APPLE CRISP, WITH DULCE DE LECHE

We also discuss that sometimes the forbidden fruit is the best, that Dulce de Leche can be compared to liquid, hot magma and that recipes are never set in stone. - 1. Tools 9" x 13" Baking Dish Medium Bowls (2) Spatula Crock Pot Tongs
- 2. Tactics - Dulce De Leche Submerge a can of sweetened condensed milk in enough water to cover, placed the lid on at set it to low. After a few hours (2-3 to be sure), I removed it with some tongs, placed it in the sink and let it cool for 30 minutes. I then opened it up with a kitchen towel (no liquid hot magma!), add cream, vanilla, salt, blend well and voilà, Dulce de Leche.
- 3. Tactics - Apple Crisp Pre-heat the oven to 350°F. To assemble the apple filling, place lemon zest, lemon juice, brown sugar, vanilla, cinnamon, nutmeg, and salt in a bowl and mix to combine. Place to the side. To assemble the topping, place the flour, brown sugar, oatmeal and cinnamon in the other bowl and mix to combine. Then add the butter and using either a pastry blender or your bare hands, mix until the ingredients resemble course sand. Place the apple filling into the baking dish and place the topping evenly in top. Place the dish into the oven and cook for 1 hour. The top should be nice and browned. Allow it to cool for 10 minutes and then serve warm with some cinnamon icecream. Enjoy.
DULCE DE LECHE APPLE PIE
I made this recipe as an experiment at Thanksgiving Dinner. I've had requests for it ever since. Like a caramel pie, but not too sweet, it's wonderful warm or cold. And excellent for breakfast the next day!

- Preheat oven to 450 degrees F (230 degrees C).
- Mix sugar, cornstarch, and cinnamon together in a bowl until well blended. Add dulce de leche; stir until evenly distributed in the sugar mixture. Stir in apples until evenly coated.
- Roll out pie crusts on a lightly floured work surface. Line a 9-inch pie plate with 1 crust. Pour in apple filling, heaping it in the middle. Cover with second crust. Pinch edges together to seal. Cut several slits into the top with a sharp knife.
- Bake in the preheated oven until edges are golden, about 20 minutes. Reduce oven temperature to 350 degrees F (175 degrees C). Continue baking until apples are hot and bubbling, 25 to 30 minutes more.

I adapted this from a 50-year-old peach crisp recipe. Although it works well with peaches, it works even better with fresh, crisp cooking apples.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease an 8-inch square baking dish.
- Arrange apple slices evenly in prepared baking dish. Sift flour, sugar, cinnamon, and salt in a bowl. Cut in butter using a pastry blender or 2 knives until mixture resembles coarse cornmeal; sprinkle over apples.
- Bake in preheated oven until topping is golden, 40 to 45 minutes. Cool slightly before serving.
