2 cups apple cider
1 cup chicken broth
3/4 cup chopped onion
6 whole allspice
3 large fresh thyme sprigs (or a big rosemary sprig)
2 cinnamon sticks
2 teaspoons apple cider vinegar
1 bay leaf
5 tablespoons butter, unsalted
Salt & pepper

Steps:

  • While roasting your Pork Belly, in a medium saucepan mix first eight ingredients (apple cider, chicken broth, chopped onion, allspice thyme sprigs, cinnamon sticks, apple cider vinegar and bay leaf). Boil until mixture is reduced to 1 1/2 cups, about 30 to 40 minutes. Strain, pressing on solids to extract liquid and discard solids. Return liquid to saucepan and boil until reduced to 1/2 cup, about 10 minutes. Whisk in the butter and season with salt and pepper, if needed. When pork is finished cooking, set a side and covered, pour any pork drippings from the rested meat into the cider sauce. When serving, pour some sauce over pork.

1 tablespoon ground cinnamon
1 tablespoon ground allspice

Steps:

  • Place apples in a large stockpot and add enough water cover by at least 2 inches. Stir in sugar, cinnamon, and allspice. Bring to a boil. Boil, uncovered, for 1 hour. Cover pot, reduce heat, and simmer for 2 hours.
  • Strain apple mixture though a fine mesh sieve. Discard solids. Drain cider again though a cheesecloth lined sieve. Refrigerate until cold.

1 ginger, thumb sized, peeled
2 teaspoons whole clove
1 pinch kosher salt
8 cups water
1 cup brown sugar

Steps:

  • Place the apples, cinnamon sticks, ginger, cloves, and salt in an 8-quart (7.5-liters) slow cooker. Pour the water over the apples.
  • Cover and cook on high for at least 8 hours, or overnight (up to 24 hours).
  • Remove the solids from the cider, pressing the pulp to extract as much liquid as possible.
  • Whisk in the brown sugar until dissolved.
  • Serve hot, or store in the refrigerator to serve later. Reheat before serving.

Simple spiced apple cider! I used to buy the spices already mixed at the grocery store, and they stopped carrying it this year, so I just made my own. This is great for a shower or get together and the slow cooker keeps it warm, so guests can enjoy it through the night. When it's done, it's great mixed with spiced rum and/or a slice of orange! Leftover cider is great cold too!

⅛ teaspoon Cajun seasoning
⅛ teaspoon celery salt
⅛ teaspoon garlic granules
⅛ teaspoon onion powder
1 pinch white sugar

¾ cup fresh apple cider
¼ cup apple cider vinegar
2 tablespoons maple syrup

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Remove silver skin and any surface fat from tenderloin; dry well with paper towels. Combine Cajun seasoning, celery salt, garlic granules, onion powder, and sugar in a small bowl; mix well. Sprinkle seasoning mixture over pork tenderloin.
