6 (6 ounce) boneless center-cut pork chops
salt and ground black pepper to taste
1 tablespoon vegetable oil
1 tablespoon butter
3 cloves garlic, minced
¼ cup apple cider vinegar
2 cups apple cider
1 teaspoon Dijon mustard
1 teaspoon minced rosemary
1 pinch red pepper flakes

Steps:

  • Season pork chops with salt and black pepper.
  • Heat oil and butter in a heavy skillet over medium-high heat. Cook pork chops in the hot oil mixture until browned on both sides and pork is slightly pink in the center, 5 to 7 minutes per side. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Remove pan from the heat; transfer pork chops to a plate.
  • Stir garlic into the pan and place over medium-high heat; cook and stir for 30 seconds. Pour in vinegar and scrape up any browned bits from the bottom of the pan. Add apple cider and Dijon mustard, bring mixture to a boil, and cook until sauce is reduced and thick, 3 to 4 minutes. Stir in rosemary and red pepper flakes; season with salt and black pepper to taste.
  • Return pork chops to the pan to warm slightly, 1 to 2 minutes per side.

2 cups apple cider
½ cup honey
¼ cup apple cider vinegar
2 tablespoons brown sugar
⅓ cup whiskey (such as Jack Daniel's®)
3 tablespoons whiskey (such as Jack Daniel's®)

Steps:

  • Stir apple cider, honey, cider vinegar, and brown sugar in a saucepan over medium heat. Bring to a simmer and reduce heat to low, stirring often, until the mixture reduces to 2/3 cup, about 20 minutes.
  • Simmer 1/3 cup whiskey in a separate small saucepan over medium-low heat until steam no longer smells of alcohol, about 10 minutes; stir into the apple cider mixture. Reduce this mixture to 1/2 cup, forming an apple cider glaze and cool.
  • Stir 3 tablespoons whiskey into apple cider glaze.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Place pork chops into a baking dish; brush with the apple cider glaze.
  • Bake chops in the preheated oven, basting them often with glaze, until tender, about 1 hour. If desired, bring any remaining glaze to a boil in a saucepan and drizzle over chops to serve.

4 teaspoons fresh lemon juice
4 teaspoons soy sauce
2 teaspoons honey
1 garlic clove, minced

  • In a large ziplock bag mix all the ingredients together, besides the chops. Mis well.
  • Add the pork chops and make sure the bag is sealed.
  • Refrigerate the chops overnight, turning the bag over a few times.

This is an easy and tasty recipe for pork chops, particularly when you're bored with basic breaded and pan fried pork chops. Note that the nutrition information may be a bit off with this recipe, as the majority of the cider, salt, and oil is discarded. 1 lb pork chop, boneless (four thick chops)
2 teaspoons salt (plus some extra to taste)
12 ounces hard alcoholic cider (1 bottle)
1/2 vidalia onion, sliced
1 tablespoon olive oil
1/2 teaspoon Old Bay Seasoning
2 garlic cloves, minced
1 tablespoon italian seasoning
1 1/2 tablespoons sriracha sauce
black pepper
1/2 teaspoon paprika

Steps:

  • Combine 1/2 bottle of the hard cider, salt, and Siracha sauce in a gallon sized sealable bag or marinating container. Mix well, and add pork chops.
  • Marinate pork chops in cider mixture for one hour, turning halfway through (for extra flavor, prick holes in the pork chops with a fork). Marinate the pork chops in the refrigerator to ensure freshness.
  • While the pork chops are marinating, slice the onion. Onion slices should be no thicker than 1/8 inch. Separate the onion slices so all layers are loose.
  • Once pork chops are finished marinating, combine the remainder of the cider, Old Bay, olive oil, Italian seasoning, and black pepper in a large nonstick saucepan, and heat over medium heat until the mixture starts to boil/sizzle.
  • Add garlic and onions, and saute until the onions start to soften.
  • Add the pork chops, and saute until the chops are cooked through (about 10 minutes), turning once. After you turn the pork chops, sprinkle with the paprika to give the chops some color. Note: while sauteing the pork chops, make sure that you don't have any of the onions under them. Allowing the pork chops to rest on the bottom of the pan and cook in the cider mixture allows them to cook faster and to soak up more of the flavors of the saute.
  • Once pork chops are completely cooked, remove from pan and place on dinner plates, sprinkling them with a pinch of salt (to taste). Garnish with the sauteed onions on top of the pork chops and serve.

