1 cup packed brown sugar
1/2 cup butter or margarine, softened
1 egg
1 1/2 cups Gold Medal™ all-purpose flour
1 teaspoon ground nutmeg
1/2 teaspoon salt
1/2 teaspoon baking soda
1 medium apple, chopped (1 cup)

Steps:

  • Heat oven to 375°. Grease cookie sheet with shortening. Beat brown sugar, butter and egg in large bowl with electric mixer on medium speed until light and fluffy. Stir in flour, nutmeg, salt and baking soda. Stir in apple.
  • Drop dough by rounded teaspoonfuls about 2 inches apart onto cookie sheet.
  • Bake 8 to 10 minutes or until light brown. Remove from cookie sheet to wire rack; cool. Store loosely covered.

1 cup raisins

1 cup black walnut

¾ cup golden caster sugar, can substitute regular caster or brown sugar
½ cup butter, softened
2 cups flour
1 teaspoon ground nutmeg
1 teaspoon cinnamon
½ teaspoon salt
½ teaspoon baking soda
1 bramley apple, medium, chopped
12 chewy toffees

Steps:

  • Heat oven to 180°C (350ºF).
  • Beat the sugar, butter, and egg in large bowl with electric mixer on medium speed until light and fluffy.
  • Stir in flour, nutmeg, cinnamon, salt, and bicarbonate of soda. Combine into a smooth dough.
  • Mix in the apple.
  • Drop dough by rounded tablespoons about 2 inches (5 cm) apart onto baking paper-lined tray. Add in 1 chewy toffee piece per cookie.

1 package (0.74 oz) apple cider instant drink mix (do not prepare)
1 1/2 teaspoons ground cinnamon

1 egg
3/4 cup finely chopped peeled apple (1 medium)

Steps:

  • Heat oven to 375°F. In small bowl, mix sugar, 1 teaspoon of the apple cider drink mix and 1/2 teaspoon of the cinnamon; set aside.

175g unsalted butter , at room temperature
140g golden caster sugar
2 egg yolks
50g ground almond
85g chewy toffees , roughly chopped
85g/3oz ready-to-eat dried apple chunks, roughly chopped
225g self-raising flour
2 tbsp milk

Steps:

  • Preheat the oven to fan 170C/conventional 190C/gas 5. Using an electric whisk, beat together the butter and sugar until pale and creamy.
  • Stir in the egg yolks, ground almonds, toffees, dried apple and flour. Mix well together then roll into walnut-sized balls.
  • Place well apart on two non-stick or lined baking sheets and flatten slightly with your hand. Brush with milk and bake for 8-12 minutes until golden. Leave to firm up for 5 minutes, then transfer to a wire rack and leave to cool completely.
