat oven to 350 degrees F 10-inch Bundt pan, greased and floured
  • 2. PREPARE THE TOPPING: In a medium bowl, combine brown sugar, flour, butter and cinnamon. Use a pastry blender or fork to mix until mixture is coarse and crumbly and the butter is well incorporated. Stir in the nuts and mix well. Set aside.
  • 3. PREPARE THE CAKE: In another bowl, combine flour, baking powder and baking soda.
  • 4. In a large mixer bowl, cream butter and sugar on medium speed until smooth and fluffy. Beat in eggs, one at a time, beating well after each addition. Add vanilla and yogurt and beat on low speed until well blended.
  • 5. Spoon 1/2 the batter into the prepared baking pan. Sprinkle evenly with 1/4 cup of topping, then the apples, and then 1/2 cup of the crumb topping. Spoon on the remaining batter and top with remaining crumb topping.
  • 6. Bake in preheated oven for 55-60 minutes or until a tooth pick inserted in center comes out clean and dry. Let cool in pan on a wire rack for 10 minutes. Put a large plate over the top and carefully invert. Remove pan. Place another plate on top of cake and invert so that crumb topping is facing up. Let cool completely.

1 pkg dry yeast
1/2 c butter, softened
1/2 c sugar
1/2 tsp salt

1/4 c milk
2 1/3 c unsifted flour
TOPPING INGREDIENTS
3 large apples, peeled and sliced
2/3 c sugar
1/2 c flour
2 tsp cinnamon
6 Tbsp butter

Steps:

  • 1. Preheat oven to 375.
  • 2. Measure the water into a small bowl.
  • 3. Sprinkle yeast on top.
  • 4. Stir until dissolved.
  • 5. Cream butter thoroughly in a large electric mixing bowl.
  • 6. Gradually add the sugar and salt.
  • 7. Cream together.
  • 8. Add the yeast mixture, eggs and milk and beat at medium speed until well blended.
  • 9. Gradually add and blend in the flour while beating at medium speed; beat until the mixture is well blended.
  • 10. Spread the batter in a well-greased 9x9\" pan.
  • 11. Arrange Apple Crumb Topping over dough.
  • 12. Cover and let rise in a warm place, free from draft, until doubled in bulk, about 1 hour.
  • 13. Bake in 375 oven for about 35 to 40 minutes.
  • 14. Turn out of pan and cool on a wire rack.
  • 15. Apple Crumb Topping: Arrange sliced apples on the dough.
  • 16. Combine the remaining ingredients and mix until crumbly.
  • 17. Sprinkle over apples.

BATTER
1/2 c butter - room temperature
1 c sugar
2 eggs
1/2 tsp vanilla
1 3/4 c flour

2 can(s) comstock brand apple pie filling
CRUMB TOPPING
3 c flour
3 stick butter - room temperature
1 1/2 c light brown sugar
2 tsp cinnamon

Steps:

  • 1. To make the batter:
  • 2. In a large mixing bowl, cream the butter, sugar, eggs and vanilla.
  • 3. In a separate bowl, combine the flour, salt, and baking powder.
  • 4. Alternate the dry ingredients and milk into butter mixture until well blended.
  • 5. Spread batter into greased 10 x 13 inch baking pan.
  • 6. Spread two cans of apple pie filling over batter and sprinkle with the cinnamon.
  • 7. To make the crumb topping:
  • 8. Mix flour, butter, brown sugar and cinnamon with hands and shape into a ball. Pull pieces from ball and place on top of cake. Should be enough crumbs to cover the entire top of the cake. The crumbs don't need to be perfect.
  • 9. Bake for 1 hour at 350 degrees.
  • 10. Let cool in the oven.
  • 11. Cool completely before cutting into squares. Sprinkle with powdered sugar just before serving.

My DH hates apple cakes and pies of all kinds but will eat this until I stop him and I love apple cake and pies of all kinds and will eat this until I stop myself; in other words everyone loves this cake. This is not a fluffy cake but a good heavy crumb cake with an almost cookie-like crust. The nice thing about this is that you really can use any kind of fresh or frozen fruit or any combination (except strawberries). My personal favorite is apple and apricot. It is especially good with a layer of fruit pie filling on top of the apples like cherry pie filling.