4 lb pork chops. 1- 1 1/2" thick. thick chops work best
1 c flour
1 tsp salt
2 tsp dry mustard
1 tsp black pepper
3 Tbsp butter
GLAZE
4 Tbsp butter or margerine
4 Tbsp flour
6 Tbsp brown sugar
1 tsp cinnamon, ground
2 c apple juice,or apple cider (i usually use cider. it is less sweet)

2 teaspoons seasoning salt, such as Lowery's
2 tablespoons vegetable oil
6 -12 dried apples, slices
2 tablespoons aspen mulling spices
1 cup apple cider
2 tablespoons butter
2 tablespoons flour

Steps:

  • Sprinkle chops with seasoned salt on both sides and let rest for 3 or 4 minutes.
  • Heat the oil in the bottom of the pressure cooker over medium heat. Brown chops on both sides and then remove a plate.
  • Place basket in pressure cooker. Press one or two dried apple slices on each chop and sprinkle each with a bit of the Aspen spice mix.
  • Fit the chops into the basket, standing on edge, sandwiching the apple slice between the chops.
  • Pour the cider over the chops and secure the pressure cooker lid onto the pot.
  • Bring to high pressure (15 lbs) over medium heat, adjusting the heat to maintain the pressure (according to the cooker's manufacturer's instructions) and cook at that pressure for 17 minutes.
  • Remove cooker from heat and let pressure drop naturally, which should take about 10 minutes.

3 boneless loin pork chops, approximately 3/4 inch in thickness, room temperature, and cut just through the silver skin (connective tissue) every few inches around the circumference of each chop
Ingredients for Glaze mixture:
3/4 cup apple cider
2 tablespoons brown sugar
1 tablespoon brandy
1 tablespoon Dijon mustard
Kosher salt and freshly ground black pepper
EVOO, as needed

Steps:

  • Pat the chops dry on both sides and season. In a medium sized sauté pan over medium-high heat, add 1 tablespoon EVOO and heat until just smoking. Add the chops and cook until nicely colored, approximately 4 minutes. Turn the chops over and continue cooking for one additional minute. Being careful of the flambé (fire!) which might occur due to the brandy, add the glaze mixture, and continue to cook until the internal temperature of the chops reaches 140 degrees F, approximately 7 additional minutes. Remove the chops to a side plate and cover with foil, then reduce the heat to medium and continue to cook the glaze mixture until slightly thickened, approximately 5 additional minutes. Fennel Braised Pork Chops with an Apple Cider Demi Glace; Apple Cider Demi Glace Recipe image

Fennel Braised Pork Chops: (Note, the demi glace will be quite salty and no additional salt is needed for the chops.)
2 lbs 1 1/2″ thick Pork Chops (2 very large or 4 small chops)
1 Apple, peeled, cored, and sliced
1 Fennel bulb, fronds removed and saved, sliced
4 sprigs fresh Thyme
1 Tablespoon fresh Sage, minced
1 teaspoon freshly ground Black pepper
1 teaspoon ground Fennel
1/2 teaspoon Garlic powder
2 teaspoons of Argan oil (or hazelnut or olive oil)
1/4 cup Apple Cider
Apple Cider Demi Glace (Adapted from Cuisine Unlimited)
2 cups apple cider
3/4 cup apple cider vinegar
1 head garlic, cut in half
2 shallots, quartered
3 bay leaves
2 dozen peppercorns
6 cups chicken stock
Sea salt (To taste, I found it unnecessary but this will depend on the saltiness of your chicken stock.)
White pepper (I used a very tiny pinch)

Steps:

