From Martha Nesbit's book, Savannah Celebrations. She says, "This recipe is not only perfect for brunch, but is also delicious with any menu featuring pork." In place of the canned apples you can use six Granny Smith apples, peeled, diced and stewed in ½ cup water for 15 minutes. I had 4 ounces cream cheese left over from a cheesecake so I substituted in this for ½ cup of the Cheddar cheese. Yum!

1/2 cup butter, softened
1 cup sugar
8 ounces sharp cheddar cheese, grated
3/4 cup all-purpose flour
1 lb sliced apple, unsweetened

Steps:

  • Preheat oven to 325°F. Grease a 1 ½ quart casserole with vegetable spray.
  • In a medium mixing bowl, cream together butter and sugar. Using a spoon, stir in grated cheese. Add flour and combine using fingers or a spoon. Batter should be stiff.
  • Arrange apples in prepared casserole. Evenly crumble cheese mixture over apples.
  • Bake for 30 minutes.

1/2 c butter, softened
1 c sugar
1 pkg (8 ounce) velveeta cheese or sharp cheddar cheese shredded or grated
3/4 c flour
2 can(s) (1 pound) sliced apples, unsweetened, do not use apple pie mixture

Steps:

  • 1. Cream butter and sugar in a mixing bowl. Add cheese and combine well.
  • 2. Add flour and mix well. Batter will be stiff.
  • 3. Place apples in a buttered baking dish, about 1 1/2 quart size.
  • 4. Spread the cheese-flour mixture over the apples, covering the apples well.
  • 5. Bake at 325 degrees for about 30-45 minutes.

1 small white onion, chopped
1 head cabbage, chopped
3 tart apples, thinly sliced
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup milk
1 1/2-2 cups shredded cheddar cheese

Steps:

  • In a large deep skillet over medium-high heat, melt butter. Add onion, cabbage, apples, salt and pepper and sautee for about10 minutes until crisp-tender.
  • Add milk and cheese and combine well. You maybe tempted to add more milk, BUT, there will be more moisture after it has baked.
  • Pour into at least a 2 quart casserole dish. Cover and bake at 350 degrees for 40 minutes. Uncover and bake additional 10-15 minutes.

1/2 cup crushed round butter-style crackers
1 package (12-oz.) frozen harvest apples, defrosted according to package directions
1 cup shredded cheddar cheese

Steps:

  • PREHEAT oven to 350°F. Grease a 1-quart baking dish. Mix sugar and flour in a small bowl; slowly stir in apple juice. Mix melted butter and cracker crumbs in a separate small bowl.
  • PLACE escalloped apples in prepared baking dish. Layer sugar mixture; cheese and cracker crumb mixture over apples.
