1/2 cup cream cheese
1 cup sun-dried cranberries (finely chopped)
5 -6 peeled and finely diced fresh apples
16 ounces baked pumpkin puree (one pie pumpkin or 16 oz. can of puree)
50 wonton wrappers
brown sugar
cinnamon
oil (for frying)

Steps:

  • Soften cream cheese.
  • In a bowl, mix cranberry, apple and pumpkin puree. (Bistro 1896 uses locally grown apples and pie pumpkins.).
  • Lay out wonton wrappers.
  • Place a dollop of cream cheese and the pumpkin, cranberry and apple mixture in the center of each wonton.
  • Sprinkle cinnamon and brown sugar to taste.
  • Lightly moisten the edges of each wonton wrapper and fold into triangles, then fold back the long ends of the triangle and pinch together.
  • Fry wontons in 350 degree oil for 5-6 minutes.
  • Take out of oil carefully and drain excess oil from wontons.
  • Let wontons rest a minute or two before serving.
  • Create honey-orange sauce by combining honey and orange slices. Cook over medium heat until thickened, stirring often.

2 pounds new potatoes or baby Yukon gold potatoes
1/2 cup sour cream
2 tablespoons butter
3 strips par cooked bacon, crisped in microwave and chopped (recommended: Ready Crisp)
Salt and pepper
1 cup store bought apple sauce
1 (14 ounce) can whole berry cranberry sauce
2 slices whole grain bread
Butter
1 tablespoon extra-virgin olive oil, 1 turn of the pan
1 pound maple sausage, bulk or removed from large link casing
1 medium onion, chopped
2 celery ribs, chopped
2 teaspoons poultry seasoning
Salt and pepper
1 cup chicken stock or turkey broth
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups chicken stock or turkey broth
1 teaspoon poultry seasoning
Salt
A few grinds black pepper
1 1/2 to 2 pounds turkey breast meat: roasted turkey breast or thick-cut deli turkey
4 slices whole grain bread
2 tablespoons chopped flat-leaf parsley or chopped chives, for garnish

Steps:

  • Preheat a medium skillet over medium high heat.
  • Place potatoes in a medium pot. Cut larger potatoes in half. Leave smaller baby potatoes whole. Cover potatoes with water and top with a lid. Place over high heat. When the water boils, salt water and cook potatoes with the lid off pot for 10 to 11 minutes, until tender.
  • Place a second low pot on the stove top over medium-high heat. Add apple sauce and canned cranberry sauce. Stir to combine and gently heat through, about 10 minutes.
  • Toast 2 slices whole grain bread and butter heavily, 1/2 tablespoon per slice. Chop into small cubes and reserve.
  • Add extra-virgin olive oil and sausage meat to hot skillet. Brown and crumble the sausage with a wooden spoon or heat safe spatula. Add onions and celery to the skillet then season with poultry seasoning and salt and pepper and cook 5 minutes. Add bread to the skillet and stir to combine. Dampen the stuffing with chicken stock and turn to combine. Turn off heat and cover pan loosely with foil to hold heat.
  • Preheat a second skillet over medium heat to prepare turkey and gravy.
  • Drain cooked potatoes and return to hot pot. Smash with sour cream, butter and crisped, chopped bacon. Season the smashed potatoes with salt and pepper. If they are too thick, thin them out with milk or a splash of broth.
  • Add 2 tablespoons butter to preheated skillet and melt it. Whisk in flour and cook 1 minute. Whisk in 2 cups stock or broth. Add the poultry seasoning, a pinch of salt and a few grinds of black pepper to the gravy. Allow it to thicken slightly.
  • Cut roasted turkey meat away from the breast bones of rotisserie turkey breast. If you are using deli turkey, remove from packaging and separate slices. Set turkey into gravy.
  • Place a bread slice on dinner plate. Use a large ice cream scoop to place a mound of stuffing on the bread. Place turkey on top of stuffing. Serve smashed potatoes and cranberries on the side. Spoon the extra gravy over potatoes and turkey sandwiches. Sprinkle the plates with chopped parsley or chives and serve.

  • In a medium saucepan over medium heat, add the cranberry juice, cranberries, cinnamon and sugar. Bring to a boil and let cook for 5 minutes. Add the apples and cook, stirring occasionally, until the cranberries have softened and apples are tender, about 5 minutes.

1/2 cup butter
2 teaspoons vanilla

  • Pudding:.
  • in a medium bowl, toss sliced apples with lemon juice and set aside.
  • in a large bowl, beat the eggs till frothy and light in color. Add the sugar, vanilla, nutmeg and cinnamon and beat till smooth.
  • Stir in the butter, half and half and brandy.
  • Toss the apples, cranberries, pecans with the bread cubes.
  • Place the bread mixture in a greased 9x5 loaf pan (or individual custard cups). Pour the egg mixture evenly over the bread. Cover with foil and weigh down with a bag of rice or dried beans to encourage the bread to absorb the liquid. Refrigerate for 30-60 minutes.
  • Preheat oven to 325. Remove the foil and weights and place the pudding in a larger pan with 1 inch of hot water. Bake for 55 minutes or till set.
  • Increase oven temperature to 425 and bake 10 minutes more, till lightly browned. Serve warm with room temperature sauce.
  • Vanilla Cream Sauce:.
  • Combine milk (or cream) with flour and sugar in a saucepan. Add butter. Heat over medium high heat till it bubbles, stirring. Continue to heat gently till thickened. Stir in vanilla.

CRANBERRY-APPLE GINGER SAUCE



Cranberry-Apple Ginger Sauce image

Use only Granny Smith apples or a similar firm apple, this is a fantastic cranberry sauce recipe, and one that you will be making all time once you taste it! If you prefer a less sweeter sauce then reduce the sugar by a couple of tablespoons. If you don't have a cinnamon stick just add in a pinch of cinnamon powder, or omit the cinnamon completely. Plan ahead the sauce needs to chill for a minimum of 3 hours before using.

1 1/2 lbs cranberries (fresh or frozen)
1 3/4 cups sugar
2 granny smith apples, peeled, coed and cut into about 1/4-inch pieces
2 -2 1/2 tablespoons minced peeled fresh ginger
1 1/2 cups water
3 tablespoons cider vinegar
1 tablespoon finely grated orange zest
1 cinnamon stick

Steps:

  • In a 4 or 5-quart saucepan, bring ALL ingredients to a boil over medium heat, stirring until the sugar is dissolved.
  • Boil the sauce (lower temperature if the sauce is spitting too much) stirring occasionally (about 10-15 minutes) or until thickened.
  • Cool and refrigerate for a minimum of 3 hours before serving.

2 lbs cranberries
4 apples, pared and diced
3 pears, pared and diced
2 C golden raisins
2 C sugar
1 C orange juice
2.5 TBS grated orange rind
2 tsp. cinnamon
1/4 tsp nutmeg
1/2 C + 2TBS orange flavored liquer
1 C nuts (optional)

Steps:

  • place all ingredietns except liquer in large sauce pan..bring to boil.Reduce hear and simmer uncovered for 45 minutes stirring frequently. cool. Add liquer and refrigertate for at least 4 hours