  • Dami Glace Directions: Set a heavy saucepan (preferably non-stick) over high heat. Add the apple cider and bring the liquid to a boil. Lower the heat to maintain a steady simmer and cook until the cider is reduced by half. Add the apple cider vinegar to the pan and simmer until the mixture is reduced by one-third. Next add the garlic, shallots, bay leaves, peppercorns, and the chicken stock. Bring the liquid to a controlled boil and cook until the sauce is reduced by about two thirds. When approximately 1 cup of liquid remains, take the pan off the heat and pour the mixture through a fine mesh sieve into a heatproof bowl. Press down on any solids with a spoon, extracting as much liquid as possible. Return the strained liquid to the pan, and cook over medium heat, stirring constantly to prevent burning, until the demi glace resembles the consistency of honey (it will be reduced to about 4 Tablespoons). Carefully scrape the demi glace into a heatproof bowl, stir in a tiny pinch of white pepper and taste to see if salt is needed. Set aside until ready to use for the pork. The demi glace can be made ahead and kept up to one week in the fridge. Bring it to room temperature before using (otherwise it will be very thick and hard to spread). Pork Directions: Pre-heat oven to 350 degrees with a rack in the middle. In the bottom of a medium size 2-3″ deep casserole dish layer apple slices, fennel fronds, fennel slices, and thyme sprigs. In a small bowl mix together the sage, black pepper, ground fennel, and garlic powder. Rub the spice mixture on both sides of the pork chops. Place the pork chops on top of the layered vegetables in the casserole dish. Drizzle argan oil on top of the chops and pour the apple cider into a corner of the casserole dish. Cover the dish with foil and place in the oven. Bake for 60 minutes. After 60 minutes, remove the foil, check the temperature of the pork by sticking a meat thermometer into the thickest part of the chop. Brush the demi glace on top of each pork chop. Continue to bake, uncovered, until the pork reaches an internal temperature of 160 degrees, about 15-30 minutes depending on the thickness of the chop. Remove the pan from the oven and transfer the pork chops to a platter. Serve with cooked apples and fennel alongside the pork.

From GoodLife Eats. Nice take on the apple & pork chop combination for autumn. It's both sweet and savory at the same time. We were honestly a bit worried the first time about the combination of garlic and sage with the sweetness of the apples and cider, but it works well. Our kids preferred to eat the apples separate from the meat as dessert and actually ate so many of them that doubling the apple portion would have been appropriate for us. Recipe calls for 2 Land O Lakes Saute Express Garlic Herb cubes. We did happen to have some of those on hand but if they weren't available, an equal blend of butter & olive oil, plus garlic and herbs to your preference would be a good substitution.

  • Melt Saute Express cubes (or combination of butter, olive oil, and herbs) in a large pan. Cast iron skillet works great.
  • Pat pork chops dry and then place in pan, browning for ~5 minutes per side.

FOR CHOPS:
8 BONE IN CENTER CUT PORK CHOPS, AT LEAST 1 1/2 INCHES THICK
4 TBSP EXTRA VIRGIN OLIVE OIL
3 TBSP UNSALTED BUTTER
1/2 MEDIUM ONION, SMALL DICE
1 CELERY STALK, COARSELY CHOPPED
1 SMALL CARROT, PEELED AND COARSELY CHOPPED
2 TBSP APPLE BRANDY OPTIONAL
2 CUPS UNFILTERED APPLE CIDER OR UNFILTERED, UNSWEETENED APPLE JUICE
2 1/2 CUPS LOW-SODIUM CHICKEN BROTH
"3 TBSP CREME FRAICHE"

Steps:

  • INSTRUCTIONS FOR STUFFING: 1. HEAT THE OVEN TO 200 DEGREES AND ARRANGE A RACK IN THE MIDDLE. PLACE THE BREAD CUBES ON A BAKING SHEET AND PLACE IN THE OVEN TO DRY OUT, ABOUT 20 MINUTES. REMOVE FROM THE OVEN AND SET ASIDE. 2. RAISE THE OVEN TEMPERATURE TO 375 DEGREE. HEAT 1 TBSP OF THE BUTTER IN A LARGE FRYING PAN OVER MEDIUM-HIGH HEAT. WHEN IT FOAMS, ADD THE DICED APPLES AND LET THEM BROWN, STIRRING ONLY OCCASIONALLY. REMOVE FROM HEAT AND PLACE IN A MIXING BOWL. 3. REDUCE HEAT TO MEDIUM AND ADD THE OLIVE OIL AND REMAINING 1 TBSP BUTTER. WHEN THE BUTTER FOAMS, ADD THE ONIONS, A PINCH OF SALT, AND FRESHLY GROUND BLACK PEPPER AND COOK UNTIL THE ONIONS ARE SOFT AND TRANSLUCENT, ABOUT 6 MINUTES. 4. STIR IN THE COOKED APPLES, BREAD CUBES, DRIED APPLES, SLICE SAGE LEAVES, AND MINCED THYME AND COOK UNTIL HEATED THROUGH. STIR IN THE APPLE CIDER, SEASON WITH SALT AND FRESHLY GROUND PEPPER, REMOVE FROM HEAT, AND SET ASIDE. FOR THE CHOPS: 1. RINSE THE PORK CHOPS AND PAT THEM DRY WITH PAPER TOWELS. HOLDING A SHARP PARING KNIFE PARALLEL TO THE WORK SURFACE, CUT A 3 INCH WIDE POCKET INTO EACH PORK CHOP ALL THE WAY TO THE BONE. MOVE THE KNIFE IN A FANNING MOTION TO CREATE A LARGER POCKET, BEING CAREFUL NOT TO CUT THROUGH THE TOP OR BOTTOM OF THE PORK. REPEAT WITH THE OTHER PORK CHOPS. SEASON THE CHOPS WELL ON ALL SIDES AND INSIDE EACH POCKET WITH SALT AND FRESHLY GROUND PEPPER. STUFF 1/8 OF THE STUFFING INTO EACH POCKET. 2. HEAT 1 TBSP OF THE OLIVE OIL AND 1 TBSP OF THE BUTTER IN A LARGE FRYING PAN OVER MEDIUM-HIGH HEAT. WHEN THE BUTTER FOAMS, PLACE 3 PORK CHOPS IN THE PAN. SEAR THE CHOPS UNTIL THEY ARE NICELY BROWNED, THEN TURN THEM TO BROWN THE OTHER SIDE. WHEN THE CHOPS ARE BROWNED, REMOVE THEM FROM THE PAN TO A RIMMED BAKING SHEET OR BAKING DISH LARGE ENOUGH TO HOLD THEM ALL COMFORTABLY. DUMP OUT THE USED OIL THAT REMAINS IN THE PAN, BUT DO NOT WASH THE PAN. REPEAT WITH THE OTHER CHOPS. 3. WHEN ALL THE CHOPS ARE SEARED, PLACE THEM IN THE OVEN AND BAKE UNTIL THEY ARE FULLY COOKED AND A THERMOMETER INSERTED INTO THE CENTER REGISTERS 145 DEGREES, ABOUT 25 TO 30 MINUTES. MEANWHILE, RETURN THE PAN USED FOR BROWNING THE CHOPS TO MEDIUM HEAT. (DO NOT CLEAN THE PAN) ADD THE REMAINING 1 TBSP OLIVE OIL, ONION, CELERY, AND CARROT TO THE PAN. COOK UNTIL THE VEGETABLES ARE SOFTENED AND BROWN AROUND THE EDGES, ABOUT 5 MINUTES. 4. REMOVE THE PAN FROM HEAT, ADD THE APPLE BRANDY (IF USING, OTHERWISE, DO THIS WITH SOME OF THE APPLE CIDER), AND RETURN IT TO THE HEAT. (IF YOU WANT, CAREFULLY TILT THE PAN TO IGNITE THE BRANDY.) USE A WOODEN SPOON OR SPATULA TO SCRAPE UP ANY OF THE BROWNED BITS THAT HAVE ADHERED TO THE PAN. STIR IN THE APPLE CIDER AND BRING TO A SIMMER FOR ABOUT 8 MINUTES. 5. ADD THE CHICKEN BROTH AND HERB SPRIGS AND RETURN TO A SIMMER. COOK UNTIL THE SAUCE IS REDUCED TO 2 CUPS, ABOUT 12 MINUTES. STRAIN THE SAUCE THROUGH A FINE-MESH ST4RAINER AND RETURN IT TO THE PAN. WHISK IN THE CREME FRAICHE TO THICKEN THE SAUCE SLIGHTLY.