4 cups flour
1 cup sugar
2 teaspoons baking powder
2 tablespoons vanilla sugar
1 cup oil (mild flavored)
2 eggs
8 -10 apples, peeled and thinly sliced
1/2 cup sugar
1/2 teaspoon cinnamon
1 (21 ounce) can fruit pie filling (optional)

Steps:

  • Combine all dough ingredients and mix with mixer until moist and crumbly (you can increase the oil 1 tablespoon at a time until you have the right consistency, sometimes I add a little bit of water too). Spread half of the crumb mixture into the bottoms of two 9" pans or one 10x13 pan.
  • Layer the fruit filling over the crumb base.
  • Cover the fruit with the remaining crumb dough.
  • Bake in a 350 oven for approximately one to two hours or until nicely browned from edge to center. Enjoy!

3/4 C ground almonds
3/4 C brown sugar
1/2 C white sugar
1/2 C cold butter cut into bits
4 T cream cheese
1/2 t cinnamon
1/4 t mace
1/4 t allspice
1/8 t salt
1 t baking soda
1/2 C buttermilk or sour milk
1 large egg
2 1/2 C firm apples sliced
Topping finish:
2 T butter
1 T sugar
1/4 t each cinnamon and mace

Steps:

  • Butter a 9" or 10" spring form pan. Apples: Do this first: combine the following ingredients and let macerate for at least an hour (overnight is good). 2 ½ C firm apples peeled, cored and sliced 1/8" 3 T brandy 2 T lemon juice 1 T sugar ¼ t cinnamon For the bottom layer and top crumb: Process these ingredients in the food processor until they form a grainy mixture with small bits of butter throughout. 1 ½ C all purpose flour ¾ C ground blanched almonds (process until about the size of sand grains) ¾ C brown sugar ½ C white sugar ½ C cold butter in bits 4 T cold cream cheese ½ t cinnamon ¼ t mace ¼ t allspice 1/8 t salt Divide this mixture into halves. For the crumb topping, mix into one half: 1 C raisin granola (large chunks broken up) Set aside. Beat the following ingredients together and add to the other half of the flour mixture: ½ C buttermilk or sour milk 1 large egg ½ t baking soda This creates a wet batter for the bottom layer of the cake. Pour the wet bottom layer batter into the spring form pan. Arrange the apple slices and juice on top of the batter in a layer. Top with crumb mixture. Sprinkle with cinnamon, mace and sugar and dot liberally with butter. Bake at 325 for 50-60 minutes.

1/4 cup Cognac

1/3 cup dark-brown sugar
1 1/2 teaspoons ground cinnamon
1/4 teaspoon coarse salt
1/2 cup (1 stick) unsalted butter, melted
1 cup all-purpose flour (not self-rising)
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon coarse salt
6 tablespoons unsalted butter, room temperature
1/2 cup granulated sugar
1/3 cup creme fraiche
1 large egg
1 large egg yolk
1 tablespoon Cognac

Steps:

  • Preheat oven to 325 degrees. Spray an 8-inch-square baking pan with nonstick cooking spray. Line pan with two pieces of parchment paper, creating a 1-inch overhang on all sides of the pan. Spray parchment paper with cooking spray.
  • Make the Apple Topping: In a medium skillet, melt butter over medium-high heat. Continue cooking until butter becomes golden brown and fragrant. Reduce heat to medium and add sugar, 1/4 cup water, and apples. Cook until apples have softened slightly and liquid is thick and syrupy, about 5 minutes. Remove from heat; stir in Cognac, working carefully as alcohol may ignite. Return to heat, and cook until alcohol evaporates, about 30 seconds. Remove from heat and cool to room temperature.
  • Make the Crumb Topping: In a medium bowl, whisk together flour, both sugars, cinnamon, and salt. Add melted butter and, using your fingers, mix together to form large crumbs; set aside.
  • Make the Cake: In a large bowl, whisk together flour, baking powder, baking soda, and salt; set aside. In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and sugar until light and fluffy, 2 to 3 minutes. Add creme fraiche, egg, yolk, and Cognac; mix until well combined. Add flour mixture and mix until well combined.
  • Pour cake mixture into prepared baking pan. Top with apples and their liquid to cover; sprinkle evenly with crumb topping. Transfer to oven and bake until a tester inserted into the center of cake comes out clean, about 55 minutes. Remove from oven and let cool completely before serving.
