APPLE CHOCOLATE CAKE

Apple Chocolate Cake image

Provided by Trisha Yearwood

Categories     dessert

Time 2h10m

Yield 4 servings

Number Of Ingredients 11

1 stick salted butter, at room temperature, plus more for buttering the pan
1 1/2 cups vanilla wafer cookies, such as Nilla, crushed
1 cup all-purpose flour
1 tablespoon baking powder
3 large eggs, at room temperature
3/4 cup plus 2 teaspoons granulated sugar
2 large apples such as Honey Crisp, peeled and cut into small dice
1 teaspoon ground cinnamon
1 teaspoon grated lemon zest
3/4 cup semisweet chocolate chips
Confectioners' sugar, for dusting

Steps:

  • Preheat the oven to 350 degrees F. Butter the bottom and sides of a 9-inch springform pan and dust all sides with the crushed vanilla wafers; set aside. Sift the flour and baking powder together in a small bowl and set aside.
  • Using a mixer fitted with the whisk attachment, whisk the eggs on high speed until pale and very thick, 8 to 10 minutes.
  • Meanwhile, melt the butter in a medium saucepan and cook, scraping the sides and bottom of the pan to prevent burning, until the butter browns and smells nutty, 6 to 8 minutes.
  • Add 3/4 cup of the granulated sugar to the eggs. Add one-third of the flour mixture, then half of the butter, another third of the flour, the remaining butter and the rest of flour, mixing between additions. Whisk until just barely combined. Using a spatula, gently fold the batter until the ingredients are combined. It is very important not to over-whisk or over-fold the batter or it will lose volume. Pour into the prepared pan.
  • In a medium bowl, toss the apples, cinnamon, lemon zest and remaining 2 teaspoons granulated sugar and pour on top of the batter. Sprinkle on the chocolate chips and bake until the cake is golden brown and springs back to the touch, 40 to 50 minutes. Release the pan when cooled and sprinkle the cake with confectioners' sugar.

SUNNY'S EASY CHOCOLATE APPLE PIE CAKE

Sunny's Easy Chocolate Apple Pie Cake image

Provided by Sunny Anderson

Categories     dessert

Time 2h15m

Yield 8 to 10 servings

Number Of Ingredients 8

2 tablespoons unsalted butter
1 box chocolate cake mix, plus additional ingredients for making the cake
1 store-bought 8-inch apple pie
8 ounces bittersweet chocolate chips
1 cup heavy cream
1 tablespoon dark rum
Kosher salt
1 cup chopped pecans

Steps:

  • For the chocolate apple pie cake: Preheat the oven to 350 degrees F.
  • Use the butter to grease the bottom and sides of a 9-inch cake pan or springform pan. Cut out a circle of parchment paper to fit the pan and place it on the bottom.
  • In a large bowl, prepare the cake batter as instructed on the box. Pour 1 cup of the batter into the cake pan and spread it out. Add the apple pie on top of the cake batter, then pour the rest of the cake batter over the top and around the sides. Spread it to make sure there are no air pockets.
  • Bake the cake until a toothpick inserted in the center and around the edges comes out clean, 50 to 55 minutes. Remove to a rack to cool slightly. When cool enough to handle, turn the cake out onto the rack, peel off the parchment paper and allow to cool completely.
  • For the ganache: Pour the chocolate chips into a medium bowl. In a small pot on medium heat, add the heavy cream, rum and a pinch of salt and whisk until warm. Pour over the bowl of chips and allow to sit and soak in for 2 minutes. Whisk to melt the chocolate completely.
  • Place the cake on a serving platter, pour the ganache in the center and spread gently outward over the edges. Sprinkle with the pecans and serve.

APPLE, CINNAMON, CHOCOLATE CHIP CAKE

Apple, Cinnamon, Chocolate Chip Cake image

This is a delicious, moist cake that my mother has made for years. I don't know the cake's real name, but it is delectable. I have yet to meet a person who does not like this cake. This cake is so good, it doesn't need icing!

CHOCOLATE, CRANBERRY, APPLE CAKE

Chocolate, Cranberry, Apple cake image

Oh, how we LOVED this cake! The addition of cranberry and apple is what makes it so moist. We suggest using both canned cranberry jelly and 1/2 cup of dried cranberries.