3 tablespoons olive oil
4 pork loin chops
seasoning salt to taste
black pepper to taste
garlic powder to taste
½ teaspoon poultry seasoning
3 tablespoons Worcestershire sauce
1 (8 ounce) container frozen apple cider concentrate, undiluted
¼ cup dry sherry

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Heat olive oil in a large oven-safe frying pan over medium-high heat. Sprinkle chops with salt, pepper, garlic powder, and poultry seasoning. Place in hot oil, and brown on both sides. Drizzle Worcestershire sauce over chops, and pour in apple cider.
  • Bake in preheated oven for 25 minutes. Remove chops to a plate, and return frying pan to stove over medium-high heat. Stir sherry into pan, and boil until sauce thickens, stirring frequently. Serve sauce over chops.

2 Tbsp. oil, divided
4 bone-in pork loin center chops (1-1/2 lb.), 3/4 inch thick
2 Gala apples, sliced
1 onion, sliced
1/4 cup KRAFT Zesty Italian Dressing
3/4 cup apple cider
1/3 cup light cream
2 Tbsp. fresh thyme, chopped
2 tsp. cornstarch
3 Tbsp. water

Steps:

  • Heat 1 Tbsp. oil in large skillet on medium-high heat. Add chops; cook 4 to 5 min. on each side or until done (145ºF). Transfer chops to plate, reserving drippings in skillet; cover chops to keep warm.
  • Add remaining oil, apples, onions and dressing; cook and stir 1 min. Cover; cook 4 min., stirring occasionally. Stir in cider, cream and thyme. Cook on medium heat 2 min., stirring frequently.
  • Mix cornstarch and water until blended; stir into mixture in skillet. Bring to boil on medium heat, stirring constantly; cook and stir 1 min. Add chops to skillet; cook 1 min. or until heated through.

From GoodLife Eats. Nice take on the apple & pork chop combination for autumn. It's both sweet and savory at the same time. We were honestly a bit worried the first time about the combination of garlic and sage with the sweetness of the apples and cider, but it works well. Our kids preferred to eat the apples separate from the meat as dessert and actually ate so many of them that doubling the apple portion would have been appropriate for us. Recipe calls for 2 Land O Lakes Saute Express Garlic Herb cubes. We did happen to have some of those on hand but if they weren't available, an equal blend of butter & olive oil, plus garlic and herbs to your preference would be a good substitution.

4 thick-cut pork chops (boneless or bone-in both work but either way should be 3/4-1 inch thick)
2 tablespoons garlic and herb butter or 2 Land O Lakes garlic and herb saute express squares
1 -2 tablespoon fresh sage, chopped
1 lb apple, peeled cored and sliced thinly
3 tablespoons butter
4 tablespoons brown sugar
1/2 cup apple cider
1/3 cup heavy cream
1 teaspoon salt, to taste (optional)
1/2-1 teaspoon black pepper, to taste (optional)

Steps:

  • Melt Saute Express cubes (or combination of butter, olive oil, and herbs) in a large pan. Cast iron skillet works great.
  • Pat pork chops dry and then place in pan, browning for ~5 minutes per side.
  • In a separate skillet, melt 3 tbsp butter over medium heat. Add brown sugar and cook about 1 minute until melted. Add apples and and saute for 10-15 minutes until apples are nicely browned.
  • Add apple cider to the pork chops and cook over medium heat until liquid reduced by half (5-10 minutes). Flip chops once during this step.
  • Add the cream to the pork chops and sprinkle with salt and pepper. Bring to a boil, then reduce heat and simmer for 3-5 minutes until sauce has thickened to desired consistency and pork is adequately cooked.
  • Sprinkle sage over the pork chops.
  • Serve immediately, spooning a little apple over each chop and drizzling with sauce.
