One of the definitive desserts of fall, apple crisp is easy and economical. Test kitchen tip: Empire, Gala, or Braeburn apples are especially good in this recipe.

3/4 cup all-purpose flour, (spooned and leveled)
1/4 cup packed light-brown sugar
1/2 teaspoon salt
1/2 cup plus 2 tablespoons granulated sugar
8 tablespoons (1 stick) unsalted butter, cold, cut into small cubes
1 cup old-fashioned rolled oats (not quick-cooking)
3 pounds apples, such as Empire, Gala, or Braeburn, peeled, cored, and cut into 1/2-inch chunks
2 tablespoons fresh lemon juice
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 375 degrees. In a large bowl, mix together flour, brown sugar, salt, and 2 tablespoons granulated sugar. Cut butter into flour, using a pastry blender or two knives, until mixture is the texture of coarse meal. Add oats, and use your hands to toss and squeeze mixture until large, moist clumps form. Transfer to freezer to chill while you prepare apples.
  • In another large bowl, toss apples with lemon juice, cinnamon, and remaining 1/2 cup granulated sugar. Transfer to a shallow 2-quart baking dish, and sprinkle with topping mixture. Place baking dish on a rimmed baking sheet, and bake until golden and bubbling, 55 to 65 minutes. Let cool 10 minutes before serving.

I adapted this from a 50-year-old peach crisp recipe. Although it works well with peaches, it works even better with fresh, crisp cooking apples.

2 ½ cups apples - peeled, cored, and sliced
1 cup sifted all-purpose flour
1 cup white sugar
½ teaspoon ground cinnamon
¼ teaspoon salt
½ cup butter, softened

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease an 8-inch square baking dish.
  • Arrange apple slices evenly in prepared baking dish. Sift flour, sugar, cinnamon, and salt in a bowl. Cut in butter using a pastry blender or 2 knives until mixture resembles coarse cornmeal; sprinkle over apples.
  • Bake in preheated oven until topping is golden, 40 to 45 minutes. Cool slightly before serving.

10 apples (tart organic)
1 lemon, juice of
1/2 teaspoon cinnamon
1/2 cup rolled oats
1/2 cup flour (all purpose unbleached)
1/2 cup sugar (sucanat)
1/8 teaspoon salt
1/2 cup walnuts (finely chopped)
1/2 cup margarine (or non-hydrogenated substitute)

Steps:

  • Peel & slice apples.
  • Mix together apples with lemon juice and cinnamon.
  • Place mixture in a greased 9" x 13" baking dish.
  • Combine oats flour, Organic Sucanat, salt, cinnamon and walnuts in a bowl.
  • Mix in the margarine substitute with your fingers until mixture resembles coarse crumbs.
  • Spread evenly over the apples.
  • Bake for 25 minutes at 375 Degrees or until apples are soft and topping is brown.

With the crisp, autumn weather comes the apple harvest! Surrounded by perfect, juicy apples, I had to come up with some way to make a sugar-free apple crisp. Here is what we ended up with, using natural sweeteners, instead of processed sugar.

5 -6 apples, cored and peeled
1 cup oats (quick-cooking or other)
4 tablespoons shortening
1 tablespoon flour
2 tablespoons honey
2 tablespoons maple syrup (i really mean maple cream, but it is not recognizing ingredient)
1 teaspoon cinnamon (optional)

Steps:

  • Preheat oven to 350°F Place apples in a greased 9x9 pan. Combine oats, shortening, and flour in a bowl. Cut with pastry cutter until mixture resembles coarse crumbs. Add honey and maple cream. Top apples with oat mixture. Bake until browned and bubbly, 25-35 minutes. Serve warm with a latté, instead of ice cream.
