1 (21 ounce) can apple pie filling
1 (16 ounce) can whole berry cranberry sauce
¼ cup butter, softened
1 ½ cups rolled oats
¾ cup brown sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine apple pie filling and cranberry sauce in a shallow baking dish.
  • In a medium bowl, mix the butter, oats, and brown sugar until crumbly. Sprinkle evenly over the fruit mixture.
  • Bake in the preheated oven for 40 minutes, or until browned and crisp.

3 c apples, peeled and chopped
2 c raw cranberries
1 1/4 c sugar
1 1/2 c quick oatmeal (uncooked)
1/2 c brown sugar
1/3 c all-purpose flour
1/2 c pecans, chopped
1/2 c margarine or butter, melted

Steps:

  • 1. In a 2-quart casserole that has been sprayed with cooking spray, combine apples, cranberries, and sugar.
  • 2. Mix oats, brown sugar, flour, and pecans in a medium mixing bowl.
  • 3. Pour melted butter on the oat mixture and mix well.
  • 4. Top the apple and cranberries with the oat mixture.
  • 5. Bake in 350 degree oven for about one hour.
  • 6. Bake until golden brown and bubbly.

4 or 5 medium fuji apples
12 oz fresh cranberries
1 1/2 tsp lemon juice
1 c sugar
1 1/3 c oatmeal
1 c walnut pieces
1 stick butter, melted
1/3 c brown sugar, firmly packed

  • 1. Coat 2-quart baking dish with cooking spray
  • 2. Layer chopped apples and fresh cranberries in the casserole dish.
  • 3. Sprinkle fruit with lemon juice.
  • 4. Sprinkle sugar over the fruit and stir.
  • 5. In a separate bowl, combine oatmeal, nuts, melted butter, and brown sugar until just moistened.
  • 6. Sprinkle oat mixture on top of fruit mixture.

This dish can easily be prepared in advance and chilled in the refrigerator until ready to bake and serve. I came across a recipe from Cooking Light which I adjusted to include more common ingredients that I had in my pantry. It's a great dish for using up all those leftover dinner rolls and cranberry sauce (or cranberry relish) from your holiday dinner. The great thing about this dish is that it's rather verastile. It's not so sweet, so it can be served as a dinner side dish. Or, it can easily be served as a tart dessert because it is similiar in appearance and taste as a fruit cobbler. NOTE: For Step #6...The longer the dish sits, the thicker the dish will turn out after baking. Setting it aside for the minimum of 20 minutes will result in a cobbler-like consistency. But if you prepare this dish in advance (several hours to a day before baking) and letting it chill in the refrigerator will result in a quiche-like consistency.

2 tablespoons butter
3 medium apples, diced
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 cup brown sugar
6 crescent rolls (or any day-old leftover dinner rolls)
2 cups whole berry cranberry sauce
1 1/4 cups apple juice or 1 1/4 cups apple cider
1 1/4 cups milk (I use 1%)
1/2 teaspoon grated lemon peel
1/4 teaspoon ground nutmeg
6 large eggs, beaten
1/4 cup chopped walnuts or 1/4 cup sliced almonds

Steps:

  • Preheat oven to 350°. LIghtly coat the bottom of a 9x13-inch baking dish with a non-stick cooking spray.
  • Melt butter in a large skillet. Add the diced apples, cinnamon, cloves and brown sugar. Cook over medium heat for 10 minutes or until the apples are tender. Remove from heat and set aside.
  • Slice crescent rolls in half lengthwise. Arrange crescent roll halves in the bottom of the baking dish, with the cut side up (crust side down).
  • Spread the cranberry sauce evenly over the tops of the dinner rolls.
  • Spread the apple mixture evenly over the cranberry layer.
  • Add the apple cider, milk, lemon peel, nutmeg, and beaten eggs to a bowl, and blend well with a whisk. Pour the milky mixture over the top of the cranberry and apple layers. Sprinkle the nuts over the top. Let stand for at least 20 minutes, or cover the dish and place it in the refrigerator for several hours), to allow the milky mixture to soak into the rolls. JUST A QUICK NOTE ABOUT THIS STEP -- The longer the dish sits, the thicker the dish will be after baking. Setting it aside for at least 20 minutes will result in a cobbler-like consistency. But if you prepare this dish in advance (several hours to even a day ahead of time) and letting it chill in the refrigerator (covered) will result in a thicker, quiche-like consistency.