Provided by Karina Alcala

Categories     Cakes

Time 1h

Number Of Ingredients 16

2 c all purpose flour
1 c cocoa powder
1 tsp salt
1 tsp baking soda
2 tsp baking powder
2 Tbsp pure vanilla extract
2 eggs
1/4 c vegetable oil
1 c cranberry jelly (home made is better)
2 apples, granny smith peeled and grated
1 3/4 c sugar
1 c milk
CHOCOLATE GLAZE
6 oz semi-sweet chocolate chips
1/2 c heavy whipping cream
2 Tbsp light corn syrup

Steps:

  • 1. Preheat oven to 350 f and spray your cake pan. In a large bowl combine milk, eggs, vanilla, oil, and sugar. With a spoon or a mixer mix until well combined. Sift in flour, cocoa powder, baking soda, and baking powder. Add in grated apples and cranberry jelly. Mix until well combined.
  • 2. Pour batter into prepared pan any cake pan is good. Put in oven and bake for 50-55 minutes or until toothpick comes out clean. While cake is in oven in a microwave safe bowl add cream, chocolate chips and corn syrup. Microwave on high for 1 minute stir until silky smooth.
  • 3. When cake is done cool in pan for 15 minutes and then turn it over in a cake plate or regular plate. Let cool for at least 1 hour after that pour sauce over the top and enjoy. It is even better the next day. You can warm it up and put a scoop of ice cream on top. This cake is super delicious and easy to make. If you do use canned jelly I suggest you use some dried cranberries as well in the batter. You can also add nuts if you would like to.

FLOURLESS CHOCOLATE CAKE WITH APPLE CIDER SABAYON

FLOURLESS CHOCOLATE CAKE WITH APPLE CIDER SABAYON image

Categories     Cake     Chocolate     Dessert     Bake

Yield 10 people

Number Of Ingredients 14

2 tsp vanilla
1 1/2 c sugar
1 cup water
18 oz 70% chocolate
6 eggs
2 yolks
1/4 tsp salt
12 oz butter, softened
Apple Cider Sabayon:
3 eggs yolks
1/2 cup apple cider
1/2 cup sugar
1 vanilla bean, scraped
1/2 cup whipping cream

Steps:

  • Cake: Melt chocolate over a water bath. Dissolve the sugar in one cup of water. Add vanilla and bring to a simmer. Bring off the heat and let cool slightly. Add syrup to chocolate whisking to combine. Continue whisking and add the eggs and egg yolks one at a time. Add the salt. Add butter a little at a time. Bake at 350 in a water bath for 30-40 minutes, or until the surface starts to crack (subtle cracks only!). Let cool at room temperature and then chill in the fridge until set. Tips: the water bath should be about half way up the container you bake the cake in. I would bake the cake in something long and narrow. If you have a terrine that would be great. I don't so I used the smallest loaf pan I could. The cake comes out as a compact and heavy loaf sized cake (it doesn't actually rise at all). Then you can cut it into narrow/thin slabs to serve. It's very intense so really small portions is appropriate. Sabayon: Over a water bath whisk the yolks, sugar and cider until thickened and ribbons form. Whisk the cream and the vanilla separately until soft peaks form. When the yolks cool fold in the cream. Serving ideas: I served it with a Sabayon and garnished with a couple of cape gooseberries. You could also serve with a dollop of creme fraiche or even a fruit coulis. Yummy!

CHOCOLATE TOPPED APPLE CAKE

Chocolate Topped Apple Cake image

The slighty crispy, chocolate chip topping on this cake is the best part! It makes a great dessert, snack cake or coffee cake. You can use either miniature or regular chocolate chips; the miniature just tend to cover the cake better, but I usually use the regular, and never had a complaint yet! I would also suggest letting the cake sit overnight. The flavors mellow, and it's even better!

GLUTEN FREE VEGAN CHOCOLATE APPLE CAKE

Gluten Free Vegan Chocolate Apple Cake image

This is a bit of a work in progress. I made this cake up because I had apples to use up and was craving something chocolate-y. It's quickly made with ingredients which I usually have on hand, and it tastes pretty good, but it's not five-star-terrific yet. So if you choose to try it and come up with suggestions to improve it, I'd be very grateful! I used erythritol in place of sugar, but of course you can use sugar or xylitol. I think half brown sugar or evaporated cane juice would be very good, too. With 2/3 cup sugar it's probably not very sweet, so if you're sweet toothed, use 3/4 cup of sugar or other sweetener. Don't overbake it or it will get dry. I found that the toothpick should not come out completely clean. The cake is ready when it feels soft and springy pressing the top slightly, 35 minutes in my oven.
