- Preheat oven to 400 degrees F (200 degrees C).
- Mix apples, 1/4 cup brown sugar, white sugar, 1/4 cup flour, and cinnamon together in a bowl.
- Combine 3/4 cup flour, oats, and 2/3 cup plus 2 tablespoons brown sugar in a bowl. Drizzle melted butter over flour mixture; stir until crumbly.
- Pile apple mixture into the pie shell. Scatter crumbly topping over apples.
- Bake in the preheated oven until apples start to soften, about 15 minutes. Reduce oven temperature to 350 degrees F (175 degrees C). Continue baking until apples are soft and topping is browned, about 40 minutes more.

- 1. Preheat oven to 425 degrees F. Wash peel core and slice apples into thin slices. This is basice Apple Pie recipe. I did a bit of research to learn about these delicious tasting apples, and found they are considered an all purpose apple, so they worked great in my pie, and are great in cakes as well.
- 2. Add apples to a large bowl. Then combine sugar and spices with flour in a separate bowl and stir to blend together.
- 3. Pour sugar mixture over apples, and stir to blend in then sprinkle with the lemon juice and stir till thoroughly mixed together.
- 4. Unroll pie crust and position into a 9 inch glass pie plate. Press down to conform to pie dish.
- 5. Fill pie crust with sliced apple mixture. Then top with second crust. Tuck the edge of top crust to the bottom edge of the base crust then crump together.
- 6. Now brush top of crust with evaporated milk or an egg wash. Make 5 or 6 slits in top of crust so steam can escape during cooking. Then sprinkle top with decorators sugar.
- 7. Place pie plate on a shallow baking sheet to catch any potential drips during baking. Then place in preheated 425 degree oven and bake for 20 minutes. After 20 minutes, you may want to cover the edge of pie with aluminum foil to prevent over browning of the edges. Then continue baking for an additional 30 minutes, or until top crust is golden brown.
- 8. Remove pie from oven and allow pie to cool for at least a few hours before cutting. Serve plain as is or with your favorite ice cream.

I had an abundance of apples and needed to use them. We love apple crisp but I just made it a few days before. Pie sounded nice, so I combined 4 different recipes to get this one. It has almost a shortbread type crust and is just the right balance of sweet and tart. I had to hurry and write the recipe down so I wouldn't forget it because I will definitely be making this again!

- Preheat oven to 400 degrees F (200 degrees C). Spray a 9-inch pie dish with cooking spray.
- To make the crust, beat 1/2 cup of butter with cream cheese in a mixing bowl with an electric mixer until thoroughly combined; scrape the sides of mixing bowl occasionally to incorporate all the butter and cream cheese. Beat in 1 1/4 cups flour, the white sugar, and salt on medium-low speed until the mixture looks like coarse cornmeal, about 20 seconds. Increase the speed to medium-high, and beat until the dough begins to clump together, about 30 more seconds.
- Lay out a 24-inch piece of waxed paper on a work surface, and scoop the dough out onto the left half of the paper. Form it into a ball, and flatten it into a 6-inch disk; fold the right side of the paper over the dough disk, covering the dough. With the rolling pin on top of the paper, gently roll the dough out into a round crust about 1/8-inch thick; peel off the top half of the waxed paper, turn the dough out onto the prepared pie dish, and fit the dough into the dish. Peel of the remaining portion of waxed paper.

HONEY CRISP APPLE PIE

- Peel apples and cut into 1/4 inch slices
- Place in large kettle with butter and 2TBs of water. Cook until butter is melted.
- Add sugar, Spices and raisins if desired. Stir well. Cook on medium heat covered for 10 minutes.
- Mix 3 tablespoons of cold water with the 2 tablespoons of cornstarch.
- Slowly add cornstarch mixture to apples and stir well until thickened. Remove from heat to cool. Make sure filling is cool before filling crust.
- In a bowl mix all ingredients together for crumb topping. It will look slightly crumbly. Place in refrigerator.
- Pie crust: I a food processor or blender. Add the flour and salt. Pulse together until combined.
- Cut cold butter up. Add to flour mixture and pulse together.
- Add a TB of cold ice water and pulse. Add another tablespoon of ice water and pulse again. Pulse until it forms a ball. Add 1 tablespoon of water at a time as needed. Usually, you only need 2 to 3 tablespoons.
- Remove dough. Place on plastic wrap snd flatten with hand into a circle. Refrigerate until needed.
- Roll on floured surface using wax paper to cover dough. Roll about a 12" circle. Lift and place in pie pan. Make sure edges are covered.
- Preheat oven to 350°. Bake piecrust for 10 minutes at 350 degree's. Remove from oven and set aside.
- Put the filling inside the crust and sprinkle with crumb mixture.
- Bake at 350 degree's on sheet pan about 50-60 minutes or until crumb topping is nicely browned and apples are tender. Note:: if crumb topping browns to quickly. Lay a piece of foil over top of pie so that crumbs do not get overly browned.
- Remove from oven to cool on rack.

- To assemble the crust, put all ingredients in food processor and process until well mixed and sticky. Line a 10-inch pie pan with extra-virgin olive oil. Pour crust into pan and pat firmly into place. Use your hands to bring the crust up the sides of the pie pan, all the way to the rim.
- To make the filling, put the apple in food processor and pulse until finely chopped. Combine apple and blueberries/pomegranates in large bowl and mash with fork. Add chia seeds, vanilla and cinnamon and mix well. Fill the pie crust with the filling and smooth evenly with a rubber spatula.
- Finally, for the topping, use the food processor or a mandoline to slice the apples paper thin. Layer the sliced apples on top of the filling in a circular, overlapping pattern. In the food processor, combine walnuts, dates and orange essential oil and pulse until finely ground. Sprinkle the walnut, date and orange mixture on top of the sliced apples. Serve cold.

- Mix dry ingredients together, (except for the 1/8 cup sugar and the 1 Tbl. flour, as that gets mixed with the apples.), then cut in softened butter.
- Put lemon juice in a glass pie plate. Peel, core and slice apples, putting in pie plate as you go, mixing with the lemon juice.
- Mix the 1/8 cup sugar with the 1 Tbl. flour, mix into apples.
- Top with crumb topping.
- Bake at 350 degrees for 50 minutes.

APPLE CRISP PIE
The difference between a good apple pie and a fantastic apple pie is carmelizing the apples before putting them in the pie crust. The apples are partially cooked and they do not dry out during baking and the carmelization makes them so sweet. The apple crisp topping is well, what can I say except absolutley delish. - Preheat the oven to 500 degrees.
- Line a large baking sheet with parchment. Peel and slice the apples for a pie. Lay the peeled and sliced apples on the baking sheet and sprinkle on the the brown sugar & butter. Bake for about 15 minutes. Apples will be juicy and they will be slightly browned.
- Place the apple with a spatula into your favorite pie crust. Mix together the flour and the dash of salt with the cinnamon. Sprinkle on top of the pie.
- Mix all the dry ingredients for the topping and sprinkle all over the top of the pie until it is covered.
- Turn the oven temp back to 350 degrees. Bake for 20 to 25 minutes. You can top this will ice cream or whipped cream or just eat it plain.