1-1/2 cups fresh or frozen cranberries
1/4 cup water
1/4 cup sugar
3 granny smith apples, cored and thinly sliced
1-1/2 teaspoons cinnamon
1 french or italian loaf, cut in 1″ slices
8 eggs
2 cups milk
1/2 cup heavy cream
1 tablespoon vanilla extract
cinnamon

Steps:

  • In a medium saucepan, combine cranberries, water and sugar. Layer apples on top of cranberries and sprinkle with cinnamon. Cover and cook over medium-low for 15 minutes. Uncover and continue cooking for 5 minutes to allow sauce to thicken. Stir cranberry-apple filling and transfer to a 9″x13″ dish. Arrange bread slices in two layers over the filling. In a bowl, combine eggs, milk, cream and vanilla. Slowly pour over bread so that it doesn't splash or spill. Sprinkle generously with cinnamon. Cover and refrigerate overnight. When ready to serve, bake at 350 degrees for 50 minutes. The top should be nice and crispy, while the inside will have more of a bread pudding consistency. 2 c whole raw cranberries
1 1/2 tsp lemon juice
1 1/2 c sugar
1 1/3 c quick cooking oats
1 c chopped walnuts or pecans
1/3 c brown sugar
1 stick butter, melted

  • 1. Preheat oven to 325F. Combine apples and cranberries in oiled 2 quart casserole dish. Evenly sprinkle sugar and lemon juice over top of apples.
  • 2. Add oatmeal, chopped walnuts, brown sugar and melted butter to bedium-sized mixing bowl. Blend until moistened. Cover fruit with crumb mixture.

1/4 cup (1 ounce) pine nuts
1/4 cup (1 ounce) almonds, blanched
1/4 cup (1 ounce) oats
1/2 cup (2 ounces) dried cranberries, cut into small pieces
2 tablespoons Italian parsley, chopped
1 sprig fresh thyme leaves, chopped
Zest and juice from 1 lemon
1/2 clove garlic, crushed
Pinch cayenne pepper
2 tablespoons extra virgin olive oil
Salt
Black pepper
1/4 cup olive oil, divided
4 tablespoons unsalted butter, divided
1 pound chestnuts, raw, frozen and peeled
4 cups vegetable stock, divided
Salt
Black pepper
1 pound gala apples (about 3 medium)
1 bunch green Swiss chard
Lemon juice, squirt
1/2 pound white pearl onions

Steps:

  • Make the cranberry granola. Toast nuts and oats on a cookie sheet in a 375 degree Fahrenheit oven until golden brown. Allow to cool and coarsely chop.
  • Cut dried cranberries into small pieces. In a mixing bowl, combine cranberries, parsley, thyme leaves, lemon zest and juice, garlic, cayenne pepper and 2 tablespoons olive oil. Season with salt and pepper to taste. Add nuts and oats. Spread mixture on a cookie sheet and bake in 250 degree oven for 30 minutes.
  • Meanwhile, prepare the casserole. In a sauté pan, heat 2 teaspoons olive oil and 1 tablespoon butter until the butter is golden brown. Add frozen chestnuts and roast for 5 minutes. Add 2 cups vegetable stock, and salt and black pepper to taste. Cook for 10 minutes over medium heat until tender and the chestnuts have absorbed most of the liquid
  • Peel and core apples and cut each into four pieces. In a sauté pan, heat remaining butter and sauté apples until lightly caramelized.
  • Cut green leaves from the Swiss chard, wash and reserve. Peel white skin off of the Swiss chard stems and keep stems in water with lemon juice. Cut stems in strips and sauté stems and leaves with most of remaining olive oil. Cover with remaining 2 cups vegetable stock and cook until tender, about 15 minutes.
  • Peel onions, season with salt and pepper to taste and place in sauté pan. Add water until onions are just covered. Cook until the onions are tender and all of the liquid has been absorbed.
  • in a pot, combine chestnuts, apples, Swiss chard, pearl onions and remaining cooking liquids. Heat and check seasonings. Finish with a drizzle of olive oil. Serve in a bowl topped with cranberry granola.
